Been cooking in a serious way for a long time , this is great video . Now I wear a anti cut glove on left hand made of stainless steel threads it flexible and when busy things slip ! I take a blood thinner so profuse bleeding is a given looks bad lol

Absolutely great job!! I have a question if you don’t mind me asking.. if you run out of ingredients, let’s say for example the main ingredients, what can you do in this case? You ask someone to bring them to you? Or something else

It depends on the event, I tend to over prepare for every event, because I have the storage space available, but every once in a while we get unexpectedly busy. If that happens and we run out early, I’ll send someone to get more from our store. But if we run out close to the end, we consider it a win, sell what we have left and call it a day!
Something I started doing recently is bring enough to make my $$ goal, and then I’m happy when we sell out.

It depends on a lot. Where you are, what kind of facility you have. Your county health department should have a “fee schedule” where you can find out exactly the permit cost. Many places waive fees entirely for veterans.

How do you have ice for drinks or do you only do can drinks
We have a separate cooler for iced down canned sodas.
Where can I get a trailer like yours im in southern California?
I know there are a couple of great builders down there… My trailer was designed Buy a builder here, from the ground up as opposed to an airstream conversion. I would think in SoCal your best bet is to try for an airstream conversion. But I know that there are very few people with the knowledge and skills to do that. You may have to look in another state. I know P & S trailer service does that.

What kind of hotdogs do you guys use?
We use Casper Hot Dogs. They are a local Bay Area favorite. We also serve Costco brand polish dogs, Evergood Hot Links and Lockeford Sausages.
Hello i want to start by saying your awsome and a inspiration...I look up to you and jelious of your drive..with that said I have a apt to see my 1St hot dog cart today at 630..im also in california about 2 hrs away from you..can i expect to sell at least 50- 100 hot dogs a day? I Dont mind putting in the yard work just want a idea if of what to expect ..I know its hard to awnser that question but I Dont no who else to ask lol...

It really depends on your location. If you choose to go the daily lunch at determined locations route, you can certainly build to that amount. Consistency is key for that path. Consistent locations and times, allowing for regulars, and building a customer base. It’s rare to get lucky and hit those numbers right away.
We are more in the Special events category, and over the years I’ve come to know which events will bring me that kind of volume and more, and which ones don’t.
The best advice I can give, is to just get started, and decide what you like best, and what pays you best, but it will take time. Hope that helps!

Our commissary is actually a local restaurant, I did a video about it awhile back, but the point is to have a place to service your food facility. Clean, refill, hold cold food, prep food etc…
The Health Department doesn’t trust operators to keep their homes clean enough, and/or they can’t inspect everyone’s home. The answer really depends on who you ask.

I have been seriously considering becoming a vendor here in Las Vegas and start out with humble beginings like you did with a cart...I started to watch your videos in backwards order. So I want to start from the beginning.

It’s a lot more than I thought I was going to have to do, but there are definitely more ways to get it done than the Health department would like to tell you about.
The best advice I can give you, is persevere!! The juice is worth the squeeze!!

Canned Chili?!
We go through 2400 ounces of chili per week… sometimes more.
If I could afford $1000 a week to rent a commercial kitchen and pay someone full time to do nothing but make chili, I would.
But I can’t. So canned it is. 👍🏻
I'm in fast food..Do you make a decent living doing this?
Yes!! We have reinvested every dollar, but the bills are always paid. Put it this way, my husband was able to quit his job to work with me full time, and we’re doing fine so far!

You should never cut up your onion before you put it on the hot dog the onion soaks up all the bacteria from the air always cut up your onion fresh while you're putting it on the dog.
