I just made these. I didn't have gelatin so I put in 1/4 tsp of Xanthan Gum in it's place (only because I read someone else did this.) These are better than any pancake I have ever had. I loved these so much. Everyone in my house ate these and everyone loved them. We are not carnivore, keto, or any other specialized diet. I just had a tub of pork rinds from Costco that I was trying to finish up. OMG, these are just so yummy. We only used butter on them because we didn't have syrup. I cannot recommend this recipe enough. In fact, I'm going to finish this post and go eat another pancake. : )
Instead of syrup, I used cream cheese squished up with a little heavy whipping cream, vanilla, cinnamon and stevia. Felt like I was at a gourmet restaurant. 😋

These are absolutely fantastic! Not only would I never have thought to put pork rinds in a pancake, the gelatin gives it such a thick and fluffy consistency that I'd never had before in a keto pancake. Thanks so much for this recipe!

Have you heard of "Chaffle"? (Cheese waffle) This recipe makes 2 chaffles, using the Dash 4" mini waffle maker. 1 egg, 1/2 cup shredded cheddar or mozzarella cheese. If you'd like a more bread like texture add 1 or 2 Tbsp almond flour. With a spoon beat mixture in a bowl until mixed. Spoon mixture onto preheated mini waffle maker. Cook for 4 minutes. A little butter some sugar free syrup tastes like your eating a regular waffle. Chaffles can also be used in place of bread for sandwiches or as hamburger buns.

I know I'm late to the video but I'm going to try this with "chicken flour" instead of pork grinds. I've used pork for a lot of breading but the flavor is sometimes overwhelming. Chicken is more neutral i think

Glad I tried them! I used no sweetener (doing Carnivore) and I used Knox gelatin(but will order the beef gelatin for future recipes). They turned out perfect and were great with only butter on them. I'm a huge fan, your ACV video got me off a 15 year Nexium prescription last January. Will always be grateful!
You have no idea how happy you just made me! Not that I’m carnivore per say, but I don’t do a whole lot with the nut flours if I can get away with it because even though they have a lot less carbs that regular flour they still have more carbs than I like. So going from 4-6 carbs for a pancake down to 1 is amazing!! Thank you.
My old recipe included almond flour and cream cheese and while they're good keto pancakes they were always so heavy and dense by comparison. This recipe is a real game changer for low carb breakfast. Tomorrow I'm going to play with my dash mini to see how this batter plays as a waffle batter too!
This recipe is wonderful! I will be using this recipe for pancakes and waffles from now on. I will probably leave out the cinnamon and the sweetener with some of them and make waffles to use with sandwiches too. Thank you for a wonderful recipe.
I found the same recipe a few years back on a low carb forum, but it was called “you won’t believe it’s not french toast” and if I remember correctly, some folks added a bit of eggnog extract to the batter. The people on that forum came up with the best recipes! Thanks for bringing this one back to my attention! 🙂
I have been making these for Several years, lost my recipe and remembered where I first found it. Thank you serious keto and all the folks helping us with keto carnivore. I also had tru lemon packet and lemon oil and I make waffles out of this batter in my mini dash, sometimes I get 5 sometimes 6. Thank you again for all you do.

I cannot believe I just sat here and ate pancakes made of pork rinds...and I liked them! I stumbled across this video while looking for a different pancake video I've used before and thought "why not? I'll try it." The texture is the best keto pancake texture I've tried and I've tried it all. Now...there definitely is still a little pork rind taste but I told myself it's no different than eating bacon and pancakes together. It's totally worth it to give this recipe a try. It's surprisingly good. Thanks for sharing!
Someone posted on my site that if you had 1/2 tsp of sweet dough emulsion, it covers that little bit of pork rind flavor. But since I'm usually eating pancakes with sausage, I'm used to a slightly porky flavor with my pancakes. Here's a link to the emulsion: amzn.to/3t2109M

I made these for the first time this morning. I wasn’t expecting much, but was I wrong! Such a great flavor and texture! I made regular pancakes for my husband, but gave him a taste of mine. FINALLY someone understands what keto is supposed to be about. Way too many of these 'keto' recipes have like 30 grams of carbs and 950 calories in them to eat an actual normal serving size, which all totally flies in the face of what keto is supposed to be about. 10 grams of carbs for a stack of 10 decently sized pancakes is excellent, especially with that sugar free/carb free maple syrup that other guy makes.
I thought the same thing!!! And on occasions he does have a questionable ingredient he says so up front and says it's more of a lazy keto or something like that.
@@Nicksonian Because it tastes good, personally if you're trying to eat healthy. You shouldn't be making pancakes at all. When I do the low carb thing, I try to stay away from anything that even resembles sweets. To me you're just tempting yourself, and in some ways torturing yourself. However once I get down to my desired weight, I might do something like this rather than go by a bunch of donuts.

About 25% of my viewers are from outside of the U.S., so mostly I do it as a courtesy to them. But I agree, it is a far more accurate method of cooking (and less clean-up of measuring cups).
I was looking for no nut flour pancake recipes and tried the egg and cream cheese recipe yesterday. I will try this one today. Yesterday’s we’re definitely not fluffy and I feel like that’s what was missing. Fingers crossed!!! Steve, I saw these the other day but couldn't make em because it was my fast day but I made them this morning and just WOW. My roommate had them with me, she's not keto but she just couldn't stop marveling at how much like normal pancakes they are. Thank you for sharing these, I have a new favorite keto friendly pancake recipe. I couldn't get over how light and fluffy and moist they were! I could not taste the pork at all, I have a really sensitive pallet. My only recommendation for anyone making these, please do as Steve suggests and cook them on a griddle all at once. We were using a small pan to cook them one at a time and by the time the last pancake was made it was very challenging to create an evenly shaped pancake because the batter got so thick. This is my new go to!
I just started a carnivore diet yesterday. I lost 3 lbs overnight. I had been low carb and was stalled so I think the carnivore thing is helping. These look delicious. Who would have thought! Great job!

@@Jenmusic71 I made these last night without the sweetener and cinnamon. They were delicious! I had them with steak and it made me feel like I was having yorkshire pudding with the steak. With the gelatin in the mix, you have to be ready to cook them right away. My batter got really thick so I added more HWC but next time I might add some water if that happens. This is something I will be making often!

I have done strict keto and Carnivore on and off for a few years. I have experimented with so many recipes for pancakes and never quite got that true pancake texture. These are fantastic! Made a second batch tonight and my family gobbled them up! They don’t even need Sf syrup! They are satisfying just slathered in butter! This will be my go-to keto-vore pancake recipe from now on! Thanks so much for perfecting it and sharing!
We make this recipe in a waffle iron without the sweetener, vanilla, and cinnamon for bread, and with vanilla and cinnamon for waffles (or paffles as we call them). My husband and mom love them. They also refrigerate and freeze with no taste or texture loss.
I had decided a low carb pancake that actually tasted good wasn’t possible because I love pancakes and tried about every recipe I could find. They tasted awful! Not these! Wow! Finally I’m impressed!! 😍😍 good job Steve! For the record, I used Knox gelatin because I had some and it worked fine, in case someone doesn’t have access to beef gelatin.

I just made these yesterday, and I am ABSOLUTELY stunned. I thought the pork Rinds were going to over-power the taste (like with Paffles). But man, I am very surprised. I could not find beef gelatin but used unflavored gelatin instead. Came out great. For the 1st time I had eggs and pancakes while still being low carb !!!! I am going to use these to make breakfast McGriddles by adding just a little syrup inside to give maple flavor. Thanks so much for this video. To anyone on the fence about trying these, the batter BEFORE COOKING tastes alot like Rice Krispie treats. It is hard to explain.... but you got to give it a try.
HOLY SMOKES!!! I just made these and I am so shocked how "pancake'ish" they are - I mean these are pancakes! I've been carnivore for 5 months, haven't missed bread stuff, but saw this recipe and thought I'd try it for some variety - WOW - I'm so glad I did. Not only are they delicious with wonderful texture, I didn't have to buy anything weird to make them. I was Keto a few years back and had all the odd ball ingredients, but have since gotten rid of everything I used to bake/make keto foods with. They're also really easy to make, thank you so much!

Wow, what a great recipe! The first time I made them the flavor was on point, but they were very flat. Just made them again this morning with a few tweaks. Added a little extra baking powder to the mix. I also separated the eggs and beat the egg whites before folding them in with the rest of the batter. I used Allulose as my sweetener because too much erythritol really upsets my stomach, and I did throw in about a quarter cup of Lily’s semi-sweet morsels for fun. My VERY picky 9-year-old just came back for seconds. Thank you for sharing this! Such a delicious way to up my protein and still feel like I’m treating myself!
Had I not tried this recipe I would never have believed this. These are DELICIOUS. The texture, I admit, is a little different but for us carnivores craving pancakes these are GREAT!!!! The cook time will vary depending on your griddle. HIGHLY RECOMMEND!!!!

Three questions I've been getting a lot in the comments: 1) Can I use Knox gelatin instead of beef gelatin? From the people who have tried this, I have been told that their batter didn't thicken up and their pancakes didn't rise. This is the brand I use: amzn.to/3sjBhJw and I will be using it in future recipes/videos. 2) Can I make this in Dash mini or waffle maker? Possibly. My Dash mini products run at 370F. These pancakes cook best at 325F. I did one in the Dash mini waffle maker and the exterior of the waffle got VERY dark before the interior was cooked to my satisfaction. 3) Your IR thermometer says 370F and you said you should cook these at 325F - which is it? When you see me using the IR thermometer on my griddle, I'm showing that mine runs hot and that it's good to verify the thermostat on any cooking product. I subsequently turned my griddle down to 275F, which wound up getting me to the desired cooking temp of 325F.

The ANS brand of keto pancake mix has instructions to reduce amount of water if you want to make waffles. Would love to see you experiment and perfect the proportions for this recipe to be successful dash mini waffle maker!!! Looking forward to your updated video! And maybe a savoury version as a 2nd option as well? Since Mini waffles replace sandwich bread for keto folk!! Pretty Keto-pleeeeeeeez????? With Erythritol on top?

Finally got around to making these. I'm pretty solid ketovore, but have never made a low carb pancake before. They were ridiculously good. And I even had to make a substitution. Didn't have beef gelatin, thought I had regular gelatin but couldn't find that either. I used a very small amount of xantham gum, and they were still super good. Not sure how it compares, though.
Steve, I love how you are always trying to make things taste like the real thing. That's my biggest issue with Keto-fied recipes, almond and coconut flours just don't taste like the real thing. I'm going to have to try this recipe this weekend! Thanks for this!

I had to return to tell you that these are our favorite pancakes by far! I buy pork rinds already ground up to save time. It is PorQ Panko crumbs. I also was out of beef gelatin and substituted half a TBSP of xantham gum. It was a bit thicker so I added about an 1/8 of cup more cream and a bit of water. The pancakes were fluffier this time and I got more out of the batch! I am so thankful for your channel! Now I need a good biscuit and gravy recipe and a thickener to use that isn’t slimy as the xantham gum! ❤️
I was half expecting Courtney to not like it. But I am glad she did! I haven't been that clear on the carnivore rules. I think like Keto there are many versions and variations.
I was hesitant to try these, but I'm so glad I did. I've been making Low Carb Love's cream cheese pancakes, but these pork rind pancakes are even better. My non-keto husband liked them too, so it's a win win. Thanks for working out this recipe. It's a winner. Plus these are lower carbs.

I cannot believe I just sat here and ate pancakes made of pork rinds...and I liked them! I stumbled across this video while looking for a different pancake video I've used before and thought "why not? I'll try it."
The texture is the best keto pancake texture I've tried and I've tried it all. Now...there definitely is still a little pork rind taste but I told myself it's no different than eating bacon and pancakes together. It's totally worth it to give this recipe a try. It's surprisingly good.

Someone posted on my site that if you had 1/2 tsp of sweet dough emulsion, it covers that little bit of pork rind flavor. But since I'm usually eating pancakes with sausage, I'm used to a slightly porky flavor with my pancakes. Here's a link to the emulsion: amzn.to/3t2109M

I made these for the first time this morning. I wasn’t expecting much, but was I wrong! Such a great flavor and texture! I made regular pancakes for my husband, but gave him a taste of mine. He loved it! When I told him the ingredients, he said, “no way”! Waaaaaaay! Thank you for sharing this! I slathered mine with Kerry Gold and a bit of sugar free syrup. Heavenly!

FINALLY someone understands what keto is supposed to be about. Way too many of these 'keto' recipes have like 30 grams of carbs and 950 calories in them to eat an actual normal serving size, which all totally flies in the face of what keto is supposed to be about. 10 grams of carbs for a stack of 10 decently sized pancakes is excellent, especially with that sugar free/carb free maple syrup that other guy makes.
I thought the same thing!!! And on occasions he does have a questionable ingredient he says so up front and says it's more of a lazy keto or something like that.

Because it tastes good, personally if you're trying to eat healthy. You shouldn't be making pancakes at all.
When I do the low carb thing, I try to stay away from anything that even resembles sweets. To me you're just tempting yourself, and in some ways torturing yourself.
However once I get down to my desired weight, I might do something like this rather than go by a bunch of donuts.

I love the fact that you are including metric measures. It is so much easier to use a food scale and add ingredients based on weight.
J C Norton The same here. I've taken to printing the recipe and writing the weight of the liquids as well to make is much quicker (and cleaner) the 2nd time around. Not sure why weight isn't used more
@@joepremo1 I know. I believe in most parts of the world weight measures are used. It's more convenient and more accurate.
About 25% of my viewers are from outside of the U.S., so mostly I do it as a courtesy to them. But I agree, it is a far more accurate method of cooking (and less clean-up of measuring cups).

Steve, I saw these the other day but couldn't make em because it was my fast day but I made them this morning and just WOW. My roommate had them with me, she's not keto but she just couldn't stop marveling at how much like normal pancakes they are.
Thank you for sharing these, I have a new favorite keto friendly pancake recipe. I couldn't get over how light and fluffy and moist they were! I could not taste the pork at all, I have a really sensitive pallet.
My only recommendation for anyone making these, please do as Steve suggests and cook them on a griddle all at once. We were using a small pan to cook them one at a time and by the time the last pancake was made it was very challenging to create an evenly shaped pancake because the batter got so thick.

I just started a carnivore diet yesterday. I lost 3 lbs overnight. I had been low carb and was stalled so I think the carnivore thing is helping. These look delicious. Who would have thought! Great job!

@@Jenmusic71 I made these last night without the sweetener and cinnamon. They were delicious! I had them with steak and it made me feel like I was having yorkshire pudding with the steak. With the gelatin in the mix, you have to be ready to cook them right away. My batter got really thick so I added more HWC but next time I might add some water if that happens. This is something I will be making often!

I have done strict keto and Carnivore on and off for a few years. I have experimented with so many recipes for pancakes and never quite got that true pancake texture. These are fantastic! Made a second batch tonight and my family gobbled them up! They don’t even need Sf syrup! They are satisfying just slathered in butter! This will be my go-to keto-vore pancake recipe from now on! Thanks so much for perfecting it and sharing!

We make this recipe in a waffle iron without the sweetener, vanilla, and cinnamon for bread, and with vanilla and cinnamon for waffles (or paffles as we call them). My husband and mom love them. They also refrigerate and freeze with no taste or texture loss.

I just made these yesterday, and I am ABSOLUTELY stunned.
I thought the pork Rinds were going to over-power the taste (like with Paffles). But man, I am very surprised. I could not find beef gelatin but used unflavored gelatin instead. Came out great.
For the 1st time I had eggs and pancakes while still being low carb !!!! I am going to use these to make breakfast McGriddles by adding just a little syrup inside to give maple flavor.

HOLY SMOKES!!! I just made these and I am so shocked how "pancake'ish" they are - I mean these are pancakes! I've been carnivore for 5 months, haven't missed bread stuff, but saw this recipe and thought I'd try it for some variety - WOW - I'm so glad I did. Not only are they delicious with wonderful texture, I didn't have to buy anything weird to make them. I was Keto a few years back and had all the odd ball ingredients, but have since gotten rid of everything I used to bake/make keto foods with. They're also really easy to make, thank you so much!

Wow, what a great recipe! The first time I made them the flavor was on point, but they were very flat. Just made them again this morning with a few tweaks. Added a little extra baking powder to the mix. I also separated the eggs and beat the egg whites before folding them in with the rest of the batter. I used Allulose as my sweetener because too much erythritol really upsets my stomach, and I did throw in about a quarter cup of Lily’s semi-sweet morsels for fun. My VERY picky 9-year-old just came back for seconds. Thank you for sharing this! Such a delicious way to up my protein and still feel like I’m treating myself!

Had I not tried this recipe I would never have believed this. These are DELICIOUS. The texture, I admit, is a little different but for us carnivores craving pancakes these are GREAT!!!! The cook time will vary depending on your griddle. HIGHLY RECOMMEND!!!!

Three questions I've been getting a lot in the comments:
1) Can I use Knox gelatin instead of beef gelatin? From the people who have tried this, I have been told that their batter didn't thicken up and their pancakes didn't rise. This is the brand I use: amzn.to/3sjBhJw and I will be using it in future recipes/videos.
2) Can I make this in Dash mini or waffle maker? Possibly. My Dash mini products run at 370F. These pancakes cook best at 325F. I did one in the Dash mini waffle maker and the exterior of the waffle got VERY dark before the interior was cooked to my satisfaction.
3) Your IR thermometer says 370F and you said you should cook these at 325F - which is it? When you see me using the IR thermometer on my griddle, I'm showing that mine runs hot and that it's good to verify the thermostat on any cooking product. I subsequently turned my griddle down to 275F, which wound up getting me to the desired cooking temp of 325F.
You say they work best at 325F but your thermometer read 370F in the video. Just want to make sure I don't burn these
@@Darth_Raider8140 that was me showing that my griddle runs hot and that a person shouldn’t trust the number on the dial. I turned the heat down before making the pancakes.

The ANS brand of keto pancake mix has instructions to reduce amount of water if you want to make waffles. Would love to see you experiment and perfect the proportions for this recipe to be successful dash mini waffle maker!!! Looking forward to your updated video! And maybe a savoury version as a 2nd option as well? Since Mini waffles replace sandwich bread for keto folk!! Pretty Keto-pleeeeeeeez????? With Erythritol on top?

Try Wholesum Yum’s Allulose maple syrup. Tastes like real maple syrup a d is drinkable it’s that’s good.

Finally got around to making these. I'm pretty solid ketovore, but have never made a low carb pancake before. They were ridiculously good. And I even had to make a substitution. Didn't have beef gelatin, thought I had regular gelatin but couldn't find that either. I used a very small amount of xantham gum, and they were still super good. Not sure how it compares, though.

Without looking at the recipe again, I'm pretty sure I only used about a quarter teaspoon. Maybe a half at the most.

I had to return to tell you that these are our favorite pancakes by far! I buy pork rinds already ground up to save time. It is PorQ Panko crumbs. I also was out of beef gelatin and substituted half a TBSP of xantham gum. It was a bit thicker so I added about an 1/8 of cup more cream and a bit of water. The pancakes were fluffier this time and I got more out of the batch! I am so thankful for your channel! Now I need a good biscuit and gravy recipe and a thickener to use that isn’t slimy as the xantham gum! ❤️

I was hesitant to try these, but I'm so glad I did. I've been making Low Carb Love's cream cheese pancakes, but these pork rind pancakes are even better. My non-keto husband liked them too, so it's a win win. Thanks for working out this recipe. It's a winner. Plus these are lower carbs.
