- Chintan Pandya, chef of Rahi in the West Village and Adda in Queens, knows the secret to a perfectly crispy samosa: frying at two different oil temperatures. Potatoes, peas, and ajwain, an herb thought to have anti-bloating qualities, are also key components to this classic Indian street food. Chintan demonstrates how to use a pasta machine to give the dough a consistent thickness, as well as the proper way to fold samosas.

Saying it's a criminal offense is somewhat inconsiderate. If someone is overweight or unhealthy, then offering healthier versions of foods they love can help them lose weight and make them feel like they don't have to compromise their tastes for their health. Now saying baked samosas are tastier than fried could definitely be considered offensive, but I don't think people baking samosas are saying it tastes better. If they are, they're either wrong or need to start a business because they have found a way to make a lot of money

Chintan repeating himself, saying things simply, and constantly pointing at the food, is very helpful when to comes learning how to make this dish. Even that last bit with him saying that baking isn’t going to be as good as fried, was a good tip. This guy is probably great at teaching beginners chefs.

Most of the Indian mothers would cook some vegetables which kids hate , it is a known fact. And also , not all of us like spicy food. And not all our food is spicy , since only limited selection of food (mostly popular spicier ones) are showcased in the west. But yes , I would say , wait for 6 months period , so that covid situation (which is a lot better today than few months ago) becomes almost non-existent.

I love Indian cuisine but I have no street cred when it comes to cooking it. On the rare occasion I make samosas I'll use wonton wrappers. I really like his dough recipe. His excitement for the pasta maker is so fun to watch. It's like the first time I switched from doing everything by hand to using a stand mixer.
Love how everything is explained by color, texture and consistency. I was able to understand the feel of what is happening at each step. Wish I could have tasted this. Thank you. 💐

Wow this is actually a quite simple recipe. There was an Indian grocery store near where I lived and they had some killer samosas. I always grab a few before I leave very week. Now I can make it myself!
Nice to know but don’t think it’s that simple recipe to mail it perfectly, it takes time like he said( he tried 500-600 of those samosas before getting it right) . Enjoy making them !!

I work in an Indian restaurant in the US and we use a the pasta roller to get the same thickness every time too. And he's right when he says it looks easy but hard to do. When I used to watch them others do, I also thought it was easy. But when I tried to do it, I discovered how difficult it was. It took me a while to learn how to do it.

Rolling the whole spices with a pin , how have I never thought of that.
You will probably damage the pin after a while. In India it is done with a really heavy elliptical pin which has a base to crush these.
The Bengali version has more whole spices, ginger, turmeric and cauliflower in winter. The crust is thinner too.

Okay, that’s genius. I never thought to use my pasta roller to shape and roll out the samosa dough. I’m trying that next time I make them.
As a home cook, I’ll never waste that much oil to have two separate pots at two different temperatures. It takes longer to take them out and rest them while you raise the heat, but I don’t want all that leftover oil. Yes, I know you can strain and reuse, but storing it is a problem in my tiny kitchen.

I had some with lamb in it at a local family owned indian place and it changed my life lol
The meat was very crumby combined with the texture of the samosa it was perfect
Lamb filling is modified for the western pallete. No one in India stuffs any kind of meat in samosas except those made by muslims in their homes.
@@simplyzulu1426 tbf samosa is mostly an economic street food in india and lamb is expensive as meat can get. If meat industry was subsidized in india like it is in the west I'm betting my chances it'll be a bit more popular than it is right now.
Meat samosas are called lukmi in Hyderabad and quite common in old city restaurants

Thats how its said in western part of India: Pow-ta(like in tap)-toe. Same goes for tomato: Toe-ma(in mac)-toe.

I learned a lot of new information from your videos. I knew it was important to boil uncut potatoes in cold water to prevent them from absorbing water. I knew ajwain can emit gases, which people take when they eat oily foods. Also, I was impressed that you have practiced hard to make samosa. I learned that whatever people do, many practices are needed to improve.

I love samosas but making them at home is a hassle (you need at least 3 liters of oil to fill that pot)
You don't need them in that triangular shape, just flatten them out and shallow fry, it would taste the same

I remember a foreigner once set up a stall alongside other local street food vendors near our university selling shimosas. That was my exposure to this interesting food. It was quite unfortunate that he didn't seem to be successful in the venture since he only appeared there for like a couple of weeks before vanishing.

The first samosa I ever had was back in the 1970s from an English lady whose husband had been stationed there at some point. She had learned Indian cuisine while in India and she knocked up some samosa for us one day. My mind was blown! For me, there is only one type of samosa - the one with potato and pea. I appreciate that non-vegetarians (mostly from the North West, and into Pakistan), will use meat, but the purest form has to be potato and pea. It can't be improved on.
