I was supposed to get my green beans today but the farmer he usually gets them from, said they needed couple more days! But I did get my paste tomatoes, so I will be elbow deep in my monster stockpot tomorrow! 🥰 Technically this will be my first batch of sauce using the paste 🍅 tomato! So I'm making that as well as a small batch of Peach Butter. I made the Fiery Peach Salsa Saturday, and hopefully have enough left to make 4-5 half pint jars. I may stop and get a few more since I have a early teeth cleaning at 8 in the morning! Thank You! Thank You! Thank You, for all of your hard work and help. So that we get the proper techniques and tips so that we can make and safely store our food to feed our families, really good, really nutritious meals and snacks! Have a great week Carol and Fam! Congratulations on 10,000 subscribers! That is great! I canned a half bushel of green beans a few days ago. We love home canned green beans but I prefer the hot pack method. That is how my mom canned them so I always do that as well. They taste so good in the winter! On a different note today I canned a bushel of tomatoes which I usually do in the water bath canner but today I decided to use my pressure cooker. I like it better, I think there was less siphoning. Have you tried using the pressure cooker for tomatoes?

It’s fine for your jars to seal in your canner. But don’t allow them to sit longer than 20 minutes as flat sour can occur. As long as you haven’t lost more than half of your liquid they are safe to eat 😊

Do you only use the lids once? (The part with the rubber seal). I heard there is a shortage of canners and lids right now and some of the canners I’ve watched are changing to tatler? Lids? I donr feel safe with those. I like to hear the pops when you put them on the counter. It’s as if they are clapping at me for doing it right. I’m very nervous to start but I really want to with the world as it is.
Ann Marie yes, you can only use lids once. Tattler lids work a bit differently and honestly I don’t use them. I’m not a fan. There’s always a lid and jar shortage this time of year. Current circumstances have made it worse. I stock up throughout the year so when it’s gardening season I have plenty. 😊

I did 21 pints of the balsamic beans today, and 21 pints of regular green beans from The Ball Blue Book. I love the information in that book but not so much the recipes. They don't seem to have just the plain basic recipe for things, it's always a fancy version...... I do have a question. You said 20 minutes for pints, my Ball Blue Book says 25 minutes for pints. This is the 2nd recipe you've used where the timing has been different. What part of the country are you in to where it would be different?
Jomama 02 I live in Ohio. My times are NOT different. I checked my Ball Blue Book. On page 111 under Beans, green, snap or wax it gives the exact instructions I gave in this video. In the last video you told me I was wrong I addressed that as well. It was cream style corn and the Ball Blue Book gives the same time and instructions I gave, 85 minutes for pints only. Cream Style corn CANNOT be canned in quarts. I’m not sure what you’re reading but I’m giving correct information. If the Ball book differs from the National Center for Home Food Preservation I default to the latter.
Jomama 02 the Balsamic Beans are in the All New Ball Book not the Ball Blue book. The time is different for these beans bc a red onion is included. When you can just green beans the times are as I stated....
Water bath canning is safe as long as it's done properly. I've done water bath canning for 30 years as my grandparents have and theirs lasted for 3 generations. I'm watch just for other methods.

Yes there is a risk so I don’t recommend you add it. Add it when you heat up a jar

What variety of Italian flat beans did you grow? I'm planning for them this year. I think Roma is the variety I'm looking at.

I over processed my green bean. They are still in my canner cooling down and not sure what to think is going to happen.
