  • Rice noodles cooked with prawns, spring onions, lime and peanuts. Quick easy and delicious :)
    I’m Caroline Artiss, I trained as a chef, been in the food world for 20 years and I'm a single mom so I am an expert in making quick, easy, tasty and mostly healthy recipes for very busy people.

    Truely authentic pad thai also has a little sweet radish cooked with the dried shrimp (like a tbs or so) and it has to have tamarind and a little firm tofu. Apart from that you were pretty spot on. :D
    Garlic chives (chinese chives) also add a unique flavour that's different to regular chives or spring onion, if you can get a hold of them use them. They'll add that extra little bit of flavour that makes pad thai so good.
    Also, dammit! Now I want to eat my aunties' pad thai

    there's a lot of similarity with the chinese Chao Mian or 炒面 except the add of nuts. Thx for that video Caroline , i've always wanted to add something else in my noodle recipe :)

      After a year, yes they did. Not soaking for a year though. Found some old noodles in the cupboard and did it. Came out real good. But I still prefer the rice stick type pasta or Angel Hair pasta

    Oh I so have to try this! My husband loathes fish sauce - could I replace it with something less fishy?

      +Lara von Mondberg HI there, you know a good flavour substitute is using a mixture of soy sauce, and dried mushroom stock, or if you re hydrate the mushrooms use the juice xx
