    The food writer Zainab Shah is here showing us how she makes gorgeously crispy samosas two ways: One combines spiced ground chicken with cilantro and green chiles for freshness, and the other is a Punjabi-spiced mixture of potato and peas. In Pakistan, home cooks have varied takes on samosa fillings, but most agree on using store-bought spring roll wrappers for the shells. Convenience aside, these ready-made pastry sheets are the key to unparalleled crispness. Samosas are commonly assembled in big batches and frozen uncooked so they’re ready to fry anytime.

    for some cultures food is really part of their cultural identity, I loved she talked about that and that she contextualized samosas historically and now I am craving samosas

    I never thought to use wonton wrappers! I love samosa and this makes it so much easier to make.

      I've been experimenting and another easy way is to use an uncooked tortilla. Cut it in half and fold it like a cone. Watch a UA-cam video on making the cone. It fries up super fast and is really tasty. I get a big pack of uncooked tortillas from Costco. I believe they're made from a company called tortillaland

    Thanks for this! For years I've been eating store bought. But have always intended to try home made. The wrapper suggested here also makes the recipe alot less intimidating. Thanks again.

    Yum. Thank you. Memories came flooding back of one fun afternoon when my friend showed me hoe to make samosas. Her shortcut was actually a tortilla wrapper instead of egg roll wrapper. I was quite surprised.

    I had no idea that in Pakistan samosas are made with filo style pastry. In India, and especially Kolkata, samosas are made with a short crust pastry that is very crumbly and never filled with meat. Very interesting!

      In Pakistan somasas are made with the same short crust pastry as in India, However her version is the home cook style so she uses the filo dough.

    This was a great video, thank you! I’d love to see a part 2 that shows a traditional, homemade dough wrapper, so we get a quick and easy version along with a traditional version. That filling...I’m from India, and that was almost identical to my mom’s.

      samosa and chai at home means we are having guests visit us today. I don't know if her ancestral's regional cuisine from Pakistan is in Gujarati speaking area? If it is then can she showcase some gujarati dishes so we can see what they eat on the other side of Gujarat no?

    We have vegetable mix samosa in Jeddah and India all over, it's yummy and very tasty, yes, kheema samosa with green pieces

    Yes!!! Nothing will ever beat the samosas and fries I bought from my school canteen. It's part nostalgia, part developing an insane appetite during the first half of school (don't know how) and then it was also just a really solid samosa. God bless the uncles and aunties who fed us at our schools!

    I can't believe I coincidentally have all of the stuff I need to make these already at home!

    Chilies 🌶 were introduced into India by Portuguese traders in the 15th century. Given that samosas predate the chili pepper by hundreds of years, requiring the filling to be spicy seems like a more
    modern take on it. Spicy or mellow, they’re one of the greatest snacks around. Thanks for sharing a quick home method for making them!
