Baking Supplies
* Cupcake liners - red foil or paper (I prefer foil)
* Muffin tin - cupcake pan - standard size
* Cheesecake Filling: cream cheese (I use Philadelphia cream cheese), sugar, lemon zest (rind),vanilla extract or vanilla bean paste, eggs, sour cream and salt
* Crust: graham crackers / graham cracker crumbs, sugar - white granulated, unsalted butter, salt
* Topping: For this recipe demonstration I used strawberry and raspberry jam, and topped each cake with a sliced, fresh strawberry and some blueberries.
** Note: Fruit pie fillings (Cherry, berry, or any fruit), preserves, and jellies, also make easy toppings.

I just made this! Halved the recipe and made it in the toaster oven. Lowered the temperature a little and baked for slightly longer - came out looking and smelling amazing! Right now they r chilling on the cooling rack. Can't wait to taste them!

I love these. They are perfect and bite-sized. I topped mine with milk chocolate ganache and strawberry jam. I also used Oreos instead of graham crackers and they were delicious. Thank you for the amazing recipe.

This sounds heavenly. I'm going to try putting a whole nilla wafer on the bottom (out of sheer laziness) and make a half recipe so I can cook it in the toaster oven. This sounds like a keeper.

Made these today! Normally when I make cheesecake from scratch it takes a few hours but these babies took like twenty minutes to make and like 12 minutes to bake...they were demolished by my friends and family that came by for bbq. Thanks! But I used my own recipe but I use the cupcake format seen in your video!!!

It's 2017 and I've now tried this recipe. It is the BEST. Easy directions to follow. Make sure when you bake these you sneak one for yourself because when people taste them.......they love it and you risk the chance of not getting one yourself....lol Great recipe Di.

This recipe sounds very delicious. Talking about the crust, that's why I use regular butter because the cheesecake will have the salty hint, and because regular butter it's a lot cheaper.
