I have made caramel corn many times, using essentially the same technique. And, yes, oh yes, there is nothing like homemade. I love the idea of spraying the spoon with Pam -- great idea! Also, putting it in the oven at low temp and stirring it every 15 minutes is important so that the caramel "crisps up" properly, as otherwise, it has a gummy texture. I know a lot of people object to using corn syrup, but it is necessary, as it's the only way to eliminate the "grittiness" of using sugar (trust me, I know because I tried making it without the corn syrup). Lastly, I no longer use brown sugar, as it hardens up and is a pain to work with. Instead, I use white sugar and add some molasses to it (which, by the way, is what makes brown sugar "brown"). I add roughly 1 tablespoon per cup of sugar.

If you put a piece of fresh bread in your brown sugar, it will soften up like new. PS: I don’t know what the chemical reaction is, but baking soda does the same thing to the syrup you use making peanut brittle. It is mesmerizing! Thanks for sharing!

First it went dead numb last Thurs then a couple of days later the hard pain hit. I’m using a cane when I absolutely have to get up. I look like Grandma Moses except I have no artistic talent. 😂 At least nothing has fallen off since “you know when”! That cracked me up and rolling you cracked me up even more. Soak your clay sugar piece in warm water about 15 to 30 minutes. Then dry. Add back to your sugar.
