  • We challenged chefs of three different skill levels - amateur Emily, home cook Rinku, and professional chef Dalia David - to make us their best samosa recipe. Once each level of chef had presented and tasted their creations, we asked expert food scientist Rose to explain the choices each made along the way.     let's get real. Emily is no longer a level 1 chef-- making her own chutney... blooming spices and knowing why you do that, she's progressed. I look forward to seeing her appear on a future episode as a level 2 chef!

      What I want to see is a graduation ceremony for her. Maybe frank gives her a diploma and a handshake. She's come a long ways since the french toast episode.

      If I were on the show, I would be a level one chef. I’ve been a professional cook for 19 years but most my cooking comes from my home. I think the idea of level 1,2, and 3 chef comes totally from the availability of ingredients, availability of time, and availability of money. I respect the absolute hell out of every level and chef on this series but the real heros are the level 1 chefs

    The level 2 chefs are my personal favorites, they always bring a mix of excitement and joy and they just make you feel loved

      @@Hortonscakes I think the voice is like that bcz maybe they went to US at late age and if u speak fast then u fumble a lot. I have seen ppl advising to speak slow so that mind gets time to switch between language bcz u often think in native language. Some people still sound good that way but her voice got mix of wrong things I guess and it is kinda a hugh pitched voice so it is definitely not pleasant to the ears

      She's been featured as a level 2 chef in some episodes, but she's clearly not as experienced in samosas as the other two, hence the level 1 I think

    Honestly cauliflower in samosa is very much authentic Bengali take on samosa. They used to be really popular in metro cities before more just potato filling became more popular due to Northern state immigration taste. You can still find them in mainline towns and villages . Cauliflower, peas and fried peanuts in the filling is beyond delicious.

      Level-1: Takeout
      Level 0: (as you said) buy them fry them (air fryer, scared of deep fry)
      Level 0.5: Buy them, deep fry them.

    I’m already addicted to this series, but wow! All three chefs made me feel like I could make my own samosas. And this trio were so charming and fabulous! Level 2 and 3 were new to me and loved them all. I especially appreciated the commenting on each other’s ingredients because when I watch I wonder about choices and hearing their responses was fantastic.

    Rinku, our level 2 chef, I feel was at par with Dalia our level 3 chef. And all the 3 types of cooked samosas looked delicious. I can eat them all!!
    And u can tell Rinku is Bengali by the way she speaks in a mellifluous way..

    All 3 looked fantastic, but I'm a sucker for cauliflower, so if I could only have one, I'd go with Rinku's samosas. That spicy red pepper chutney that Dalia made would be hare to pass up on though.

      Man sorry to tell you that chutney is not spicy at all. Kashmiri chillies are just for colour. It's basically like paprika. Adding colour but no spiciness.

    Emily was perfect for the L1 chef, she's progressed so much and in my knowledge, Samosas are like Rinku said "Not for the lazy cook". So much preparation, so many spices.
    Just the spices and seeds themselves are so easy to mess up! If you heat them more than you should, you're going to get a bitter samosa and even 10 seconds are enough to ruin your dish.
    Emily knows her way around some stuff now and I think she did a pretty good job!
    They're not fried eggs and canned peaches people, this dish takes time, skill and attention, that in the end pays off with one of the best snacks you can have!

    In a traditional Samosa, the potatoes are boiled first, roughly mashed, and then put on the pan for shallow frying. Rinku's cauliflowers went in after the potato - mistake. Cauliflowers have to be fried separately and then added to the potato later. Also, if your samosa crust has too many bubbles, the dough is not tight enough and needs more ghee or oil.

    Traditionally the condiment used for samosa is Sweet Tamarind Chutney but we use Ketchup at most Indian homes.

    For the first time, all chefs made something very close to the actual thing. Emily plz fry the samosa, its a comfort food! But overall this is much better than that abysmal biryani episode.

    I love how everyone made their samosa! Epicurious definitely learned that they should probably get Indian chefs for Indian food. Dalia is a South Indian like me. And Emily made my favorite chutney, though my mom used Pani Puri masala in it.

    Tamarind chutney is by far the best chutney to have with samosa.
    Also Emily has progressed so much from past videos, she should be promoted to level 2 chef

    Samosa is originated in North Africa & Middle East, as sambusa. They use meat instead of potatoes (India didn't have potatoes either till Portuguese came in), and brought in during the Islamic invasion.

      I made them yesterday… crunchy and damn yummy!!! Must try the air fried samosas… u can also try bhavnas kitchen’s oven baked samosa from kawan paratha… best and yummy… love them both

    As a Bong I love Chef 2’s Shingara aka Samosa a lot, also given the fact that it's my mom's nickname makes her recipe very appealing. But for someone who loves Mangsher Shingara the most, the Keema Samosa it is for me! Can we have the Level 3 Recipe Epicurious?

    My only issue I suppose is how these samoosas turned out..
    I know it came down to the dough they used, I'm used to the thin pastry leaves that are used.

    I think this is the first time the home cook made a better meal. At least they look better. Dalias were plated way better but the other actual samosas looked better. But I think thar just comes with her being older and she's probably made thousands of them in her life by now

    Actually I'll tell you the amateur recipe for samosas: you go to an Indian grocery store or a large supermarket and grab some from the freezer section. In my opinion if you're making samosas from scratch you're definitely a super-expert home cook!

    Dalia is definitely a South Indian if one of her go-tos is tamarind chutney. As a South Indian-American, I absolutely love that stuff.

      In India most sellers commonly give tamarind chutney with samosas.
      I dunno who told you that it's South Indian.
      Tamarind chutney is so commonly made in so many Indian households.. it's not south Indian speciality. Every state has their version of tamarind chutney.
