Gonna make some today, too. Nasi goreng.
I am using onion, garlic, chili, ginger and trassi, or belachan (shrimp paste) for the aromatics.
Leek and bell pepper for the veggies.
The rice i cook an hour in advance, so it gets the chance to cool down and dry out a little, before i add it.
I use ketjap manis (sweet, fermented soy sause), salt, white pepper and a few drops of sesame oil to finish it.
And i didn't forget the scrambled egg.
The chicken i cook with a marinade of ketjap manis, neutral oil, cumin, ginger, lemongrass white pepper and salt.
Kind of satè ayam, without the skewer 😉
I serve it with some peanut sauce, made with finely diced onion, shopped garlic, sambal oelek, coconut milk, peanut butter and a splash of ketjap manis.
    So good 🤤😋😍

So good 👍 that I literally PAID HER TO MAKE SOME EXTRA EACH WEEK FOR ME to have for my lunches. She did not want to take the money so I explained that I was gifting 🎁 she family a free dinner each week by her acceptance of the money for it. Only then did she agree 👍. We LAUGHED TOGETHER so many times about my love for her delicious Chicken Fried Rice! We 😮 FOND MEMORIES OF IT and of her. YOUR Chicken Fried Rice looks exactly like hers did back then. Yes 👍, I'll be trying this for certain! Thank you so very much 💕😊!

I make fried rice a few times a month, its delish BUT its never quite like a restaurant. I use Shaoxing Wine, how does that compare to mirin in your opinion? Also, what about oyster/fish sauce? I use about half a tsp typically. I also add ginger and accent. What do you think, am I over doing it maybe?
