    I cannot thank you enough for your channel and recipes! Your recipes are so creative and I particularly appreciate that you use the whole fruit rather than a plantain flour. I made these today using what I had, which was just green plantains. But the recipe still worked beautifully! I added vanilla, cinnamon, and a touch of black locust honey to the dough for a sweet flavor profile. Baked the flatbread and it came out delicious! So satisfying, so easy, so delicious with tea for breakfast! I love love love the chewy, mochi-like texture!!

    OMG! It IS bread!! I was a little concerned because I couldn't find super green bananas anywhere - and I went to 5 different markets and settled on pretty green, but had a little bit of yellow. And, girrrrrl! I ate a sammich!!! SO SO SO much better than ANY gluten free or paleo bread I've eaten in the last 16 years. You are a genius!

      I've found that Costco has been a good place to find them. The person who helped hunted to the bottom of the stack and found some VERY green ones and they were super nice about it.

      To add to the places one can easily find green bananas and plantains: My local Asian market (H-Mart) actually organizes their plantains and bananas into sections of green ones and sections of ripe ones! So there are four piles to choose from. It’s so helpful! And although it’s a little far from me for my weekly shopping preferences, I stock up on the green ones when I’m there and then freeze them (both bananas and plantains). Ripe versions of both are much easier to find in my other markets.

    I couldn't find the recipe. for people who didn't want to watch an almost 9 min video I think the recipe is
    same amount of green bananas and plantain. blend it together, add a bit of sage and salt, blend again.
    put this paste in a toaster oven and bake at 400F for 30mins covered with foil and then 5 more mins uncovered.
    having the recipe in the vid description would be really helpful.

    I make PaleoMom's green plaintain pancakes. Delicious! What I love about them is that they fulfill my carb craving like wheat pancakes without the gluten. I tried spaghetti squash and it's good, but it doesn't satisfy like real pasta. So I'm really impressed with plantains. 👍. 💜🌞🌵

      I was hunting plantains for years and finaly found a shop that has them regulary, I'm so happy to try them ^^. (I'm not from the us so what I can buy differs greatly from what many aip recipes creator know . . . pumpkin puree is the same story, they just don't have/use it where I'm from . . . .

      @Jake Shattuck , hmmm, I like banana, so I really didn't pay much attention. But I'm thinking that really green plantains don't have much of a banana taste or smell. While really black ones do as the starch changes to sugar. Where I live in Arizona🌵 plantains are only about 70 cents each, so very cost effective for experimenting. 💖🌞🌵

      ​@@RealWorldAIP Hi Stacy I know your post was a year ago but I had to reply. I live in a diverse area so our local markets provide some of the "veggies & roots" you talk about. I was watching your video on Yautia and as always I have to look things up when I do not know about them and Yautia is marketed under other names such as Malanga. I was pleasantly surprised that my market sells Malanga Lila I think the tag read. So my advice for everyone is to do some research not everything goes by one name and your market may carry it. I was also happy to find Yuca ( yooca) at my market and the grocer there said that if the roots don't look good they reject them and send back. Have a great day stay safe and have fun :)

    In my country green banana is a regular thing. We peel and boil them in salt (like potatoes) and eat them just like that. So its easy to find int he stores. Best way to peel them is in a bowl of water. Easy, easy.

    I have had great experiences using Let's Do Organic Green Banana Flour for waffles, muffins, and quick breads. I have a regular bread recipe in the oven now (fingers crossed!).

    Hi again Stacy, I redid the bread and it came out wonderfully. I made a lettuce, bacon and your gelatin mayo sandwich today. I need to try to make your faux-matoes. What I did this time and it was not intentional I used the plantains I had which were a bit yellow and my green bananas were turning yellow also. The batter came out smoother and I used my processor longer. I have been making tortillas for sandwiches etc but it is so nice to have a "bread" that has a similar mouth feel to a sandwich bread.       I'm so glad it turned out well!!! The bacon lettuce mayo combo sounds amazing!! I've been using thin sliced papaya in place of tomato lately without even adding anything else to it, it makes a wonderful substitute!

      @@RealWorldAIP OOOOOO Stacy sounds good. Next time I am in Aldi I will get one they are reasonable there. I have dried papaya in my cheap dehydrator and the slices came out yummy. I am also going to try your no gelatin mayo when I finish this one to see which one I like best lol. I have a huge list of recipes to try. I wanted to see if I could make bread for hamburgers. The link is below to give her credit. OH, I found small pans similar to yours at Walmart, aluminum but I cover them with parchment anyway. Stay safe, have fun :)

    True to form, I did not follow the directions well. I spread this in a much smaller parchment lined baking dish, so I ended up cooking it three times longer. I also put in half the sage because it's so expensive and usually takes over the taste. The end result was basically thicker bread slices. I was super hyped to try it with a burger and your nomato AIP ketchup (WHICH WE ARE ALL OBSESSED ABOUT) Honestly, I spit my first bite into the garbage! I am not sure what I was expecting, but I was so disappointed at first! Then my husband and son tried it... and actually liked it. The aftertaste was pleasant for me... the mouth feel was really very good, especially after the sad, crumbly, gluten free bread I had been eating for years until my recent AIP journey....so I went for a burger with lettuce, onion and 'ketchup'. WOW. I am so happy I did! The taste (as a burger bun), the texture, and the carb satisfaction are all on point. For others that give up after a tiny initial taste, don't! Give it another chance. Maybe make a sandwich. This bread will win you over. THANK YOU SO MUCH FOR THE RECIPE! I'm baking up a proper cookie sheet full as I type.

    I know you don't do seeds, but I'm doing a flaxseed microwave bread right now, with egg as a binder. Very satisfying. Made it everyday for a week. Now I don't have any craving for bread... flax or any other type. I like your recipe too because I can make one serving at a time. If I keep bread in the house I eat it, because I can hear it calling to me from the kitchen! So I have to really want to eat bread in order it to give the effort to make it. Having it pre-made is just too easy... right to my midsection! 💜🌞🌵

      @@janevickers4339, I'm still perfecting the recipe I found on a couple of UA-cam videos. But here goes my version: melt 1T coconut oil in a microwave bowl or ramekin (I use pryex 2-cup glass bowls), add and beat 1 egg, 1/4t salt, 1/2t baking soda until fluffy. Fold in 1/2c ground flaxseed meal. Once combined put half the mixture in a second bowl and pat the mixture of both bowls level, cleaning the sides of the bowl as the mixture only rises slightly. Microwave both bowls at the same time, 2 minutes on high. Because I like to slice each one in half (getting 2 rounds from each bowl) and I don't want to wait for it to cool, I toast it gently in the toaster oven. Once toasted it's really easy to slice. .... I probably will increase the baking soda because it's still a little dense and I will increase the flaxseed until the egg loses it hold as I can't see using one egg for every slice of bread I make (like the videos suggest). The videos also suggest 1T oil per slice as well, but 1T is still sufficient as there is no sticking to the bowls and the bread is still on the oily side. In my research of microwave mug breads you can follow this same recipe for any type of flour... but this is the only one I tried so far, because flaxseed is supposed to be lower in carbs and high in omega-3s.     Thank you for sharing this recipe with us! I am intrigued. I made plantain bread before and it was delicious. I would never think of using green banana. Can't wait to try this version of flatbread with a dip that I made using a creamy base that you shared in another video. I made something that is so close to mayonnaise, and at the same time is compliant that I started to dance around the kitchen :).
    You've got an awesome boyfriend :). It is so inspiring to see when partners understand our needs.
    Wanted to add a tip from me. You can make top of the bread smoother if you dip the fingers (while wearing gloves) in avocado oil and smooth it down with fingers. This way you can make a really flat surface.
    Also, I wanted to drop a suggestion for a color of the letters that you are using when dropping additional notes. While I love pink, but particularly dark pink is a little bit more difficult to spot and read fast, especially for visually impaired people. Yellow font with black outline reads more clear since it pops against background, and doesn't "hit" eyes with its brightness like white letters with black outline would do.

    I had a Puerto Rican sandwich with plantains as the bread, sliced and warmed so the two slices will stick together. I was the best tasting sandwich I ever had.
    Btw, plantains are used green not yellow because they are not to be used as a sweet fruit, it's used as a starch.

    Hi Stacey, Well I finished making my second batch of this bread with a caveat. The green bananas were not regular eating bananas. My supermarket that I go to told me that they rarely get in really green bananas sooo I went to a local large Hispanic market near me. They had a large display of GREEN BANANAS and I was elated. I bought some and today I made the bread. I started to peel the "green bananas" and they peeled worse than the plantains and I thought to myself that these are not reg bananas. So I went on your playlist looking for how to boil plantains because I was also making your base for salad dressing. Lo and behold you had a video on the "bananas" I had and I again thought, I don't care I am going to try to make your OMG it's Bread. Wellll my first slab came out and I waited for it to cool a bit and sliced off a thin piece and put some of your butter pat butter on it. OMG, it is good. there is a faint hint of banana and a bit of sweetness to it, but overall it came out a bit thinner in this batch which is fine by me. I did add some coconut milk to it and I can't tell you how much but it helped to cream up the batter more because it was a bit dry compared to the regular banana batch. The batter was the same consistency as your recipe. I am going to try to make a second batch the same way.. Sorry this is so long but I had to tell you :). OH, I also made a Shepards pie (no corn) with a breadfruit topping and that came out wonderfully too. Now that I know about "Green Bananas" I am going to experiment with them!

    Hi Stacy, I tried making your bread and it came out too thin and tough but I will try again. My dough didn't come out as smoothly as yours. I used my food processor and maybe I should have processed the bananas more. May I ask what the size of your mini pans are and where you got them ? A link would be appreciated. I used the pan that is part of my toaster oven and lined it with parchment and the bread "sweat" on the bottom. I have regular cookie sheets but again I will have to line with parchment.

      Maybe make a double batch and blend extra? I got those little pans at a local discount store but any pan lined with Parchment will work, you want the dough about 1/3-1/2" thick.

      You can input a recipe into cronometer or myfitnesspal for exact breakdown, this one is pretty much all plantain but I don't know how the finished product equates to weight of raw ingredients.

      I have not seen Matoke bananas in the store but I did try these similar looking bananas I found in the asian market: en.wikipedia.org/wiki/Pisang_Awak
      I thought all green bananas could be used interchangeably, but these acted more like plantains and hardened up a lot after cooling. They made perfect "rice"!

      LOL, I have not had bread in many many years, but I gave this exact sandwich in the picture to my boyfriend who eats a regular diet with gluten, dairy, etc etc and he said it was delicious by any standard, AIP or not. It is really awesome if you toast it.
