I had cut up some eggplant in slices and salted them to let them sweat out the bitter juices. I then went and found this recipe. Very easy and the eggplant came out wonderfully. As I had salted the eggplant first, I added no additional salt.
I've never had eggplant before. I'm starting the keto diet next week, and am going to try this recipe. I hope I like it. I'm autistic, and have a lot of texture issues with a lot of veggies. I really hope this has a texture that I can take.

I have granite countertops. It works great for defrosting food as it draws the cold out of the food pretty quickly. If I was to redo my counter tops, I would probably go with quartz as there is no maintenance. The granite needs to be resealed at least once a year. The quartz does not. Maybe someone else here can give some input as well.

Use avocado oil for high heat roasting like this because it has a smoke point of 500 degrees whereas olive oil smokes at 350.

This nice recipe can be improved by adding cumin powder and red chilli flakes... always enjoy your recipes thanks again.
