When I was in my 20s I lived in an apartment in South Houston near a taqueria that was open till 3. I used to eat the pazole and Birria (goat) every weekend. I just made Birria for quesabirrias (carne) tonight, and this is my next project. Pazole is one of my favorite foods in the world. Being able to have it during the week will be awesome. You talked about different brands of hominy and I’ve learned I prefer Bushs brand. Seems to cook up the softest. I’ve never seen the crema on the tostada before. I’ll have to try that. I made it! It was amazing! My Hispanic coworker took some home and shared with her family. Her mother wants my recipe and swears I'm half Mexican lol. I did make it comfortable for my home & removed the bones before adding my chili sauce & added more bay leaves and a few extra seasonings. I always crave this every time it gets cold. Now I can make it myself and was able to freeze several portions. Honestly this recipe is better than any I've ever had. I love it! I binge watched your show after finding this video. I also made cafe de olla & shared it with my friend and she liked mine better than her family's. I added star anise and an extra cinnamon stick. You guys are amazing and have inspired me to make all kinds of stuff. I'm also now growing chili de guahillo with my arbol, bell & ghost peppers. I would like to know how you use fresh peppers rather than dried if possible.
I just want to say that I followed this recipe 100% and it is way better than any restaurant grade pozole. It is not mass produced and it is clean as long as you use her advice on impurities. Bravo my family is in love 🔥🔥🔥🔥🔥

Made this soup today because it’s -30 out and a fresh dump of snow. This soup is 11/10. I used a whole 5kg Turkey that I cut up browned first, then simmered. I made the salsa garnish with de arbol and I can’t recommend this enough! This is a MUST with the soup! Thanks for the recipe it’s a keeper

I am non-Hispanic and live in a Southwestern state, trying to learn as much as I can about Mexican cooking. ALL the stores around here have these ingredients. I'm quite excited to try this!
So I work offshore and I wanted to make Pozole in a more traditional way, I watched your video several times and typed up your ingredients and the instructions you gave on the video. I work with several Hispanic co-workers and I got a say........the guys said it was better than what they get at home! Alot of the guys liked the way my broth was a little on the thicker side due to the hominy I blended with the chilies. Thank you for your videos, I'm going to do your Chile Verde next.
Of course we have all used canned hominy and your posole looks delicious!! I will use canned hominy when I can’t get hominy like my Gramita used to use, canned is faster/ easier for some but something about cooking the meat together with the hominy like my Gramita used to…the posole turns into pure magic and gives the broth a beautiful consistency and taste like no other. Huge difference!!! I consider myself blessed to have been raised in the best of the three beautiful worlds: New Mexican cooking, Texas ( San Antonio) and Mexican, there are so many variations and flavors and best lessons and memories EVER, I’m utterly grateful! 🥹🫶🏽

I have cooked posole for years and years. Stayed with a recipe from old timer in Albu. Your technique takes posole to the next level. Same ingredients but such a better way to cook. Thank you. I have tried searing the pork in skillet as well. Adds a twist to the flavor.
I love how you say make it comfortable for your home. I adapted your recipe with chicken and beef and using what I had on hand. Next time I will try following your ingredients and method more closely.
