How to make Boston Cream Doughnuts at home

    Boston Cream Doughnuts (makes aprx. 20 doughnuts)
    Doughnuts:
    Ingredients:
    • 1 ½ cups warm milk
    • ½ cup sugar
    • 1 tablespoon active dry yeast
    • 5 cups all-purpose flour (or a bit more)
    • 1 teaspoon salt
    • ½ cup (1 stick or 100 gr) melted butter
    • 2 eggs, at room temperature
    Directions to make the doughnuts:
    - Mix the flour with the salt and set aside
    - Activate the yeast by mixing the yeast, warm milk, and sugar in a medium bowl. Mix well, and let stand at room temperature for 10 minutes, until the yeast foams up and become frothy
    - In a large bowl, beat the eggs with the melted butter
    - Add the yeast/milk mixture and continue whisking
    - Gradually add the flour mixture and mix thoroughly with a wooden spoon
    - When the dough begins to form, knead it for a few minutes until it becomes smooth and you can form a ball. Add flour if necessary if it is too sticky
    - Place it in a greased bowl, and cover with plastic wrap
    - Set it aside for 2 hours in a warm place, until it doubles in size
    - When it’s ready, place it on a floured surface and knead a few times
    - Using a rolling pin, flatten the dough into a 1-cm think rectangle
    - Form circles using a cookie cutter, and place them on a large flat floured tray (keep a space between each circle)
    - Cover loosely with a plastic wrap, and allow the dough circles to rest for another hour, until they rise and puff up
    - Fry the doughnut circle in vegetable oil. Oil should be at least 1-inch deep and at a temperature of 180 C (360 F)
    - Fry for one minute on each side
    - Place on paper towels until ready to fill them
    Directions to fill and glaze the doughnuts:
    - When the doughnuts are completely cooled, insert a small butter knife and make a pocket inside the doughnut, without cutting through the edges
    - Place the custard filling inside a piping bag with a medium round tip
    - Place the tip in the doughnut hole, and gently press on the piping bag until the doughnut is filled with custard
    - To glaze the doughnut, hold it between your fingers and dip the top in the chocolate mixture
    Custard filling:
    Ingredients:
    • 2 cups milk
    • ½ cup sugar
    • ¼ cup corn starch
    • 4 egg yolks
    • 2 teaspoon vanilla
    Directions:
    - In medium sauce pan, whisk the sugar, corn starch, egg yolks until a smooth paste is formed
    - Place of medium heat, and slowly add the milk while whisking at the same time
    - Cook until it comes to a boil and thickens, whisking the whole time
    - When it come to a boil, add the vanilla and keep whisking for 30 seconds
    - Remove from heat and transfer into a bowl
    - Cover the custard with plastic wrap. Plastic wrap should be placed directly on the custard surface to avoid skin formation
    - Place in the fridge if not using immediately
    Chocolate glaze:
    Ingredients:
    • 250 grams semi-sweet chocolate
    • ½ cup heavy cream (35%)
    • 2 tablespoons butter (¼ stick or 25 grams)
    Directions:
    - In medium sauce pan, place the 3 ingredients over low-medium heat
    - Gently stir until the chocolate melts and become a smooth mixture (do not overcook)
    - Remove from heat

    Can I make it with out piping tip???

      Yes. You can use a s sandwich bag, ziplock etc. jut cut the tip off and fill the doughnuts. You can use a wooden skewer to make the hole and space inside and that should make it easier to use a bag without a piping tip on it. I’ve find that many times in a pinch.
