    CRUSTLESS APPLE PIE RECIPE
    (makes 8 slices)
    Ingredients:
    For the filling:
    2 lb apples, any variety (1kg)
    3 tbsp maple syrup
    2 tsp cinnamon powder
    2 tbsp oat flour
    For the topping:
    1 large egg
    1 tsp vanilla extract
    3 tbsp maple syrup
    2 tbsp melted butter
    1/4 cup yogurt (60ml)
    1 1/4 cup ground oats, or oat flour (125g)
    2 tbsp cornstarch
    1 tsp baking powder
    1/4 tsp salt
    NUTRITIONAL INFO (per slice):
    175 calories, fat 4.7g, carb 30.7g, protein 3.3g
    Preparation:
    Preheat the oven to 350°F (180°C).
    Peel, core, and thinly slice the apples. In a bowl, toss the apple slices with maple syrup, cinnamon powder, and oat flour.
    Transfer the coated apples to a pie dish (a 9-inch springform pan works well). Cover with aluminum foil and pre-bake for 15 minutes.
    In a separate bowl, whisk together the egg, vanilla extract, maple syrup, melted and cooled butter, and yogurt.
    To the same bowl, add ground oats, cornstarch, baking powder, and salt. Stir until just combined, avoiding overmixing.
    Remove the pre-baked apples from the oven and spoon the prepared topping over them. Smooth the topping with a rubber spatula.
    Bake the pie for an additional 30-35 minutes, or until the top is golden brown and crisp.
    Allow the pie to cool for at least an hour. Once cooled, slice it into 8 equal pieces.
    For an extra touch, drizzle with a maple Greek yogurt glaze. Combine 1/2 cup Greek yogurt, 2 tsp maple syrup, and 1/2 tsp vanilla, then drizzle over the sliced pie.
    Enjoy! Delight in a healthier twist on classic apple pie that's both flavorful and guilt-free.

    This is most definitely the pie for me. I have never quite mastered a healthy pie crust that also tastes great and has a nice texture. This recipe looks like the answer to my prayers, and will be on our menu for tomorrow....the way we love apple pie in our family, it might be the main course!       Hi Lauren! It's the same thing here, plus it's always whip up the batter and pour all over than make, chill and roll the crust in a classic way. This cake topping is not flaky and satisfying like pastry crust, which can be a minus for a pie crust lovers out there, but it's super delicious and definitely works as a subsitute for me.     Follow up! Made this delicious apple “pie” … love love love the simplicity of it. My apples were a little dry, so instead of using all Fuji, next time I’ll use a blend of apples and maybe add a little apple cider. Also, I would love to try a mix of apples, pears and cranberries in the next try! Thanks so much!

      This cake layer is actually so delicious, and it can work instead of a regular pie crust, it's not flaky like pastry crust, but I'm all about the apple cinnamon filling when it comes to apple pie.

      What a lovely idea, but you can make this batter with oat flour only, I add cornstarch just to make this topping a bit crunchy.
