    HYDERABADI CHICKEN BIRYANI
    Preparation time 10-15 minutes
    Cooking time 25-30 minutes
    Serve 2-4
    Ingredients
    For Barista
    3 medium Onion, sliced, प्याज
    Oil for frying, तेल तलने के लिए
    For Chicken Marination
    ⅓ cup Fried onions, तला हुआ प्याज
    1 cup Curd, beaten, दही
    ½ tbsp Tender Coriander stems, finely chopped, धनिया के डंठल
    few Mint leaves, roughly torn, पुदीना पत्ता
    2 Green chillies, less spicy & broken into half, हरी मिर्च
    1 ½ tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
    2-3 tbsp Fried Onion Oil, तले हुए प्याज का तेल
    Salt to taste, नमक स्वादअनुसार
    1 tsp Coriander powder, धनिया पाउडर
    ½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
    ¼ tsp Turmeric powder, हल्दी पाउडर
    700 gms Chicken (thigh, drumstick) चिकन
    1 tbsp Fried Onion Oil, तले हुए प्याज का तेल
    For Cooking Rice
    Water as required, पानी
    Salt to taste, नमक स्वादअनुसार
    1 tsp Ghee, घी
    ½ inch Cinnamon stick, दालचीनी
    1 Bay leaf, तेजपत्ता
    3 cups Sella basmati rice (soaked for 20 minutes) सेला बासमती चावल
    For Jhol
    ⅓ cup Milk, दूध
    1 ½ tsp Saffron water, केसर का पानी
    ¼ tsp Green cardamom & mace powder, हरी इलायची और जावित्री का पाउडर
    A pinch of shahi jeera, शाही जीरा (optional)
    1 Green chilli, less spicy & slit, हरी मिर्च
    few Mint leaves, roughly torn, पुदीना पत्ता
    2 tbsp Coriander leaves, roughly torn, धनिया पत्ता
    Salt to taste, नमक स्वादअनुसार
    ½ tsp Sugar, चीनी
    For Layering
    Marinated Chicken, मैरिनेटेड चिकन
    1st batch of Cooked Rice, पके हुए चावल
    Prepared Jhol, तयार किया हुआ झोल
    Saffron water, केसर का पानी
    Fried Onions, तला हुआ प्याज
    2nd batch of Cooked rice, पके हुए चावल
    Prepared Jhol, तयार किया हुआ झोल
    Saffron water, केसर का पानी
    1 tsp Ghee, घी
    Fried Onions, तला हुआ प्याज
    For Garnish
    Coriander sprig, धनिया पत्ता
    Mint sprig, पुदीना पत्ता
    Process
    For Fried Onion
    In a shallow pan or kadai, add oil, once it’s hot, add onions in small batches and fry until golden brown in color.
    Transfer it into a bowl and keep it aside for further use.
    For Marination
    In the same fried onion bowl, add curd, tender coriander stems, mint leaves, green chili, ginger garlic paste, fried onion oil and mix it well.
    Add salt to taste, coriander powder, degi red chili powder, turmeric powder and mix everything well.
    Pour the prepared mixture into chicken and coat it well, add fried onion oil and mix.
    For Cooking Rice
    In a handi or sauce pot, add water once it’s roaring boiled, add salt to taste, bay leaf, cinnamon stick, ghee and soaked sella basmati rice.
    Cover it with the lid and allow to cook for at least 4-5 minutes on high flame.
    Strain the 60% cooked rice and transfer it into a tray for resting.
    Strain the remaining rice and transfer it into another tray and allow it to rest.
    Keep it aside for further use.
    For Layering
    In a handi or sauce pot, add marinated chicken, add 1st batch of cooked rice and layer it.
    Add prepared jhol, saffron water and fried onion.
    Add the 2nd batch of cooked rice and layer it nicely.
    Add prepared jhol, saffron water, ghee and fried onion.
    Heat the tawa and place the handi on the tawa. Cover it with the lid and allow to cook for 2-3 minutes on high flame.
    Reduce the flame and cook it for 15-20 minutes.
    Once chicken and rice gets cooked well, turn off the flame and keep it aside for resting for 10-12 minutes.
    Serve it on a serving plate and garnish it with coriander sprig.
    Serve hot.

    Got married recently and my husband loves Hyderabadi biryani more than anything in this world and I never cooked biryani in my life. Can't tell you the level of happiness when I saw this in my notifications... Thank you so much chef..👨‍🍳 😇
    We just moved in Hyderabad from Lucknow yesterday. And the first thing we ate was THE HYDERABADI BIRYANI, as I got instructions from my husband.. Do not cook anything. I won't eat anything except biryani 😊😊

I want to share that I had tried ur besan laddos with same ratio u had shown n it turned so delicious. first I used to do only for my family to eat but now everyone likes ds laddos so much dt now i hv started my business as I am getting special orders for only besan laddos n with the ratio set fix in my mind I can do any amount of quantity vt same taste. thank you so much sir for inspiring me to do something creative.     With due respect to Chef Ranveer Brar and all his lovely knowledge about food, would like to just mention that Hyderabadi Biryani doesn't have coriander powder and mace powder. The green chilli is used in the form of a paste and not slits.
    P.S. All of you can make your biryani with your own style and taste based on the region and culture you come from. No offense to Chef Ranveer or anyone, but I'm so deeply connected to Hyderabadi cusine, I thought I should mention this point.

    in Bangladesh traditional kachhi and biriyanis are made with shortgrain rice called chinigura and kalijira. basmati can never beat the aroma and the flavour of these rice.

    Hello
    Little addition Hyderabadi biryani includes garam masala(Elaichi, cloves, cinnamon and caraway seeds,ground to powder) and also it doesn’t include coriander powder. 😊✌🏻

    I am a Hyderabadi....and I find cooking chicken biryani is easiest...my daadi would say 3 most important things in making chicken biryani is best zaafraan best ground fresh cardamom and freshest Hara masala ... meaning Hari mirch mint coriander 😊...but she insisted on basmati rice.... enjoyed watching you as als❤an avid fan

    The most valuable tip you have shared in the recipe is not to use chicken breast, I completely agree that chicken breast get chewy after cooking, not just in biryani but in all chicken curry dishes. You are a highly skilled chef dear Ranveer, Can you give a pro tip to avoid chicken breast getting chewy while making Korma and any other chicken curry ? I would really appreciate if you respond to this and I assume this issue is faced with most of the people when cooking chicken.

      My personal experience...cut the breast pieces into small and marinate it with some vinegar before addinf to the curry

    I made following the same, instead of deep frying onions, I sauteed a little. The biriyani came out magical. I couldn't believe it. For the last 10 years of cooking, It was challenging to make Biriyani. You made it look ridiculously easy while deliciously tasty.

    I am Hyderabadi., this is exactly how I make biryani. With some added khada garam masala., minus dhaniya powder. The way you explained., superb. Any one can cook to the perfection. Thank you chef

    Hi Chef,
    I have been following your work since a long time now and truth be told my 90% of cooking skills come from your instructions. The way you teach and interact gives each and everyone the power to cook. Also, as a food enthusiast I love the food anthropology bits as much and gives me more reason to cook the dishes. But, over time there has been an observation which I think is easily solvable. In your entire plethora of videos there is not a single recipe from North Eastern India. The food of North East is very underrepresented and the stories have not been highlighted by any cook show for that matter. It is a humble request if you can bring some to the forefront because it deserves to shine. All hopes up and once again thank you.

    Biryani is a go to dish anytime. And it is famous worldwide. Awesome recipe, and I would like to mention that I make the same recipe, which was handed over to me by my mother, who made various recipes which I enjoyed through out my life. God bless her soul, she was an excellent cook. And yes GHEE and Priya Mitra does make a difference when layering. :) Lots of love from PDX.❤

    You are an amazing chef. your recipes enticed me the most and the way you explain the concepts behind is unique. this particular strategies makes you unique and different from others. I also wish to study culinary skills and I need your help. I am studying in Canada I applied for culinary but then I've changed my mind because here it's meaningless. I started following you sir.

    I am surprised that he hasn't used a complex masalas in Biryani, only just 3 basic spices. I do really wanna try this simplicity yet delicious and can't wait how this gonna taste.

    App definitely bohot achhi2 recipes banate but use se bhi achhe se aap use explain krte hain apka ye example krne ka andaz bohot hi shandar or uniq hai jo hme video main bandhe rkhta or recipe ko asan ko asan or more delicious banata hai..
