Nini, thank you so much for this recipe. I think it’s the best lentil loaf anywhere with your modifications :-). I made this for my Thanksgiving dinner last year. We truly loved it, and there was only a slice or two left after the meal. This year, i’m going to make two of them. One for Thanksgiving dinner, and one for delicious cold meatloaf sammiches! Another truly delicious, practical family recipe from Nini. I think you’re my favorite vegan cook. Hope you and your family have a great Thanksgiving!

I just made this for dinner and it was really tasty. Thanks so much for sharing. My loaf was still moist. Perhaps I needed to partially cook my lentils so they weren't as moist or maybe next time I put it in the fridge to dry out or more oats, lol. The top was firm but cutting into it the walls were moist.

Well done! I can't have fat so this was a real treat for me! I didn't have flax seeds so I just used whole food bread crumbs for lack of a better substitute at the time. Also didn't have soy so I mixed a little ketchup in instead. I can see with this recipe how you can alter it easily as long as you keep the consistency. I made 2 small loafs and froze one. I can also see using lentil loaf in other meals and recipes as well. I might try some lasagna rolled wraps with this and add some other items in it.
