- REAL CARBONARA
500 grams Pasta of your choice, cook until al dente (save some pasta water)
200-300 grams Guanciale
Olive oil
8-10 pcs egg yolks
¼-½ cup grated cheese, plus additional as needed
Salt and pepper, to taste
Pasta water, as needed
Truffle salsa (optional)
Chopped parsley/ spring onion

1. Yes, you can use bacon instead of Guanciale. Sa mga kapatid nating hindi nakain ng pork, pwede po chicken or beef bacon. Pwede rin po smoked salmon. Kung saan ka happy.
2. The pasta pot, inorder ko po from Korea. Check my vlog “Kitchen tour: Pots and Pans”.
3. The Rotary Cheese Grater nabili ko po yan dati pa, check nyo po online or from Landmark department store.
4. Yes you can add cream, if you want. Hindi naman required na 100% Authentic ang recipe. Ang #1 requirement- kailangan maging masaya po tayo hahaha.
5. Pwede po gumamit ng plain parmesan cheese instead of Pecorino.

May I know where you bought your Pasta Cooker pls? Thanks for bringing out the real Carbonara. The one with cream shld be called Alfredo. In Italy they also mix the oil of the Guanciale.

Why do sound like it's a big deal tho? Don't u think cooking involves wide diversities. People could cook a recipe the other way and same goes to the person who originated it. They could cook unfamiliar recipe on their own way.

@@josephineramones2522 itlog lang talaga nagpapa creamy sa carbonara, ilalagay mo ang eggyolk pag hindi na masyadong mainit ang pasta, at ang cheese, (formaggio di pecorino- cheese na mula sa tupa) ang ginagamit.

Sobrang nakakatuwa ka talaga Chef RV 😍 It's such a delight to watch you! Gusto ko man gumamit ng traditional ingredients for Italian carbonara ang mahal mahal talaga eh 😩😭 So I just use nalang bacon instead of guanciale and Parmesan cheese instead of Pecorino.

Your version looks buonissima too, Chef RV. But if you really want to make the “original” carbonara, you will only need 5 ingredients (guanciale, pecorino romano, eggs, pasta, black pepper). No need to put anything else, just those 5 ingredients. And usually we toss the al dente pasta directly to the pan where you rendered the fat of the guanciale (making sure though that you already turned off the fire when tossing). You won’t want to discard the fat or the oil that you got from the guanciale, that adds an important and a delicious taste to the carbonara. While tossing the pasta in the pan, put some water pasta and that’s gonna create that creamy texture of your carbonara. Later, you can then add your egg yolks and pecorino cheese mixture into the pan. Toss a little more and that’s it. You’ll have the original, fast, simple and easy Italian carbonara.

We've been doing this since I was in college. From the time we learned how to cook it the legit way hahaha
Hahaha.. nice one but slow roast the guanciale and don't throw anything. Me, I top-up 1 ladle of pasta soup to guanciale and bring it to boil (much better flavour). Turn off and add the pasta. No egg white much better and the cheese should be Pecorino. If you have Pecorino cheese and guanciale - PERFECT Italian pasta. Lovely - watching from Central London.

Actually Italians find it offensive that Filipinos are calling it carbonara. They said just call it something else, but not carbonara. They cringe with the thought of putting cream on it, just like pineapple on pizza😅😅They easily take offense when it comes to their food, they don't like it being murdered 🤣🤣(1/4 Italian here)😆😆
I agree that “Filipino Style Carbonara” should just change its name to something else. It has different ingredients from the original Italian carbonara. So its a totally different dish that deserves a different name

Sir one eggyolk every person plus 1 whole egg. Yong cream na ginawa mo lagyan ng konting tubig ng pasta, "acqua di cottura" in italian para lalong mas creamy dahil ma melt talaga yong pecorino cheese, at pag original carbonara walang variations yan sa ingredients yon lang talaga wala ng idag dag. Yong type lang ng pasta ang pwede mo i change kahit ano hindi Lang fettuccine, sa totoo lang sa Italy yong fettuccine ay sa pasta al ragù yan madalas gamitin yong pasta al ragù ay Tomato sauce, carrots, onion and and celery, ground meat, sometimes tomatoes sauce and mushrooms yan ang bagay sa fettuccine Use spaghetti or other pasta instead of fettuccine. Pero you nailed it tong recipe na to. Congrats

There are cured beef bacon that you can use. Chicken ham can be use as well. The choices will be a disgrace for the italians but then again you need improvise 🤣 not all can eat pork. As long as you get the same cheese. The cheese is the most important. ❤❤❤
