I have never made a deep dish pizza before, and thought this seemed interesting. I used a different filling, but OMG was this a great meal! A great crust-to-filling ratio and so crispy. Make this meal!!

In New York we do a stuffed pizza, which is fairly similar to what you're doing here. Except it's more like a traditional Neapolitan, with a load of meats/veg and cheese piled up on it (it can vary), which is then covered with another layer of the Neapolitan type standard crust. That's it. No extra sauce or additional cheese to spread out along the top of it.

As delicious as this looks, and boy oh boy does it ever look that, my perspective is sadly ruined by living in the Chicago suburbs and growing up eating Lou Malnati's and Uno and Pequod's. I can't in my truest of hearts call this Chicago style pizza. If I think of it as a STCG style pizza pie, it looks amazing, and I honestly may very well make it some time. There’s 3 styles of deep dish in Chicago: 1-heavy buttery crust on bottom and sides, tons of meat and cheese 2-stuffed pizza, like you’ve made here 3-lighter fluffier crust, tons of cheese, a little lighter on the other toppings...

I would have mixed the artichoke and the chicken in a bowl with the Alfredo sauce first then add it to the pan. That way it will come out in a more uniform consistency.

When I was a boy in the 70's, Ma had a cast iron fry pan. She loved the thing. Down side was, she hated doing dishes until the day she died in '97. My sister Sheryl and I used to stand on the dining room chairs so we would be tall enough to reach the kitchen sink to do the dishes. (we were 7/8 years old) and then Ma would scold us for washing her 20lb pan the wrong way! I know there is an upside to these things, but I have a childhood trauma about that pan!

It is thin, but chewy and foldable. Chicago thin is crispy, so much so, some call it cracker crust. What you made is NOT pizza. Deep dish is absolutely pizza. But not double-crust (aka stuffed crust). Double crust is more like a round calzone. Classic deep dish is crust, then cheese, toppings and sauce. Same order as Detroit style and grandma pie. But, if you add a bucket of toppings and an additional crust it is no longer pizza, but a round calzone. Lastly, can using both red and white sauce be good? Not sure about that.

Sam I love your cooking, I've learned some amazing shit... but...invest in the Kitchenaid Commercial 8-quart stand mixer with all stainless steel attachments and the 8 quart bowl plus, the piece de resistance, the real DC motor that is quiet and powerful compared to the AC motors in all the other Kitchenaid crap. Then you buy some YEAST, traditional, and MAKE PIZZA DOUGH. The time you have to wait for proofing the dough will give you time to MAKE SAUCE! Just imagine your bolognese sauce in this recipe. The 3-hour sauce time is conveniently ALL THE TIME YOU NEED for a real pizza dough. There ya go!
The only thing to not like about San Diego, is the cost of housing there. Good thing is that Mexico is near by and is an option when looking for a place to live that may be affordable for anyone that is not a millionare.
