Am trying this today on some salmon. I'm doing your recipe for 1/2 of it and also am doing the other half with a basting mixture of honey, ginger, little bit of black pepper, and a little bit of cayenne pepper. Looking forwards to it! I've done this with a wet marinade before but not dry. I love this stuff about better than anything!
I really enjoyed your video and all the info in it! I am excited to try my hand at smoking salmon and making some candy along with it! Hoping mine turns out as good as yours looked so I can share with whole family. Thank you for all the time you put into this, it sure helps me feel better when starting a new project!
I used to make fruit jerky and always found a pre-drying of the outer most layer ended with me ruining the fruit because it never got dry and smoky all the way through! I'm glad you included that tip about the opposite being true with these fish, little bits of experience you can pass on so that we don't gotta learn the old fashioned way. Lol
I LOVEEEEE candied salmon. I have never made my own though and you totally made me want to try to!! Need to build a smoker on our homestead. I’ve wanted one for ages now. New friends here! -Erinn
Wow that is so so good. I have made it in my smoker before. But I have removed the skin and hung long cut pieces on rack using tooth picks. Love your idea of leaving the skin on. So, I guess that you descale the whole fish first?
There’s a video about the smoker on our channel. The brine is 50/50 sugar and salt. The amount of brine you need depends on the amount of fish you are brining.
A week max, or vacuum seal and freeze it. It’s not dehydrated far enough with this recipe. You could go further with dehydration to make it similar to a salmon jerky.
Love my cutthroat trout candy!! Haha nice recipe. I throw garlic powder with my brine. And glaze with raw honey. Gotta try the syrup glaze now.haha your wife didnt look to convinced. Or is that cause she realized the skin was on it?? Lol
It is not candied because you add sugar to it. Real Candied salmon is cold smoked. They call it candied because when you cold smoke it it looks like candy.
I am drooling lol. Just getting a fish from those clean clear Lake Superior waters is the best start. Enjoy
Oh man. It’s sooooo good!!
I’ll have to try this my next batch of salmon.
The First Nation guys here make Indian Candy... so good !

Whole Foods in Alexandria, VA sold this. I would all be eaten before I made it home.
It’s pretty addictive stuff 😆
I've never seen "candied salmon" before
Thanks so much!
The folks that lived on this land long before we did had some pretty tasty ways of preserving their food. Lots to be learned from them.
Candied salmon is FIRE. I tried it 4 the first time and I get it every Friday now

YUMMM!! I BET THAT IS DELICIOUS ❤
So good!
Looks so good ☺️
Love that smoker!
It’s pretty sweet!
Yum...
Wow that is so so good. I have made it in my smoker before. But I have removed the skin and hung long cut pieces on rack using tooth picks. Love your idea of leaving the skin on. So, I guess that you descale the whole fish first?
Yum!
hey i wanna know how your smoker is made and how much salt do you use in the brine
There’s a video about the smoker on our channel. The brine is 50/50 sugar and salt. The amount of brine you need depends on the amount of fish you are brining.
How long do you think the shelf life is?
A week max, or vacuum seal and freeze it. It’s not dehydrated far enough with this recipe. You could go further with dehydration to make it similar to a salmon jerky.
YUM! BTW - is the salt and brown sugar in equal measurements?
Awesome. But, where can a get Salmon if I don't fish? Can frozen be used?
That's a good video. Did the wee widdle doggie, I mean did the dog get any?
You know it!! And all the meat scraps from cleaning it up. She insists 😆
what could you use the left over marinade for so it's not wasted?
Will this work if I don't have a smoker? I want to make this but only have a firepit
Mmmmmmmmmmmmm!!
Do you eat this with the skin on? Looked like she did at the end there. Great video
You can eat the skin or not. Personal preference.
Love my cutthroat trout candy!! Haha nice recipe. I throw garlic powder with my brine. And glaze with raw honey. Gotta try the syrup glaze now.haha your wife didnt look to convinced. Or is that cause she realized the skin was on it?? Lol
She's never amused by my doings 🤣
@@Wilderstead 😆
Alder and Apple wood...
How is that water so clear?
That’s just the way Lake Superior is!
The fish dosen t get salter the longer its in the brine . The salt consentration is what it is!
I have notived it absorbs the salt deeper into the protein longer it sits.
How long does it last?
It’ll last a week or so in the fridge. You could also vacuum seal and freeze for a few months.
Can we have some. ?
Depends how quick you can get here hahaha!
I haven't tried it yet but I bet it would have anyone's tail wagging.
Tasty tasty!
Very nice and like 33
It is not candied because you add sugar to it. Real Candied salmon is cold smoked. They call it candied because when you cold smoke it it looks like candy.
It should be translucent as well after cold smoke. Pretty much see through
0:55 silly guy kept trying to breathe
I accidentally skinned the salmon before watching your vid 😵💫 do you think i can still use it in this smoker recipe?
You can but the meat will fall apart very easily so be careful when handling it after it is smoked.
I wish you could make shiny pretty leather out of the fish skin. It's so pretty...
It’s possible. Look up the art of salmon skin leather.
For the setup ya have she’s a bit skimpy friend
Might I say the paper thin rib cage slice was absolutely incredible!!!!! 😂😂😂 I'm a big critic on that especially when it comes to salmon 😂
Same
Silly me, I didn't even know that salmon was popular in India.
