정말 부드럽고 촉촉한 시트로 바닐라 케이크를 만들었어요~
바닐라 풍미가 가득하고 시트만 먹어도 너무 맛있어서 저의 최애 레시피가 될 것 같아요.
중간에 버터크림을 얇게 발라서 부담스럽지 않고 폭신한 느낌을 잘 느낄 수 있더라구요.
위에 장식한 크림은 생략하셔도 괜찮을 것 같아요~
버터크림이라 모양 대로 잘 굳어 냉장실에 굳혔다가 자르면 잘 잘리고 모양 내기도 쉬웠어요.
기본적인 케이크지만 시트와 크림의 조합이 좋아서 정말 맛있게 먹었답니다~

▶틀 사이즈 Mold size : 38cm x 26cm
▶재료
달걀노른자 5개
설탕 20g
꿀 30g
우유 45g
식물성 오일 60g
바닐라빈 페이스트 4g
박력분 110g
달걀흰자 5개
설탕 100g
무염버터 120g
슈가파우더 80g
생크림 65g
바닐라빈 페이스트 3g
▶레시피
1. 달걀노른자를 풀고 설탕(20g)과 꿀을 넣고 섞은 뒤 우유, 오일, 바닐라빈 페이스트를 넣고 잘 섞는다.
2. 박력분을 체에 쳐서 넣고 잘 섞은 뒤 달걀 흰자에 설탕(100g)을 3번에 나누어 넣고 머랭을 만든다.
3. 머랭의 1/3을 노른자 반죽에 넣고 섞은 뒤 나머지 머랭의 반을 노른자 반죽에 넣고 섞는다.
4. 남은 머랭이 든 볼에 노른자 반죽을 모두 붓고 골고루 섞는다.
5. 오븐팬에 붓고 탕탕 쳐서 기포를 제거하고 160도 오븐에서 25분 정도 굽는다.
6. 구운 케이크는 바로 꺼내 뒤집어 식힌 뒤 테두리를 잘라내고 3개로 조각낸다.
7. 실온 상태의 버터를 핸드믹서로 풀고 슈가파우더를 나누어 넣고 휘핑한다.(6~7분 정도)
8. 실온 상태의 생크림과 바닐라빈 페이스트를 넣고 휘핑한다.(3분 정도)
9. 케이크 시트 2장을 나란히 놓고 크림을 평평하게 바른 뒤 크림을 바른 조각 중 하나의 조각을 올린다.
10. 크림을 바르지 않은 나머지 조각을 올리고 유산지로 감싸 냉장실에서 1시간 정도 굳힌다.
11. 테두리를 잘라내고 윗면에 크림으로 장식한다.

4g Vanilla bean paste
110g Cake flour
5 Egg whites
100g Sugar
120g Unsalted butter
80g Powdered sugar
65g Heavy cream

1) Can you show us the peaks on beaters when you finish with the egg whites so we can see if they are soft, medium or firm?
2) After removing the cake from the oven how much time do you wait before removing the silpat or parchment paper?

i made this and it turned out deliciously. i effed up the cream 😅 it didn't come out soft and white and didn't yield nearly as much as what shows in the video, it was only enough to spread between the layers, bc i didn't have any cream left to decorate. but i perfected the cake, tho, and i loved it, it's one of the tastiest cakes i have ever made. i may even make the same cake and use different fillings but one thing i know for sure is i'm gonna make this cake dough again. i don't know exactly what went wrong with the cream and i'm curious to know what this cake would be like if the cream came out like in the video... so i'm probably gonna attempt doing the same recipe again.

what can i subatitute to the vanilla bean paste what would still taste the same? its kinda hard to get it from where i am
Vanilla extract
I use vanilla powder, the bean paste is very expensive here 🙂But I found this from google, hopefully it helps:
Substitute for Vanilla bean paste
To replace vanilla bean paste in a recipe:
- Use equal amounts of vanilla extract.
- Use one whole vanilla bean (steeped in cooking liquid) to replace 1 tablespoon of vanilla bean paste.
- Use 1 tablespoon of vanilla powder to replace 1 tablespoon vanilla bean paste.
Equivalents:
1 teaspoon = 5ml
1 tablespoon vanilla bean paste = 1 tablespoon vanilla extract
OR - 1 whole vanilla bean
OR - 1 tablespoon vanilla powder

꺼내면 수축이 오는데 왜 그런 걸까요? 쿠킹트리님도 그랬을까요???
살짝 가라앉기는 하지만 많이 가라앉는 다면 속까지 완전히 잘 구워지지 않았을 수 있을 것 같아요~
오븐사양에 따라 굽는 온도와 시간 차이가 나는데 굽는 시간을 조금 늘려 구워보시면 좋을 것 같아요~

What is the weight of egg white and yolk???
I’m not sure what size egg they used but normally in recipes, large eggs are normally used. The whole egg is around 50g (without shell), the yolk is roughly 18g, and the whites are roughly 30g.
I wonder will it be safer to mix the flour last. I ran through the steps and I thought the flour seemed to be ovemixed? Anyone tried this recipe already? 🙂

You can make it yourself by mixing 425 grams of flour with 75 grams cornstarch.
