Hi! Im from Florence Italy, Just for everybody to know and understand that guanciale is the “pisngi” part of the pork and the pancetta is the “belly” part. Though you can use any bacon you have but if you want to experience and have an authentic taste of the italian carbonara, better get the guanciale or pancetta part/cut. 😋😉

I'm italian, from Rome (pero asawa ko pinay!) finally a perfect recipe of italian carbonara!!! I subscribe now! (only a tip: so much olive oil in the water is a waste of money. It is only useful for fresh pasta)
He doesnt- IMO. The egg needed some sort of heat. He should have tossed the pasta into the hot pan with a bit of pasta water and the toasted guanciale, heat off, add the egg and cheeze mixture gradually consistently tossing and incorporating it into the pasta to avoid getting scrambled eggs. The pepper is coarse it couldve been sifted to get the fine powder. The pasta did not need a ton of salt- because of the cheese and guanciale being salty. And pasta do not require oil when boiling - you need the starch from the pasta for any type of sauce to stick. You defeat that purpose by adding oil. Stirring is enough to keep the pasta from sticking. Oh and you also dont have to use 7 eggs.. I bet his youtube inspirations are gordon ramsay (who i love dearly) and jaime oliver. Im no chef - but im from a family who cooks food from generations to generations. Ive been cooking great food since 12- it’s my passion.

Jessica Tuazon no need to run in cold water. The reason for doing that kasi is to stop the cooking process immediately which is great when blanching vegetables but with pasta since youll cook it aldente 8-9mins you can skip the water rinse esp if you will mix it to the sauce and eat it after it cooks. If you not, just set it aside for later. I always suggest in cooking pasta only whats enough to be eaten. But as pinoys gusto naten mayat maya ang kuha kaya buong 1kilo ang luto LOL which is fine. But upon serving- heat the sauce and dump in the pasta. Left overs can be frozen in a dry container and throw into the freezer. When u want to eat again thaw the pasta and rise with hot water before mixing into the sauce making another fresh serving :)
Just discovered your blog & love watching them especially when you are with Lucy & Juliana. I was already a big fan of yours way back Palibhasa Lalake when I was in the Philippines. Happy that you turn out to be a dedicated mayor & not in the mold of "old trapos". Goma knows how to cook legit carbonara than those pa chef online. You can also use pecorino romano for the cheese. Pero he had me at guanciale! Galing!

@@jobertnarte4070 yes. it’s even testier that’s why italians don’t put salt but i don’t know if you can find it in the philippines. when i prepare carbonara i usually put 30% of parmesan cheese and 70% of pecorino romano😋

That is an authentic italian carbona. No cream, just egg, parmesan, and guanciale (pork cheek) or pancetta (pork belly). Bravissimo 👏🏻👏🏻👏🏻
