Perfect Vanilla Cupcakes

  • These cupcakes are just perfect, moist, spongy, fluffy and most importantly very delicious. Topped with the vanilla buttercream, they make the perfect treat.

    Ingredients to make the Vanilla Cupcakes: (make 12 cupcakes)
    • ½ cup (1 stick or 100 grams) unsalted butter, soft at room temperature
    • ¾ cup sugar
    • 1 ½ cups all purpose flour
    • 1 ½ teaspoons baking powder
    • ¼ teaspoon salt
    • 2 eggs
    • ¼ cup milk
    • 1 teaspoon vanilla extract
    Ingredients to make the Buttercream Frosting:
    • 2 cups powdered sugar
    • ½ cup butter (1 stick, or 100 gr.) soft at room temperature
    • 1 teaspoon vanilla extract
    • Apx 2 tablespoons of milk (more or less)
    Directions to make the cupcakes:
    - Preheat oven to 180 C or 350 F and line 12 cupcake tins with paper liners
    - In a medium bowl, mix the flour, baking powder, and salt. Set aside
    - Using a hand mixer or a standing mixer with the paddle attachment, cream the butter for one minute, and add the sugar. Mix for 3-4 minutes until light and fluffy
    - Add the eggs one at a time until well incorporated, and the vanilla extract
    - Add half the flour mixture, and mix just until incorporated. Do not over mix
    - Add the milk and mix for a few seconds
    - Add the rest of the flour mixture, just until incorporated
    - Fill the cupcake liner 2/3 full of the batter, and bake for aprx 15-20 minutes, or until toothpick inserted in the center comes out clean
    - Cool completely before frosting
    Directions to make the Buttercream Frosting:
    - Using a hand mixer or a stand mixer, cream the butter
    - Add the sugar in several batches
    - Add the vanilla
    - Add the milk in small amounts until you get the correct consistency
    - Place in a piping bag and pipe it over the cupcakes
    - Any enjoy!

    I tried this recipe today (first time baking from scratch) and the cupcakes turned out fine, but lost a little flavor after baking 😔. do you know how I could fix this problem?

      +Natika Birdsong Hi Natika, i'm sorry to hear that :( i'm not quite surewhat you mean by they lost flavor? do they lack sweetness? or are they dry?
      if they are too dry it might be that you over baked them. try adding a little more sugar or vanilla extract.
      also, usually vanilla cupcakes are really just little sponge cakes, so it is the buttercream icing that will give them most of the flavour. did you make the icing too?

      Ohhhhh... i didn't know that lol. At first I didn't, but i have been working on my buttercream and pairing it with my cupcakes.
