I thought I’d bid August farewell by finally getting back into the kitchen and creating this fantastic lemon blueberry cake! Lemons + blueberries make me so happy 😊 and this cake does not disappoint! I made a second one to put in the freezer for days when we want something sweet but didn’t feel like baking. Well, that cake never made it to the freezer! We nailed it…again! 🤦🏾♀️
You’ll understand once you make and taste this lemon blueberry cake! It’s like eating a moist & fluffy lemon-flavored blueberry muffin and that cream cheese frosting takes the cake!

I just want to throw this out there: lemon, blueberry, and white chocolate. It’s a heavenly combination. I made a lemon, blueberry blondies and melted some white chocolate and put that in the batter. It was amazing.

Sounds delicious! What all did you do different?
@@kS-yw6sg blondies, like brownies, dense and fudgy, but vanilla instead of chocolate. So instead of using melted dark or milk chocolate in the brownie batter I used melted white chocolate. No cocoa power either. Add in lemon juice, lemon zest and blueberries and bake like brownies. Amazing! You could also add in some white chocolate chips to add some delicious texture. If you want to take it up another notch, melt some white chocolate and mix with cream cheese, then add in a little bit of lemon juice and/or lemon zest and powered sugar to make a lemon white chocolate cream cheese frosting.

@@kS-yw6sg if you want to take it another step further, add some mashed bananas to the batter, then you’ll have lemon, blueberry, banana, white chocolate blondies. Probably the best dessert ever lol

It's 12:30am and I just finished making this cake. It was delicious. What a fantastic recipe! I tweaked it slightly by doing 1/2 cup of brown butter in my batter.
What is brown butter? Did you not use the butter shortening?

This was one of the best cakes me and my family have ever had! We make a dessert every Friday for the Sabbath and this was a stand out! My four children ranging from 3 to 9 raveddddd about this cake and wanted me to keep it in rotation. The icing is silky, all the flavors balance wonderfully. Not over sweet but oh so satisfying what a beauty ❤ will be purchasing a cook book!

You may want to find a substitute for the shortening due to the effects of the ingredient that's abbreviated as TBHQ. It's a preservative that has immune-destroying properties. Thank you again for the recipe.
