Ingredients:
Cake
-1 cup flour, cake flour or all purpose flour
-1 teaspoon baking powder
-1/4 teaspoon salt
-5 eggs, separated
-1 cup sugar
-1 teaspoon vanilla
-1/3 cup milk
Milk mixture
-1 can evaporated milk
-1 can sweetened condensed milk
-3/4 cup whole milk (can be replaced by 1/4 cup heavy cream)
Topping
-Whipped cream
Directions:
-Preheat oven to 350F or 180C.
-Grease a large 9”x13” baking dish.
-Combine flour, baking powder, and salt and set aside.
-Separate the eggs, and beat the egg yolks with the sugar until pale and fluffy.
-Then add the vanilla and the 1/3 cup of milk, and mix.
-To this, add the flour mixture, and mix by hand using a whisk. Do not over mix.
-In a separate bowl, beat the egg white until you get stiff peaks.
-Add them to the batter, by folding gently using a spatula.
-Pour into greased baking dish, and bake until toothpick comes out clean. (around 45 minutes).
-Let cool completely in the pan. Do not remove it.
-In a separate bowl or large measuring cup, mix together the three milks.
-When the cake is completely cooled, poke some holes in it using a fork or toothpick.
-Pour the milk mixture over the cake evenly and allow it to soak up the liquid for at least 20 minutes.
-Cover it with at least 2 cups pf whipped cream.
-Pop in the fridge until ready to eat.
-Optional: Decorate with berries or maraschino cherries, drizzle caramel, or sprinkle with cocoa powder.
