I lived for 3 years in Vietnam and had a banh mi for breakfast almost every morning. For breakfast nothing beats a basic bánh mì thịt nguội with pate and cold cuts and if you want something more filling as a snack, the best choice is bánh mì heo quay.
Thank you for your amazing work. You’re doing a great job at explaining and describing the items you are eating, making them less intimidating for foreigners but without ever exoticizing or leaning into the sensational or the shocking. Thanks Chad, you are helping Việt Nam’s food culture and tradition reach a broader and more global audience. Cảm ơn anh rất nhiều ( coming from a French-Viet mixed )
Wish I had seen this two weeks ago when I was there. 2nd trip to hcmc in 5 months and so many foods I don’t even know what to try. My fiancé who is local does a great job taking me to different places to try new foods but I will need to show her this video so we can find some of these places next trip. Back in the States until October and missing Vietnam. Thanks for your videos.
Up North, specifically Lạng Sơn (idk about others, i asked my friends who are from different regions and they said they don't have this dish). It's called Bánh mì nướng, basically, it's bánh mì grilled over charcoal and brushed with lard and oyster sauce. You can have it like other types of bánh mỳ with grilled meats, pate, sausage, vegetables..... Fillings Or you can cut up everything bite size and have it platter style with dipping sauces. Popular student breakfast or late night snack. Looking forward for other parts.
There are even some bread vendor that put a copius amount of filling inside the bread. One of the vendor i know is Huynh Hoa in Saigon. I would say it is something you should try it once or from time to time
Banh mi and condensed milk is so good! And honestly yeah banh mi doesn't always have to have pate. Its all about balance of flavors. For myself there are certain banh mi I would not want pate in because it would be too overwhelming and too much!
I will add some recommendations for your next banhmi tier video: - omelette banhmi - roasted duck banhmi - Vietnamese style meatball banhmi - roasted pork banhmi I hope you like them!
What a great series to start because I love banh mi, and I respect your opinions on Vietnamese food because of your background. I’m visiting Vietnam in a couple of months and can’t wait to try the real authentic banh mi over there. Over here in the US, there’s a lot in D tier and if you’re lucky you find one in a C tier.
Lived in Vietnam for five years and moved back to California in Dec '22. My wife and I are visiting her family this summer and my mind is already going crazy thinking about getting my favorite banh mi: 2 eggs, pate, pickles, mayo, chilis, salt, pepper, and soy sauce.
I just watched two of your clips, and they were really, really good, especially the way you edited them. You've got a new subscriber from me. Keep it up!
I am obsessed with shredded chicken banh mi!!!! I ate it for the whole 4 years when I was in college. The most delicious shredded chicken banh mi, in my opinion, is from a really small vendor cart next to Van Lang University, on Nguyen Khac Nhu Street in District 1. The chicken was stir-fried with onion and seasoned very well to my taste. I normally only take banh mi + pate + shredded chicken and fresh chili, with no cilantro or cucumber added. I don't know why, but the more I grow, the less cilantro, cucumber, or pickles I want to add to my banh mi. I just want to taste the original flavors of the banh mi. 🤗
Hm, Interesting video. I like how you actually rating Banh Mi and Condense milk higher than my favorite one😅. I had to admit, this is a great video. People like you should get more attention from the internet. I'm looking forward to part 2👀
Great video! There're so many bánh mì types that even as a Vietnamese I haven't yet tried. Bánh mì phá lấu, bánh mì bơ bò nướng Campuchia (tried them in Cambodia and it's damn good), bánh mì nướng muối ớt, bánh mì nem khoai, etc.
I highly recommend the "Bánh Mì Xíu Mại" - banh mi and meatball with two ways to eat it, the dipping style or the traditional style, either is delicious and easy to find. Another recommendation is banh mi with dim sum inside - sounds kinda heavy but it has its own charm, this may be hard to find, and only a handful of places selling it. And since you enjoy grilled pork that much I think you will enjoy banh mi heo quay - roasted pork too
My favorite savory banh mi is with pork crackling and the typical filling cucumber, pate, pickled vegetables etc. But for sweet, I dont know if this is considered sweet, but I grew up eating banh mi with laughing cow cheese spread inside with nothing else.
I did side-eye you for the bo kho as you probably could have done a series for savory banh mi that is dipped (but then you'd have to do the same for the sweet ones that are dipped), but it makes sense to show the variety of how banh mis are eaten there. I thought when you did the pate one, you'd do the banh mi cay/que like made famous in Hai Phong. Definitely do a 12 part series showing all the banh mi as there's the egg one, the fried fish with dish (patties vs noodle shape, but maybe that's the same just in different form?), cold cuts, char sieu, roasted pork belly, lemongrass beef/chicken/pork. I love that last one you tried because it's so different. My dad made a version of char sieu pork belly that he douses in a caramelized onion and ketchup sauce and pickled carrots that is AMAZING! I wonder if that sauce she used is similar to my dad's ketchup sauce (I'm sure he was improvising when he made the sauce as ketchup isn't something Viets use).
I vividly remember the first time I ate a banh mi in Vietnam. I was in Phuc Quoc, it was morning. I went downstairs from my hotel room and went across the street to a little shop that had a glass display case of banh mi. It was a very unassuming shack with bare minimum setup. I didn't think much of it, had zero expectation of the food being good. I ordered your usual run of the mill typical banh mi with whatever meat they had. As a Vietnamese growing up in NYC, I've ate my fair share of banh mi thit. Between store bought and home made, I'm not stranger to the sandwich. But that banh mi from that unassuming glass display case..... HOLY SHYT IT WAS SO FUKN GOOD! I couldn't believe what I was eating. How can a banh mi from a small shack (with the same typical ingredients that I would get back in the states) taste this far superior to any banh mi I have eaten in the past? My mind was blown. It couldn't comprehend wtf was going on with my taste buds. Then I realized one of the major factor that sets Banh mi from Vietnam apart for the banh mi in the states, it was the bread. If you never had a banh mi in Vietnam before, you need to. One of the things that one needs to eat before one dies. Flash forward two year later (oh you thought I was done telling my story) I came back to Vietnam with a college friend. We were in my hometown (Soc Trang). We left the one park in the center of the town (it's the one with the big pond in the middle with koi fish) and there was a banh mi stand. I decided to get 2 banh mi. My friend asked why because we just finished eating not too long ago. I told him to shut up and listen to me. We're going to get them for when we're back at the hotel. When we got back to the hotel, I went to take a shower. While I was showering I heard a scream from my friend. "HOLY SHYT THIS BANH MI IS MAD GOOD!". He then proceeded to snapchat everyone he knows back in the states about it. Safe to say banh mi are good.
My go to are the Banh Mi Heo Quay (Crispy pork belly) or depending on the vendor, the Banh Mi Dac Biet (Special Combo, usually various cold cuts). Can't wait to see where he'd rate these.
I was surprised that I didn't know half of the Banh Mi style in this tier list although I'm a Vietnamese. You should try Haiphong Breadstick, or Banh Mi Que, it's a small breadstick filled with Haiphong Liver Paste or Pate Cot Den (which has softer texture and melts on your mouth). The key point of Banh Mi Que is Chi Truong, which is a really spicy chilly sauce usually stored in a small package (the one that hold canabis :)))). You should dip just the tip of the Banh Mi Que at first to get use to the spiciness of Chi Truong, then you can deeply dip it to enjoy.
Banh mi sua dac is the best. My kids and I also have it with sliced banana and the sua dac drizzled over the banana and eaten like a regular sandwich. A tier right there. I totally agree with you including the bo kho dipping banh mi. Bit tet in the north always includes banh mi for dipping and the meal wpuld be incomplete without it.
in the early 90s we would eat banh mi dip with condense milk for breakfast and for dinner it was banh mi dipped with soy sauce , I never thought about it much growing up but I learned now that my parents tried their best , and im forever grateful
Chả cá means fish cake, Chad. I have tried some fish cakes that they sale at Asian markets in the US. The fish cakes in the US didn’t have much fish flavor like the fish cakes in Vietnam. I like food commented by chefs like the way you do. I like your contents very much.
Please visit Hanoi and try the classic Banh Mi Pate Trung Cha Ruoc. It is filled with hot pate, chicken egg fry, grilled fork, salted shredded meat (ruoc), butter, herbs, and pickles. The baguette is warm, crispy outside soft in the middle, not too hard, and easier to bite. For me, I like the richness in flavors more, and the combination also feels more rich, full and balanced.
That was actually the banh mi I thought he was going to get when he mentioned banh mi with pate. The Hai Phong version is famous and addicting from what I've seen from vloggers eating it.

Banh mi cha ca is so underrated, arguably one of the best.
thats for sure
I live in Nha Trang , and we use fish sauce , not chili sauce or mayonnaise. That's so bad for me ngl

Nowhere else have this not even in HaNoi
