I'll be trying this is a month or two but i think I'll add a couple drops of liquid smoke. Wish i was more experienced with cold smoking, maybe I'll give that a shot this winter.
This excites me I got an airfryer it’s got a dehydrate setting on it although….I’d have to do it in smaller batches I feel like I could pull it off I’ll have to give it a try. And instead of a soy sauce base I’m wondering if I could try half a lemon and a quarter of a lime, and some Michigan cherry wine or something 🤔 if it tasted good with the lake trout I’d imagine steelhead would be great too
@brianhardy440 the soy sauce has a good amount of salt in it...but I'm vacuum sealing and freeze it after it's dehydrated. I just pull a bag out/thaw when I want one...it's usually eaten pretty fast in my house so it's never a problem. If u want extremely long storage then yes use cure salt.

I have a question do you not have to use cure salt when you dehydrate fish like you do deer
