Yes, the most traditional Pozole Rojo is undeniably PERFECT! But every so often especially during spring and summer; I like to make Pozole Verde for my family. This delicious soup is made with chicken and hominy in a delicious green poblano chile broth made from tomatillos, jalapeños, and cilantro. It’s light, comforting, and packed with chicken broth nutrients that are sure to put you and your loved ones in a healthy relaxing food coma. Ingredients
6 chicken breast
1 large can of Hominy
3 roasted poblano peppers
2 roasted jalapeños
8 Tomatillos
1 cup roasted pumpkin seeds
1 cup of baby spinach
6 radish leaves
1/2 bunch of cilantro
1 tbsp Mexican oregano
1 tsp black pepper
*epazote is a leafy aromatic herb and traditionally used in this recipe; if you have access to it use 6 leaves with stem
Optional- For added flavor I like to use 1 to 2 Anaheim peppers (or use 1 can Green Chile)
Serve by topping with thinly sliced iceberg lettuce, red radishes, cilantro, onions, lime juice, and tostadas with cream, and a lot of people love this soup with a little avocado on top!
Easy Chicken Broth base for soups
2 chicken legs with thighs
12 cups of water
1/2 large onion
6 garlic cloves
6 bay leaves
6 TBSP chicken bouillon
1 tbsp salt
Bring water to a boil and add all your ingredients. Boil for 15 mins and removed the impurities. Please your pot on a med to med-low heat and boil for the remaining 1 hr 15 mins. Removed the onion and garlic cloves and add to your blender. Remove bay leaves and toss.
I keep the legs cooking throughout the whole process as it will enhance the flavor of the broth
TIP‼️ This soup freezes well and makes for a great leftover or lunch.
You might see some green foam at the top of your pozole, Not to worry once you reach the right heat temperature around the 20-minute mark you will see everything thin and smooth.
Pozole should take 25 to 30 mins or until your hominy is tender and soft

This looks so good. Amazing really. Speaking of pumpkin seeds ( pepitas), I made your avocado toast with apple and topped with the pepitas. It was amazing and my hubby loved it. I’ve had it for breakfast for about 5 days in a row. I sprinkle just a tiny bit of salt directly on the Granny Smith apple 🍏 and boom done. Glorious. I imagined that dress as Japanese (but maybe it has Mexican roots that IDK about?), and right away I started thinking she was going to make Japanese/Mexican fusion. I don't know if that's even a thing, but that's why I get inspired from these vids. Imagine chicken katsu with jalapeno and pickled onions. What if you made a flash fried dumpling stuffed with civiche? I could do this all day. Dry some poblanos and blend them with dry seaweed, let it dry and wrap it around shrimp and cilantro. Hit is with a chili flake crema. I'm gonna make all of that.

I really enjoy your videos, love your recipes, but do have a question for you. I love yellow posole and yellow hominy. I'm not as fond of the canned white hominy and would prefer to cook the dried yellow posole whenever I have the opportunity to do so. So on that note, do you have any idea of how to interpret the measurement between the canned hominy and the dry posole? I'd appreciate any help you can provide. Thank you.

How do you “roast” the peppers for prep?
Hi, I roast them over a rack until the skin is completely roasted. I remove the Chiles and allow them to sweat in a closed container. After a few minutes, I remove the peel, seeds and steams. Wipe down any excess charred skin 🫶🏽
Are the pumpkin seeds optional?

Excuse me, but what are you cooking with??? Is that a glazed terracotta crock, or an enameled cast iron pot? It sounded different when you put the lid on so caught my attention, like is that just a clay crock, on gas? Idk why, it didn't occur to me that glazed crock pots could go on fire.
I cook with stainless steel or cast iron but just recently got a few cast iron enameled pieces and don't know their limits and such, but I love cooking outside over wood fire and coals when it's not winter, but I'm afraid to ruin the enamel, for that matter, I was afraid to put it on the propane cook stove because I thought the enamelwouldcrack.
