I always start in a cold pan with a lid on it. The pan slowly coming up to temp makes the bread brown very evenly and get extremely crispy. The humid, enclosed environment melts the cheese a lot better and tends to make the interior of the bread steamy and fluffy, which is a great textural contrast.
I remain unconvinced that it is. Imo if you're adding veggies and meat to it it isn't a grilled cheese it's just a grilled sandwich. Albeit a fucking incredible looking one.

Local German bakery sells this rye bread that's perfect for g.c. I usually melt a 1/2 cup butter and brush on the fat. Also, garlic powder instead of salt. The salinity from the cheese is enough.
Most oven/cooktop setups have a clip that attaches to a wall anchor to keep them from tipping over, but they should slide out and back pretty easily. Just make sure you don't unplug the cord or detach the gas line, but if you ever drop anything behind the oven (as I have often done), it's easy to retrieve!

Food network just had a French onion soup grilled cheese on garlic butter sourdough with Au Jus to dip it in ,made with Gruyere cheese and sautéed onions . Seems like a modded version of that .

****Farideh... & every one else reading this on the internet .... quick tip about cutting onions, (I saw this on science show and it works) 1.make sure you are using a sharp knife, 2. Each time that your about to cutting the an onion, rinse / wet your knife (blade part only, not the handle). The science behind is that every time your cutting onions your bursting the onion cells and the juice / liquid from the cells are spraying into the air. The wet /damp blade stops the the cells spraying into the air (50%-75%) which reduces the onion juice and makes it bearable to cut. keep rinsing your blade as you cut multiple onions or as much as you need too. Keep Sharp, and Safe!

It also browns more evenly than butter. 2. If you have butter than isnt room temperature, just drop it in the pan to melt, put your bread in, and weigh it down using another pan. I recommend putting a weight on top in every case as it browns more evenly and keeps everything together. In this video i see the bread is not evenly browned 3. This is a melt, not a grilled cheese

Id love to find a way to incorporate nice tomato slices but dont enjoy the juice/liquid that the tomato gives of. Thanks for the ideas and tips. I'm the same with tomatoes. I thought I was the only one. I absolutely love them, but not the gooey juices. I just cut them up in whatever way you need and then I dab them throughly with paper towels till most of the moisture goo is gone :)
Hot tip. When butters cold. Nothing stoppin ya from just throwing a big cold butter dollop on the pan let it melt and throw bread on the butter puddle. Build sammich on that bread. When it’s crispy. Remove. Throw more butter on pan. Melt. Flip sammich to none crisp side and cook on butter. This works just as good. And also solves that butter and mayo on both sides conundrum! Do you put the mayo side on the counter or the butter. The eternal struggle. Solved.
Fari - let me drop an onion chopping Pro Tip since you’re helping me out with cooking as well. Wet your knife and chop the onion with the blade being wet (I keep the faucet dripping as I chop so I can constantly keep it wet in case I feel like I’m about to cry). Somehow - science happens with the water keeping the acid from turning your eyes into mush. Hope it helps you too!!
I don't have a frigerator so I ferment my veggies. I buy cheese but use it within a day (in the summer). I end up wasting a lot of cheese but my chickens and cats dont mind.

I'm a firm believer in slow-frying the sandwich on low heat, about 8 minutes per side. You'll get the best results in crispy crunchiness that way.
