    my grandmother canned a lot so Papa wired the stove on the back porch for her in the summer and we cooked out there until canning season was over we cooled the product on saw horses with an old door for the top covered with a very old sheet that had holes in it...I can still see my grandparents looking at what we had for the winter with smiles on their faces..one of my foundest memories of my childhood

    A kitchen canning classic! I grew up near Oxnard, Californian (the strawberry capital of the U.S.), and a fellow would come around selling strawberries off the back of his flatbed truck for $5 a flat. My mother would make refrigerator preserves with them, sealing the jars with paraffin. Dad would inhale it! Thanks for the video and the memory.

    My great grandmother (who lived in New Brunswick) had an old fashioned kitchen that always smelled of wild strawberries when we visited every summer. Your jam looks and must've smelled delicious!!

    Jam is my very favorite. Beats a jelly hands down. It just spreads so lovely. That's why I get Gooseberry Jam from the Amish store. Thanks for making my mouth water. You're just a wiz in the kitchen. Love you!!

    Look tasty! I agree, with water bath canning jams and jellies we use any jar. Multi tasking you! Canning and gift making at once!

    Looks great! I've said it before but, a new viewer might be reading the comments - If your jelly or jam doesn't set, don't throw it out! Label it "ice cream topping" and don't tell them it was supposed to be jelly or jam. It's also good on pancakes and waffles.

    Our dog loves vegs and fruit to. She even loves raw potatoes and we give her one to munch on now and then. I bet that jam turned out delicious!

    I made strawberry jam a week ago. I followed a video of someone i don’t know’. I couldn’t find anything of yours. So I made it and boy was it different. They didn’t add lemon juice, they had me skim the foamy stuff off the top and had me put the pouch stuff in sir for a minute and can it. It’s good but runny. I found yours today and tried again. And man what a difference. It looks great. Thanks for good instructions. My favorite is blueberry so I’m gonna look you up on that one too😊

    Dear Bev, I was wearing my HAH apron and canning today too! I made pineapple jelly, chocolate cherry jam (from new Ball book), and raspberry lemonade jam (also from new Ball book). What fun! And my handy dandy apron kept me clean and tidy! LOVE IT! Thanks a million!

    Jam on freshly cooked bread.... drooling now.... my neighbour just gave me some homemade raspberry jam, you can't buy that taste in the shops , it was delicious

      I agree pretty soon the temperatures are going to be low enough and the candy is going to be all done and I'll be able to start baking bread again. It's a shame that the baking of bread has to take a backseat to canning and and the Heat

    You're so right sis....canning tastes nothing like the store bought junk. I'm just doing some jarred plums in syrup today....mmmmm! Food Basics has the cases of tomatoes on sale this week for $6.88 so I'm getting another 2 cases to do my stewed tomatoes...got the spaghetti sauce already done. I love canning season...lots of work...BUT OH SO WORTH IT!!..Love ya!

      Well with less stress and worry, perhaps the Fibro is taking an indefinite vacation from you.
      Yes I know you miss your Son since he moved out, but perhaps now Bev you can have a lot less stress in life and truly enjoy quality time with everyone.
      I pray you remain in the yellow indefinitely, and will continue to send blessings and keep you all in my daily prayers.

    Hi love your videos. You talked about those jars with handles. I only started canning a few months ago, I imported a canner from US to UK. Canning not really done here also jars are very expensive. So I tried canning meat in these handle jars. So far canned 253 jars with no problem, except a couple of failed lids but no broken glass bye carry on canning

    Great video Mrs. V. You make it look it so simple. But I know it takes time and it does get HOT. My grandma and mom would can and they would always start early when it was cooler. Just may try and make this. What is the American version of Certo? Have a great day.

    Yep the jars with handles they look a little like a Ball jar but quarter the price, here. Ball about £2.50 each..!!! Try em. Your videos and katskradule induced me to buy a cannerCarry on canning

    I have to confess...I'm a jam recipe doubler with the Certo. I've done it for 25 yrs and never had a fail. I was reading a book about the Hutterite colonies in Western Canadaand they 40x the Certo recipe. I was tickled that they actually used Certo. I'm not advocating doubling...but I always figured worse case scenario I have ice cream/cake topping instead of jam ;)

      my problem isn't necessarily the pesticides on the fruit in this case it is because I use the cores and pills however anything that gets sprayed especially trees that are there for years and years and years but doesn't stay on the fruit goes into the ground and into the groundwater and those trees take a lot to take up a lot of water so you know what if I can get it pesticide-free I'll take it over sprayed fruit any day! besides pesticides and chemicals don't go away we live in a closed environment!

    Mmmm lovely, I can almost smell those juicy berries as you mashed them! It's strange but here in UK we don't water bath our jams, we also use screw on one piece lids as the canning jars and lids you use are only just recently available to buy from one shop. Once I found I could buy the ball canning jars and lids, I imported a pressure canner, you absolutely cannot buy one of them here in UK, most people don't even know what a canner is! The jam lid seals down just fine without using a water bath canner and it lasts for years! xx

      what I meant to say is it's boiling hot Jam going into hot sterile jars there really is no need to panic but if I didn't UA-cam people would have made a fuss and so I did just to avoid the issue

    Don't you Love the smell that fills the house when making Jam!!(Heaven)..Gracie is a fruit lover!!( to cute).. I had a husky that use to pick wild raspberries and eat them, I'd be picking at one bush she would be eating at another, it was to funny :)

      it may not be called certo..it may be called sure jell? any fruit pectin will do!

    Yummy! We picked strawberries this year for the 1st time, I made stawberry & strawberry balsamic jam. Love in a jar! I am interested in the double berry. So you doubled the fruit and liq. pectin?

    Bev, do you have to use that much sugar, if you didn't want to use so much, would it still work. I love strawberry jam, but I do not like it sweet or really sweet, I do like the idea of using a stick mixer to liquid the strawberries. Bev, have you ever had a canning jar break while pressure canning.

      you can Double the fruit and double the pectin but leave the sugar the same..giving you a double fruit jam with less sugar.

    Do you only use organic sugar ? If so, is there a reason ? I am so flippin addicted to your videos ... so glad I found you :) Right now I have all the veggies on my kitchen table to make your calico pickles but I couldn't sit there any longer (I have siatica back issues, deterioating disc disease) so I jumped on here for a bit to check out the videos, checked my email, facebook then going to go lay on a hot pad !! Would it be ok to email you ?

      email me anytime! Just know..it is canning season ( as if you didn't know) and I may not be on here much! I use organic sugar because most sugar today is BEET sugar which is genetically modified..you can use plain cane sugar..but double check to make sure it is CANE sugar not beet sugar. I get the organic at Costco and it is only $1.29 a pound!

      some people use Jell-O and things like zucchini to make mock Jam I did it once and never again

      I just dumped 24 jars of zucchini jam. Never sets up and tastes terrible with the jello. I think sort chemically. Stick to something from a Ball recipe.

    I am missing out on canning this year :( I fell and broke my back 2 months ago and I am still in a great deal of pain... I had an MRI yesterday to find out what was missed, I will find out next Wednesday... I have had back and neck (fusions) several times in my life and it has never taken this log to heal, oy vey :( Looks delicious Bev!!!

      Ubehovlet. She's cooking for her husband and sons, not for you. Macerated fruit needs more sugar to process or it won't gel.

If you by "ubehovlet" mean that my comment was rowdy, I apologize for that, but since I am part of the UA-cam audience she also kind of cooks for me and therefore might expect to be exposed to different comments. Regarding your claim that macerated fruit needs more sugar to gel, my tip is to make smaller portions in a wide pan allowing the liquid to quickly evaporate before you add (four times less) sugar.
