Recipe below. Since the good folks here don't do recipes, I'm going to help Make America Cook Again by keying it in. Steak Frites Bowl from STCG Frites 2lb bag of fingerlings, multicolor is nice. Wash, Split length wise, toss with oil, S&P, Chili powder, paprika, minced garlic, red pepper flake Spread on an oiled sheet face down 15 mins at 450F. Then flip and 15 more. Butter drizzle 1 stick butter, 1/4 C ea rosemary, parsley, green onion. Big pinch of S&P 8 cloves roasted garlic, Bring to a simmer and set aside. Steak: Cube a trimmed ribeye into bite size pieces. Toss with oil, S&P, Garlic powder A perforated grill pan is perfect. Or any way to sear the cubed meat will do. Assemble: Spread the potatoes in a shallow bowl, top with beef, ladle over the butter sauce Consider reserving a cup for dipping.

Every instinct I had was to cook the herbs in some white wine to draw the flavors out a bit more since butter doesn’t lend itself to a lengthy simmer. But I held back and made the recipe as described (sans the WAYGU) and it was PERFECT without my alterations!

I’m 25 so I don’t know if that makes me a millennial but HELL YEAH I watched The Newlywed Show and Match Game and Press Your Luck when I was a kid. Game Show Network was legit man!
Looks delicious! I have done something like this for many years. I cut up some steak into chunks (not wagu, usually top round I run a jaccard over it before cutting) Then get a mixture of butter with a little oil right up to smoking, throw in the steak chunks, turn off the heat and stir-fry for about 40 seconds. Scoop into a bowl, add a little fresh garlic, salt/pepper, stir, cover with foil (but not completely) then set aside. Next I cut up a couple russet potatoes add a touch more oil and butter to the pan and do a shallow fry until the potatoes are golden and fluffy. Put the potatoes on a plate with paper towels to drain and then remove the paper towels. By this point the meat, which is basically rare to mid-rare has released a lot of juice, the garlic has been cooked by the residual heat and there is oil and butter mixed into the juices and garlic. Pour the juices over the fries, then add the meat on top, heaven! Yeah, I would love to be able to use Wagu beef, but that is just not in my budget ;)
