The biggest difference between this guy and other chef's videos is he engages people while preparing and does not just go about adding this that mix fry etc, and other difference is he is very particular about the ingredients and their effect and he explains in details about them and also his knowledge about the history of the dishes he makes, of course they teach this in culinary classes but not many share those knowledge with others.
I like his stuff and mostly agree with what you have said - but I have often found that the quantity of his ingredients that he lists in the recipe vs what he shows in the video is mismatched. For example, for this recipe, he mentions 1 KG of rice. There is no way he made 1 KG of rice there. Also 1 KG of rice will never go with 1 KG of chicken!
@@AdityaKumars see i have been cooking as a passion not on a daily basis though, since i was young and i am a pretty damn good cook even good at doing larger quantities, this 1:1 ratio is normal but i rather prefer or i usually do 1:1.5 ratio whether it is chicken , mutton, fish or shrimps or vegetables. the measurement he lists is pretty accurate and what he showing is little different and just based on his experience and judgement so do not go by what he shows but follow the written instructions you will see really good results which i have tried on a few recipes myself and i can vouch for that. It is not mandatory for you to stick exactly by those measurements you can easily add minus a small percentage for example if he says 1 tsp maybe you can go little less or little more it would do no harm as such.

I agree that some measurements can be corrected by a small percentage here an there but for this one, I am sure the rice listed in the recipe is incorrect by a whopping 3 times.
@@AdityaKumars bro i think i didn't put it right or you got me wrong either way, what i meant by 1:1.5 is one kg of rice and 1.5 kgs of chicken, mutton, fish, shrimps and mixed vegetables, what you have mentioned is .3:1 which is way too much of meat or chicken and you will have to search for rice in your plate if you use this proportion. yes maybe you can increase the quantity of meat or chicken maximum to 1.75 kgs for 1 kg of rice. one more thing restaurant quantities are little different from what we do at home. since you are so sure that 1kg rice : 3 kgs or 300gms of rice for 1 kg of mutton or chicken, please try visiting any restaurant or watch any recipe videos or just place an order asking them to cook for 1kg rice and ask them how much meat or chicken you will use for that measurement and then give me your feedback.

At home we tend to use more meat with regard to rice and maybe that is why I have mentioned the ratio that you mentioned. Thanks for your response and correction.
So it seems to me, good point! Some versions of biryanis are sometimes too sweet, and I like it when there is a slight hint of bitterness. I was told to try large cardamon, "shahjeera " and patthar phool - which I came to know was called lichen a type of moss. If the chef or any one could comment it would be nice. This is without doubt a practical and complete recipie.

Cooked this today with a little additional masala. It was a super hit. I cooked 1kg chicken, about a kg Rice, total of 6 plates , 2 ppl at lunch and 4 of us at dinner. Trust me.. it was all clear. Ek spoon bhi nahi bacha. Papa loved it the most.Thank you Ranveer, your simple recipes are simply awesome and the way you share the tips makes it interesting , easier to cook. @@bhatsameena8589 take a heavy vessel or lagan. You can grease the bottom with little ghee and layer with chicken, rice. As in this process chicken is already cooked and rice is 3/4th cooked, dum will take lesser time. Keep it on low flame until you see the steam coming out of vessel. That's the indication. It took around 20 mins for 2kgs biryani . On a safer side you can place a tava and vessel on top of it. But it'll take little longer .

I add a little garam masala and pepper powder to the marinate to bring more heat to the biryani and rest I follow Ranveer's recipe. The recipe is on point!

I tried it with some modifications... I added 1 tbsp dahi and kashmiri mirch in addition and proportionately reduced some onions + added javitri elaichi powder while frying chicken... It turned out delicious

I tried your recipe today and it turned out so good even though the recipe wasn't complicated 😄 but I cooked the rice about 70% and my mom suggested to keep on dum 30-35mins with a tawa in the bottom of the pan. Anyway your recipe was really good 😋

I tried this recipe twice. Once the masala proportion got very less and the rice was white(I didn’t have saffron water) and looked very unappealing. I was disappointed but one spoonful of the rice gave me a surprise. Even with the masala shortage, it tasted so flavourful and incredible. You could just eat the white rice. The chicken was a lil bland but I didn’t mind. I made it a second time today with perfect proportions of masala and saffron water and everything. Boy, this is heavenly and so unique. I went a lil overboard with the saffron but it didn’t make much of a difference! I feel so accomplished. ❤️

I tried your recipe today and it turned out so good even though the recipe wasn't complicated 😄 but I cooked the rice about 70% and my mom suggested to keep on dum 30-35mins with a tawa in the bottom of the pan. Anyway your recipe was really good 😋

I tried this recipe twice. Once the masala proportion got very less and the rice was white(I didn’t have saffron water) and looked very unappealing. I was disappointed but one spoonful of the rice gave me a surprise. Even with the masala shortage, it tasted so flavourful and incredible. You could just eat the white rice. The chicken was a lil bland but I didn’t mind. I made it a second time today with perfect proportions of masala and saffron water and everything. Boy, this is heavenly and so unique. I went a lil overboard with the saffron but it didn’t make much of a difference! I feel so accomplished. ❤️
