The food writer Zainab Shah is here showing us how she makes gorgeously crispy samosas two ways: One combines spiced ground chicken with cilantro and green chiles for freshness, and the other is a Punjabi-spiced mixture of potato and peas. In Pakistan, home cooks have varied takes on samosa fillings, but most agree on using store-bought spring roll wrappers for the shells. Convenience aside, these ready-made pastry sheets are the key to unparalleled crispness. Samosas are commonly assembled in big batches and frozen uncooked so they’re ready to fry anytime.

All the food that’s fit to eat (yes, it’s an official New York Times production). - Навчання та стиль
This is such an accurate representation of pakistani american home cooking and it's so nice to see that because it's not common
“If you’re not gonna make the filling spicy, you should probably just call it something else.” This woman knows what’s up!
for some cultures food is really part of their cultural identity, I loved she talked about that and that she contextualized samosas historically and now I am craving samosas
This video wasn't just educational but entertaining and enchanting thank you Zainab
It’s so nice to see representation in media. I’m so glad Pakistani American kids growing up now have this!
Heyy name twinsies. So nice to see the Pakistani representation
I always thought sandhu was a Sikh name
I never thought to use wonton wrappers! I love samosa and this makes it so much easier to make.
I've been experimenting and another easy way is to use an uncooked tortilla. Cut it in half and fold it like a cone. Watch a UA-cam video on making the cone. It fries up super fast and is really tasty. I get a big pack of uncooked tortillas from Costco. I believe they're made from a company called tortillaland
Thanks for this! For years I've been eating store bought. But have always intended to try home made. The wrapper suggested here also makes the recipe alot less intimidating. Thanks again.
That crispy sound at the end was amazing
I never would have thought to use wonton wrappers! Your video is so helpful! Thank you!
Yum. Thank you. Memories came flooding back of one fun afternoon when my friend showed me hoe to make samosas. Her shortcut was actually a tortilla wrapper instead of egg roll wrapper. I was quite surprised.
Awesome video, Zainab's a natural!
would love a haleem recipe or a karela qeema recipe
I had no idea that in Pakistan samosas are made with filo style pastry. In India, and especially Kolkata, samosas are made with a short crust pastry that is very crumbly and never filled with meat. Very interesting!
In Pakistan somasas are made with the same short crust pastry as in India, However her version is the home cook style so she uses the filo dough.
In iran we use lavash instead of dough
I'm drooling it looks so good!
Looks so good!
I can smell this video 😍
Yum! I want to try both!
How lovely!
Loving the representation. Love from Pakistan
Loved this! 😀
Looks exquisite! 11/10
Something I thought was only restaurant buyable now seems so doable! Also Zainab could be a hand model haha
Great tips and stories!
Followed your recipe using the oven method! Thank you, they turned out great :)
Definitely a well made samosa and the crunch at the end was 👌🏽
Dude she is gorgeous and I will definitely make samosas for the first time this Ramadan
Wow I love her and this Pakistani representation!!
This is a video I’ve been waiting for!! I wanted to know how to make this type of samosa
I don’t know if I can make these but they look DELICIOUS! Can’t wait to try that chutney!!! 👅
This was a great video, thank you! I’d love to see a part 2 that shows a traditional, homemade dough wrapper, so we get a quick and easy version along with a traditional version. That filling...I’m from India, and that was almost identical to my mom’s.
Shoutout from India. Samosas are a way of life! She's right, probably some of the oldest known snacks of all times. P.S what do you have to do to get featured on 'NY Times Cooking' ? :D
samosa and chai at home means we are having guests visit us today. I don't know if her ancestral's regional cuisine from Pakistan is in Gujarati speaking area? If it is then can she showcase some gujarati dishes so we can see what they eat on the other side of Gujarat no?
love this video. would prefer ground cumin and ground coriander seed but absolutely classic.
Spring roll wrappers!!!
Now I know what I must eat for lunch today! 🤤
الحمد الله
Salam dari Indonesia,sy suka sambosa
Terima kasih atad resepnya
We have vegetable mix samosa in Jeddah and India all over, it's yummy and very tasty, yes, kheema samosa with green pieces
right in time for Ramadan!
This is exactly how we did it at home
Goodluck ❤❤❤❤🎉🎉🎉
Love samosas!
Yes!!! Nothing will ever beat the samosas and fries I bought from my school canteen. It's part nostalgia, part developing an insane appetite during the first half of school (don't know how) and then it was also just a really solid samosa. God bless the uncles and aunties who fed us at our schools!
How can anyone be anti immigrant when they bring such wonderful gifts to our country?
Thanks to you very much, my daughter's name zainab also 😀😀😀😀
Cool
Can you reuse the oil & how do you keep it
i had to look at her hands the whole time hahaha such beautiful hands...food looks nice too of course
Yayay hi fellow pakistani ❤️
nice 🎉❤🎉
❤🌹
and can i just say, she is beautiful!
the directions for folding were overly complicated but i really like Zainab and her recipes. bring her back as often as possible!!
I can't believe I coincidentally have all of the stuff I need to make these already at home!
I just need to substitute the pastry dough with wheat bread and the filling with a hot dog
I want to know what to call them if they don't contain chillis or too much chilli powder because I'm not allowed too much spice. 🤔
FYI your website says russet potatoes but in your video you're using yellow potatoes
This was the best shit ever!! So good
Zainaj u r very beautiful.
First!
No one cares who is first, who is 10th, first 100th or 1st 10,000th.
Really? Yup. 😖
Chilies 🌶 were introduced into India by Portuguese traders in the 15th century. Given that samosas predate the chili pepper by hundreds of years, requiring the filling to be spicy seems like a more
modern take on it. Spicy or mellow, they’re one of the greatest snacks around. Thanks for sharing a quick home method for making them!
Hundreds of thousands of years?!
Samosas crispy?
This woman has the same name as me
Wonderful, but a true samosa isn't made with spring roll dough 😅 The taste just isn't the same.
Ramadan is NOT about eating a lot. Unfortunately that's what some people have reduced Ramadan to.
Never try this! You gonna get addicted to it :)
Man those whole coriander seeds are such a spoilsport 🤢
who eats ketchup with their samosas?
This sounds selfish. Adding this to my repertoire
Pakistani samosas never have peas.... Ever... Indian samosas do...
blasphemous.
"but ramadan is also about eating...alot" lmao girl no it's not!. gorging yourself at Iftar is not what you're suppose to do.
It's not samousa, it's sambousa.
Teach them right.
Samosas are not supposed to be flat.
Samosas are samosas... it's all about regional preferences and also a chef's personal approach.
These s'mores look disgusting. All they are is chocolate, graham cracker, and marshmallow. How difficult would that have been to get right...?
What are random samosas by Pakistanis?! Were they out of Indians or Bangladeshis or Nepalese or srilankans or Bhutanese or tibetans.?! Why ever this absurd country which really has no interest in equity or democracy. The accent, the lethargic demeanour .. Is sooo feudal Pakistani and soo blasé. Haha. Weird Funny video.
