    Thanks for adding so many eggs in it. Whenever I get fried rice in restaurants, they never put enough eggs in it. This dish looked really good with all those eggs and lots of chicken as well. Yum!😋

    My mom and I just made some fried rice last night. I can confirm, the rotisserie chicken is a lifesaver if you don't have a ton of time for prep, or just don't like handling raw meat. I'll have to introduce her to how good mirin makes things taste for next time!

    I also like to add shredded cabbage to my fried rice, shrimp, chicken, hamburger, leftover steak, pork, ham. I like the clumps in my fried rice.😊

    I've been subscribed to y'all over a year and Claire's reactions and your "don't worry about it" is what brings me back EVERY TIME! I appreciate your comment on mirin: I am more likely to try this recipe because I can replace an ingredient that I don't have on hand often with something else.

    Yum! Aaron, Thank you for including substitutions or just leaving something out if we don’t have it. Not having everything has kept me from making many things. Substitutions are a MUST sometimes or even deletions. I’m not a cook so it has to be simple. 😁

    I had chicken thighs in my freezer that I wanted to finally use up, so I made this even though I'm not normally amazed by fried rice... But wow! This recipe, and every recipe of yours that I have tried, is incredible. And beyond that, your easygoing style is perfect :)

    Gonna make some today, too. Nasi goreng.
    I am using onion, garlic, chili, ginger and trassi, or belachan (shrimp paste) for the aromatics.
    Leek and bell pepper for the veggies.
    The rice i cook an hour in advance, so it gets the chance to cool down and dry out a little, before i add it.
    I use ketjap manis (sweet, fermented soy sause), salt, white pepper and a few drops of sesame oil to finish it.
    And i didn't forget the scrambled egg.
    The chicken i cook with a marinade of ketjap manis, neutral oil, cumin, ginger, lemongrass white pepper and salt.
    Kind of satè ayam, without the skewer 😉
    I serve it with some peanut sauce, made with finely diced onion, shopped garlic, sambal oelek, coconut milk, peanut butter and a splash of ketjap manis.
    So good 🤤😋😍

    even many street food vendors in asia won't get it but this is the perfect way to prep boneless chicken breast for fried rice. the chicken should be tender, juicy, and melt in your mouth from the marinade and cooking process. i've been doing this for years to my fried rice recipe but when i eat outside some chef can still ruin the chicken part 😅 i'm business owner in fnb industry and this is literally our job. yes i cook for myself (at home) and our customers (in our restaurant)

    Uncle Aaron, you must don an orange polo whenever you cook some fried rice. Trust me, it will taste like MSG !
    Also, Chinese sausage, or one of its Southeast Asian variants, is a great addition to fried rice. I use the Vietnamese variant, lap xuong. Dice it and render the fat over medium heat. Once browned, set it aside and use the rendered fat to cook the veggies and then fry the rice. Trust me, it will also taste like MSG !

      It’s a nonstick wok called LocknLock hard and light. Sadly, I can’t find the exact same product on Amazon, but I’m sure you can find something similar if you search LocknLock woks or pans.

    Looks good but I've always seen old school Asian cooks add the rice immediately after adding the egg so it all combines together better.. that's the way I've always done it too.

    i want blog post that just says in h1 "DON'T WORRY ABOUT IT!" or even a hoody or tee where claire and aaron have a situation and they not worried about it.. i dunno, a broken umbrella perhaps? and they use it to hold aarons coat above them both to protect them both from the heavy rain... "don't worry about it" . i dunno, just an idea. I'm happy to trial any branded textiles you might want to send me 🙂

    Whats the wok that you use? Seems like its seasoned to perfection since nothing sticks to it. The egg just slid right off!
