    First, Merry Christmas and Happy New year to everyone! It's been a great year of bee wrangling adventures, and I am grateful to all for having been so dedicated to following along, thank you all so much!
    As Christmas was approaching, and the idea of giving honey as stocking stuffers, or just because it's just so good, was a hot one, the demand for honey from St. Joseph Abbey was extremely high. In just 2 weeks, over 300 bottles were sold. Because of the constant need to have honey on the shelves at the gift shop, I had to get busy getting our crystallized honey into it's liquid state FAST!
    On this weeks video I show show the exact process I go through changing crystallized honey into honey that can be dispensed into our bottles in a smooth, golden liquid state. I realize that the method I employ is not the standard, hobbyist procedure, but then again, having over 150 hives does tend to produce a bit more honey, and, creative ways of handling that much honey need to be developed. For my needs, a drum lift and a 30 gallon kitchen kettle were the solution to my dilemma.

I've been watching your video's for over three years now. They have helped me deal with depression and settling my mind.     I love that old building. I can’t wait to move my boxes in the corner you’re giving me. You won’t even notice them. They are just as airy as the building.
    Nice video on decrystallizing honey. I’m about to finish off the monk bread you gave me with some crystallized honey.

      Don't get me wrong, I'd be more than happy to give you a corner of the building to store your boxes, my biggest concern is that I don't want to bring anymore termite in the building, there's plenty enough of them already. Once you get that little problem straightened out, we can talk about it. I guess it's true what you said in your last video, you've still got everything anyones ever given you. If you still have some of that monk bread I gave you at the beginning of December, it's got to have more green on it than your Christmas tree. God's peace brother.

    "Sugared" honey is what we called it. My mamaw and papaw always had a big vegetable garden with several rows of sunflower for winter birds and a large fruit orchard. Fence rows were left for blackberries to propagate for harvest. Milkweed, thistle and goldenrod were left in the pasture fringes. One of their neighbors kept honeybees. Every year he'd "tithe" (that's what he said) 4-6 quarts of honey to them as a share of his honey harvest. There was always crystallized honey in the pantry at their house. Mamaw made wonderful big fluffy biscuit and I loved the "sugared" honey on her buttered biscuits. We churned the butter in 1/2 gallon mason jars while we visited in the front room where the potbelly stove was. 60+year memories. There may even be some in the cellar at my mother's today. I'm gonna see next time I go for a visit. Probably have to chisel it out by now. :-) Thanks for bringing this video.

      As a kid growing up on a farm in the early 60's 30 miles below New Orleans, I as very familiar with the bounty of nature, and the wonders of what was in the pantry. Unfortunately, we never had the pleasure of raw honey, but there was never a shortage of seafood or fresh fruits and vegetables. The good thing about going back and finding that honey, it still will be good even if you have to use a chisel to get at it. God's peace Gerard.

      You won't have to chisel it out, putting the jar in warm water will liquify the honey to any desired degree, depending on how long you leave it in.

    If anyone is interested, 17:05 is where he mentions the hydrogen peroxide forming as a result of the honey heating up. Videos like this make me really appreciate the ones that are succinct and to the point. I was originally interested in what hydrogen peroxide had to do with honey, but had to endure over 17 minutes of unrelated content (relative to me). I'm sure regular viewers liked the whole thing though.

      We're a family out here. Rarely any harsh criticisms, and always helping out and learning from one another.
      So many times I get "lost" in the bees. It's mesmerizing. Theraputic in alot of ways. Like staring into a campfire.

      I have to keep the windows open when I use the kettle to get fresh air in the building, and even though there are screes on the windows, bees still manage to get inside. If you noticed, I closed the lid of the kettle as I was taking the honey out so no bees wound up in there. Till next year, God's peace JP.

    I had Manuka honey gauze dressings on a large post operative scar, that had become infected. Repaired/treated my scar perfectly.

    That is what they use in honey patches for burns, rashes and other abrasions. It works like magic. Peroxide has been used for cleaning wounds since the Egyptians.

      @@JeffHorchoff It's not hydrogen peroxide you're eating Ed its just aerated honey. Try tasting H2O2 next time you get some from your pharmacy; it wont taste sweet.

      @@Brigidz Honey naturally produces hydrogen peroxide when honey is mixed with water and then heated. Imagine you are a bee and somehow water leaks into your hive and gets on the honey. That honey would spoil into a toxic sludge and the bees wouldn't be able to do anything with it. They would have to relocate their entire colony. If you are a bee and produce and enzyme to add to your honey so if your honey gets wet and then hot from the heat produced by the bees themselves the honey wont spoil you'll have a much better chance at survival.
      So to recap that is absolutely hydrogen peroxide being produced from the honey and you shouldn't talk about things you know nothing about.

    Always educational watching your videos. Interesting about the Hydrogen Peroxide. I have been fascinated with all things bees since I first started my studies. My brother maintains the hives. I'm still freaked about getting stung🙈😂but oh how I love these girls ( drones too, I guess;)

    Hi Jeff. I love hearing you say how cold it is at Christmas down there! Forty degrees! LOL Up here in North Dakota, 40F at Christmas is considered 'sun tanning' weather! We're blessed with piles of snow in the parking lots all the way into early May in some years... I feel your pain! LOL

      I am known to be quite the complainer when the temps drop below 60, so glad to hear you can feel my pain. By the way, I was told that folks up North, anything north of Interstate 10, have ice water running in their veins and that's why cold weather does not bother them. Is that really true?       @@JeffHorchoff Actually Jeff, cold doesn't seem to bother anyone up here... We all start complaining about the heat when it gets over 80F. One other thing....they switch out the after dinner mints in restaurants for Prozac in the winter! Clinical depression and binge drinking are a curse with this northern society, constant monochrome landscape of the American tundra 5+ months wears on peoples psyche. Strange place when people wear wool long-johns to bed at night! LOL Blessings to you Jeff

The struggle is finding peace, without the use of medication or alcohol, regardless of conditions. This challenge is where life is really lived.....or not.     I miss the hive maintenance videos. OMG stop saying kettle!!! You are making me want kettle corn! :P You should get you a nice sealed hickory or oak oar to stir that stuff up with instead of using a bare 2x2. The other thing you can do with crystqalized honey is run it through a juicer and separate the crystals from the liquid to make your own honey sugar and then eat or feed the liquid honey to the bees.

    Biochemist here! You did a fantastic job explaining the whole of glucose oxidase, Mr.Ed! The interesting thing is that the enzyme is inactive when the honey is very viscous. But when you warm it up or dilute it slightly with water to make it more flowing, that’s when the enzyme can really be freely flowing and is able to convert water to hydrogen peroxide (H2O2). Woo! :)

    That building need to be tore down, and rebuilt. Look at all the holes I couldn't even use it as a storage shed! I just feed it back to my BEES ; ) They love it, or cook with it. They claim honey NEVER SPOILS ! I never seen spoiled honey! Seen it water down to much, crystallized, and dirty with bug parts > but never spoiled ! Used honey on cuts too, make it heal FASTER! Happy New Years!

      My intent is not to make others envious, rather simply show what someone considering stepping up their operation should be considering. I have always been fascinated by industrial equipment, and derive a lot of enjoyment implementing and using it to do a job. I started my obsession with wood working equipment, and it has now moved over to bee keeping. I looked at my pollen feeder about an hour ago and there were several hundred bees feeding. We are only weeks away from the first blooms of Swamp Maple and willow. Like you, I can/t wait. God's peace Joe.

    I have watched the rooster go into his memory bank and when he comes out with it I know he’s telling the truth without even researching it yet. He doesn’t blurt something out he pulls it out and delivers it to in great detail. I know you love the rooster just like I do and you two do wonderful things I appreciate both of you very much.

    I've gave a few people some of my raw organic honey for mrsa also known as staphylococcus infection and in 2 days it helped more than 2 weeks of man made chemicals.
    Its really amazing what honey can do.

      @@JeffHorchoff that's awfully kind of you to say. They get hay bales windbreaks for the winter, and that seems to make all the difference, but I've certainly had winters when the bees don't survive, and I have to start over.
      It's disappointing when that happens, but start over I do.
      These made it through, but we had a comparatively mild winter, so I don't know that it means they're particularly hardy.

    I had a none healing leg wound and the Dr. used a wound care product called Metahoney bandage to draw the infection out to start the healing process. I swear by the Metahoney as wonderful product to use on bad wounds!Thank you Jeff.

    Well my friend I hope you had a very Merry Christmas and I hope the new year is a happy one and a prosperous one indeed. Excellent demonstration on un-crystallizing that crystallize honey. I've heard people all too often say they boiled their honey or put it in the microwave to un-crystallize it and I just shake my head. I un-crystallize mine in a similar fashion to the way you do yours as well. Thanks for sharing.

    WOW I'm always amazed at those little but mighty creatures. My honey that I buy from a local farm always has the foam on top as well. To me it taste stronger in flavor. I like it very much. Since I don't use processed sugar in my food I use honey.. It sweetens everything you would normally use granulated sugar for. You have to remember to use hot tea to dissolve the honey before making sweet tea for ice tea, because honey doesn't like cold. It will take an eternity or longer to dissolve. Then all you do is add it to your iced tea.
    Thank you for your Merry Christmas wish Jeff and New Year too. I wish you and Mom the same Happy New Year as well. I'll be watching to see what's new in the coming year. Hopefully more of you and Randy. Maybe J.P., Schawee, and Yappy? Surprise us.

It's profound that such a small creature carries the responsible of sustaining our species by the work it does.     Hi Jeff, maybe a honey pump would be a good invest for you to get it from the kettle into the bottler. It also has the ability to crush the crystals while pumping. And thank you for the peroxide info. Absolutely interesting and helpful.

      This must bee the first video you watched. What I have learned since making this video is hydrogen peroxide is in the chemical equation of honey, not the foam that appears on the surface, though it's in that as well since that is honey too.     Hello MR.Ed, I enjoy your bee videos, But, I also like watching you do woodworking . My Daughter started being a bee keeper, and she loves it.But we have had winters that can get to -30 below and she looses most of the bees. I have been helping her build beehive's and it is a lot of fun. But I am allergic to bee's so I stay far away from the beehives. haha.

    I hope you had a wonderful Christmas! We stayed fairly warm down here in central Florida. I think the coldest it’s been so far this winter is 1 day where the high was in the upper 50’s. But we had a warm holiday, much to my disappointment. It just doesn’t seem right to need AC on Christmas! Thank you for sharing how you decrystallize your honey. My hubby, who kept bees as a child, taught me how to decrystallize our bought honey years ago. I remember the first time I saw it hard as a rock. I thought it had “gone bad.” You can imagine the education I then received from my husband about honey, it’s properties, and how it doesn’t “go bad.” I also have learned the miracle of medical honey. I was diagnosed with Lupus at 16 (45 now), and since that age have been on a drug called prednisone. It has saved my life several times but the side effects can be harsh, and one includes thinning of skin. I now have skin that tears very easily. We use medi-honey all the time and it has become another lifesaver. It amazes me how these small creatures are now saving my life, my skin, every day. They are miraculous. I love watching videos that continue to educate me about them! Thank you! 🐝🐝🐝

There seem to be no limits on the benefits humans receive from the simple honey bee, which is one of the reasons I expend such efforts to rescue them. I really don't think when the monks started with the bees they had the notion of selling it in the gift shop, I think they wanted it primarily for their table. Well surprise, surprise, God has blessed the program, and it is flourishing. I can tell you this much, I'm happy to be doing my part, and grateful the bees are doing theirs. God's peace.

    Awesome video! thank you. You need a kayak paddle to stir the honey. And for bottling attach a hose to fill the bottles so then you won't need to fill a bucket and transfer. Thank you, Mr. Ed for your time, energy, and blessings. Someday I would love to visit the gift shop.

      I now have a stainless steel paddle I use to stir the honey in the kettle as well as a honey pump to move the honey from the kettle to the bottler. I'm always trying to improve and make my job easier. When you finally do get to make it to our Gift Shop, I'd happily include a tour of our honey operation as well.     As usual, a first class operation Jeff. I have pollen substitute out, but my bees are coming in with what I assume is pollen they are finding in the field. The substitute is untouched. I am in central Louisiana. This is my first year at this, so I have much to learn. Happy New Year.

      Hailing from north Purvis, MS. I been trying to beekeep since 2001. Seen some ups & downs w honey bees. I split 10 nucs into 44 nucs this yr. It's due to watching U-tube beekeeper s like U & DirtRooster628. Thanks for sharing.

      There is pollen out there right now, and if it's easily assessable, they prefer it over the substitute. I guess for me, it's just easier for my girls to get to the substitute than the real stuff. Keep on learning Joe. Happy New Year and God's peace brother.

    Hey Jeff, good to 'visit' with you again thru your great videos. I know that in the past, I have seen a paddle/stirring affair that is made for those commercial type pots/cookers/vessels. I'm sure you could find a used one at a good restaurant supply company. Those big dough mixers use a similar paddle attachment. Might be worth looking into.

      mark harris I thought the same thing! My grandparents had a dairy farm and the milk would go into a big tank until the diary came and got it. There was a huge paddle in the tank constantly stirring the milk so that the cream doesn’t separate from the milk.

      There were thousands of bees on the back porch of the honey house feeding on pollen and honey, a few fond their way inside the house. If you noticed, I had to close the lid on the kettle so no bees wound up in the honey. God's peace Dave.

      @@JeffHorchoff I love all bees...even yellow jackets, they can be as docile as honey bees. But they are regarded as aggressive. You just have to know how to treat them. Most bee keepers will disagree.
