After watching your countless videos about Hot Pot, I finally got to try some today (for my birthday). Turned out it was all you can eat which was awesome (was expecting à la carte!) It was so fun, and so yummy. It was a long, slow lunch but something so soothing about watching the bubbling broth, that you don't notice how long you're sitting there. Also, the nice server lady suggested cooking a batch of stuff, then turning off the burner while you eat, then turning it back on when you're ready to cook more. "It's safer that way". Hahaha - I think she could tell we were amateurs! My husband did have a "Mikey Moment" when he took a bite, sat back a little, and his eyes kinda closed as he made an "ahhh" kinda noise. I guess that's Hot Pot for you! Thanks!

Those "little yoghurts" aren't just yoghurts, they are the probiotic drink, Yakult. The reason the bottles are so small is that you're not really supposed to have more than one a day, in order to keep your digestion in check. It's not a lassi or regular yoghurt drink.
ZOD4 we have the exact same probiotic yoghurt drink here in NZ and they are used after a meal to help you digest the food.

#3 is probably my all time favorite hotpot place way before 99 flavor taste opened. Mike's not kidding about the spicy broth. I usually have medium spicy and I only put my meat in (never vegetables because the leaves will soak up too much of the hot oil). After 10 minutes of eating, my lips would be burning and I usually can't feel my tongue because it's "jumping" in my mouth. That's how spicy it is.......

Myself, I am not sure what authentic chive sauce is supposed to taste like, but the hot pot resto near me has chive sauce and it is so salty. Even mixed with sesame sauce in 3 to 1 ratio, the chive sauce still over powers the sesame sauce. I just came from that hot pot resto today..was trying out Mikey's sauce combinations. Tried the traditional sauce and his contemporary sauce ( 2 parts shacha/satay,, 1 minced garlic, 1 sesame sauce, 1 sesame oil, 1 soy sauce, 1 chinese black vinegar,. I skipped on the hot oil and added 1 more sesame sauce. My mistake, the sesame sauce almost covered the rest. Tho that contemporary sauce my wife and I enjoyed over the traditional sauce. Might try 1 tsp of sugar the next time I mix up the contemporary sauce.
I had hotpot after watching your channel on the Gold Coast. There was three of us and it ended up costing us 130 Australian dollars. When I go to New York, forget Time Square. I am going to those 'all you can eat' hot pot restaurants.

I agree with you on seasoning. I personally prefer relatively heavy handed seasoning, and application of herbs and garlic. Which is difficult for me as a professional cook, where your aim is for even handed seasoning that will be appreciated by all customers.
