5 pounds of Pork butt
5 Pounds of pork shoulder
5 pounds of pork feet
18 guajillo chiles
15 bay leaves
2 garlic bulbs
2 onions or 1 large
1 Tbsp salt
5 Tbsp chicken bouillon
1 1/2 Tbsp Mexican oregano
Large can of hominy
Salsa pozolera
5 chiles puya or 8 chiles de árbol
6 to 8 garlic cloves
3/4 cup of broth
1 Tbsp salt
Table cream for tostadas
1 cup of heavy whipping cream or table cream
Salt and pepper to taste
Tostadas
Toppings- chopped cabbage or lettuce, white onion, cilantro, lime, salsa pooler

If you’re using Dixie bowl, yes! Add and extra 5 pounds of pork butt and use two cans of hominy. Adjust your water. I’d add 4 more cups of water and 1 to 2 more tablespoons of chicken bouillon. Happy cooking 🥳 Steph ❤️

When I was in my 20s I lived in an apartment in South Houston near a taqueria that was open till 3. I used to eat the pazole and Birria (goat) every weekend. I just made Birria for quesabirrias (carne) tonight, and this is my next project. Pazole is one of my favorite foods in the world. Being able to have it during the week will be awesome. You talked about different brands of hominy and I’ve learned I prefer Bushs brand. Seems to cook up the softest. I’ve never seen the crema on the tostada before. I’ll have to try that. I use waaaay more cilantro than that. Thank you. Subscribed!

Of course we have all used canned hominy and your posole looks delicious!! I will use canned hominy when I can’t get hominy like my Gramita used to use, canned is faster/ easier for some but something about cooking the meat together with the hominy like my Gramita used to…the posole turns into pure magic and gives the broth a beautiful consistency and taste like no other. Huge difference!!!
I consider myself blessed to have been raised in the best of the three beautiful worlds: New Mexican cooking, Texas ( San Antonio) and Mexican, there are so many variations and flavors and best lessons and memories EVER, I’m utterly grateful! 🥹🫶🏽
