I just spent a week making various recipes of creamed spinach as a culinary exercise. Some with a bechamel, one with cream of mushroom soup, one with cream cheese, one terrible one that added sherry. Jamie’s was, far and away, the best method. One thing I did differently was to use nicely caramelized onions (about 3/4 cup) rather than starting with raw. This was a Paul Prudhomme stroke of genius. Bravo chef!

Saw you make this on TV other day, this is one I will be trying this Christmas ~ looks gorgeous. I`m also making your sausage rolls with mustard and sage and also trying Mary Berry`s Apricot & Chestnut stuffing. A few new dishes this year to keep it interesting!
I'm from Poland and most casserole are with meat, poured with béchamel sauce and sprinkled with cheese. American and British made so many variations of casserole not only with meat, béchamel sauce and cheese. I even heard about sweet potato casserole, but it's made as dessert and I don't think I would like that version. I mean I love them as smashed or fries, but as sweet dessert. I'm not convinced.

garlic in first! you want to toast the garlic crispy golden before putting the onions in... garlic needs a hotter pan that's water-free to get it right, and getting the garlic flavor right takes mere seconds! as soon as you start seeing the color change and can smell that delicious signature scent, then you can throw in the onions. the onions will cool the pan slightly and moisten everything up so the garlic doesn't overcook and burn, but the wonderful toasty garlic flavor gets trapped and infused into everything that comes after! (remember the temperature of the pan is key - if it's too hot, then you will indeed get a bitter taste... even from onions)
if you have whole seed flavors like cumin or sesami, those go before the garlic. herb or ground spices go after garlic OR sometimes after onion... depending on what flavor you want out of those.

You can reheat spinach as long as you use medium-low heat, make sure it is warmed gradually.
