    Loved this! I pack a baby crock pot. You can make your own legumes, bake root veggies, oatmeal, & quinoa. You can do lentils & have a great oil free curry waiting for you in your room. Or wake up to oatmeal done & add toppings.

    I just came back from a road trip and had a near perfect experience. This is great for me as my weight loss routine usually falls apart any time I’m away from home. With an ice chest and dry bag to keep all my food in I had everything I needed. I had a plastic box with the snap on type lid that I kept in the passenger seat filled with my favorite fruits(apple, grapes, banana, and papaya.) I am feeling pretty stoked about how it turned out.

    This is lovely and very helpful. As a vegan, I often have a hard time sticking to my diet when I'm travelling. It is so easy to give into convenience and eat whatever sides the restaurants might offer, while also complaining that you can't find any quality nutritious foods. Thank you for your guidance!

    When we go on vacation we make sure the hotel has a kitchenette or at least a fridge. We have a little camp stove we bring or the air fryer and we just get groceries at a local supermarket as we need them. It's so much better than eating out every night...and cheaper!

    I love shopping in a foreign country. And by shopping I mean checking out the supermarket’s every single thing they have and not necessarily buying much. But love seeing what they have :) husband is American and at the beginning I would go ‘shopping’ for 2-3 hours in one place :)

    I don’t travel a lot, but I do a lot of hospital stays. First I have some “day travel” for some health appointments. I eat a good breakfast before, like oatmeal or something, then I have finger foods with me. Also things like tofu 😂 I love cherry tomatoes and grapes, but also things like cucumber in finger bits.
    For my hospital stays that often, but not always are planned I have a game plan. For the more emergency I go with the flow. Use mustard for my bread, and ask for oatmeal if needed. I often get a bundle of bananas too. I eat what is available, but only vegan, no compromise there, and ask for more veggies and bananas.
    I just had a planed hospital stay. I have with me A LOT of cherry tomatoes, and couple of bananas, bags of grapes and avocados. I also had with me some vegan protein powder, bars (that I didn’t eat a lot of but good emergency food), frozen berries (yes they found room in a freezer for me), and cans/tins of seitan + some soy sauce in a tiny bottle.
    At that unit I was now they know me, so I get vegan food, and they gives me bananas for the room. I even got chia seeds for my soy yogurt and oatmeal. The tins of seitan saved me when the dinner was wrong. I did get all the leftover veggies to have with my evening meal (we have 4 main meals here in Norway).
    I planned and adjusted the plans when something happens. Mustard as a sauce is my go too, but I don’t need sauce or dressing but just a tip from me here. I load up on veggies, but still eat some of the not so healthy vegan stuff. I have ibs and have allergies too, so I eat meat substitutes from soy and seitan on a regular basis, but I try to not eat fried foods and fatty sauces and dressings. My stomach don’t like to much fat either. A little goes a long way. Potatoes are my friend too 😅
    I have been vegan for over 16 years and you just get used to it. I am so much more relaxed when I know I have a game plan, and the experience to adapt around it to make it work. This time no one else on that unit was keen on grapes, and I got a couple of kilos of it 😂 A very good snack and also good to add on a meal that my not have that much volume and may have higher calorie density. It’s not cucumbers, but it’s not oil either. It’s all about find a way and some balance.

      I loved reading this. Really informative. I got a bit obsessed with Norway just before Xmas as watched (twice!) Netflix’s Home for Christmas then Storm at Christmas. I’m glad you manage to make your hospital stays work for you. I spent 2 nights with my daughter as an emergency patient last Summer and it wasn’t easy to eat healthy or vegan .

    Im very allergic ( gluten,lactose( and water on my skin)) My most important turningpoint was,when I accepted the fact,that people dont have vegetables in their homes ,anymore...not even in their freezers....so I ALSO have to bring that everywhere . Apples/fruits are to much sugar,if its my only food....

    I’d love to go to the cafe for coffee, but I’m too cheap. It’s definitely a rare treat when I do. I also enjoy exploring shops in other places, grocery, art supply and hardware stores are my favorites! There are so many interesting finds out there. Glad you had a good time over here!

    Hi Chelsea! Glad you had a great time! I am from the US and I love the different grocery stores as well, although kn my particular area there aren't any "specialty" grocery stores like Trader Joe's... where you are able to buy certain things. Where I used to live we had a Lucky's for a short period and then it was gone. I absolutely loved that grocery store. It had this most beautiful vegetables I had ever seen.

    I also love going to grocery stores in other countries! I bring a huge salad on every flight. I use the clamshell containers that the greens come in as the container. I go to Whole Foods when I travel in North America as well! Great video!

    We also an ahead when we travel. We look up ahead of time which restaurants would work for us, if we can cook where we are staying at. Planning is the key!!

    I live in America and I travel to Germany every week. I am a flight attendant. I pack all of my food to eat on the airplane and buy a lot of food to eat on my layover If I don’t go out to dinner. You have given me so many great ideas.

      Gosh! Big question. I had thought of doing that many years ago when i had to make regular trips to San Fran. But in the end you can't expect a husband to leave his career or teenaged kids at the time to leave their good schools and good friends and established extracurricular activities. We did that when our children were younger and my husband took long service leave. But we didn't go to the US. I definitely wouldn't want to live anywhere in the States now, no matter how good Whole Foods is ;)
      I have no idea what Chelsea would say, but her daughter would miss out on the contact with grandparents, and honestly, the lack of community stability in so many places in the US now is a real concern. I have small grandkids now and I'm not sure you realise how confronting the gun culture is (much more than it used to be). When you come from Australia, as I do, or New Zealand as Chelsea does, it is something you can't help thinking about. In 2023 the Gun Violence Archive* recorded over 600 mass shootings by the beginning of last December. Last year there were 32,811 deaths and 64,257 wounded by December 5th. One third of all the gun deaths during the past 5 years occurred in 2023 alone, so it is a statistic which is increasing. Except those deaths aren't just statistics, guns are now the biggest killer of American children than any other cause. I know there are plenty of communities which feel kind of safe, but it's so unpredictable, that it doesn't feel so safe to me when you come from a country where your kids don't have shooting protocols at school, or any consciousness of guns at all. As this election year is likely to be worse, its a factor that cannot be ignored. In Chelsea's place it's not a risk I would take. The political turmoil is very scary in the US this year. I was in California and New York last autumn/fall and it's a very changed atmosphere in the US these days. Plus citizens in Australia and. New Zealand don't even have to think twice about basic rights like healthcare and free education for children as another factor. Its not to say every thing is perfect, obviously it's not, but the difference between the quality of life in the the US and all other countries is substantial. If you're rich in America you dont have so many worries, but that shouldn't be the factor which makes a difference when just being a citizen elsewhere assures you of safety and basic rights without question.

      @@CalmVibesVee That is definitely a huge challenge. I do not have access to a microwave in hotels in Europe. I usually will bring and eat sweet potatoes, I do not mind those cold, but regular potatoes cold are not so great.On the airplane I do have access to heat food, but the ovens have cooked meals with meat and just stink so I prefer to just eat my food cold. Luckily on the airplane and in my hotel rooms I have access to refrigeration! It is not perfect but I make it work 🙂

      You must watch the rest of her videos and the Podcast is amazing as well. She does not count macros. This way of eating is WFPB and all about calorie density. It works! Check it out.

    I honestly wouldnt worry about losing weight on vacation if i was a healthy weight. I would just enjoy myself but not go too crazy, and stay active, and then get back to a healthy routine when im back home.

      tone deaf. This is aimed at the many folks who DO struggle with the incovnenience of eating while traveling. You do need to plan, or it is altogether too easy to throw away weeks of effort on a few short days away from home. Worst is pressure from relatives or people you are visiting, who want to socialize over food of their choice. It takes strong will power to stand up for yourself.
