Raw Walnut Fudge

- We're making Raw Walnut Fudge, featured in Ali's first cookbook, Naturally Nourished Food as Medicine For Optimal Health. This fudge has texture, a little sweet, a little salty and is all amazing. It's a rich, mindful indulgence that you don't have to feel guilty about consuming. It supports your thyroid, heart health and can even support your metabolic support. This is also a great recipe as it keeps in the freezer.
INGREDIENTS:
1 cup walnuts soaked for 2-4 hours, strained
⅓ cup raw cacao powder
½ cup melted coconut oil
⅓ cup maple syrup
2-3 tablespoons raw cacao nibs
½ teaspoon coarse sea salt
DIRECTIONS:
Blend walnuts and raw cacao powder first. Then slowly drizzle in maple syrup and coconut oil while blending to emulsify ingredients. Line a small pan with parchment paper and spread out mixture, pressing into the pan. Sprinkle with sea salt and lightly press into the surface. Chill in freezer for at least one hour. Cut into pieces and serve.

I'm going to make a sugar free fudge for my mother who is pre-diabetic and loves sugary desserts and was planning on using pure monk fruit. Is this w/ the maple syrup appropriate for diabetics?
