I’m am always looking for artichoke recipes! They grow so well
I had never eaten artichoke that I can remember, but on a recent outing with my daughter and her husband we went to a local restaurant called Kickback Jacks. They ordered the Spinach and Artichoke dip starter and OMG it was so delicious. We have both been talking about it since and I have been trying to find a recipe to try. This will be the one. Thank you so much for this recipe and video !!
I wholeheartedly agree with using marinated artichokes. Sooo good. Definitely a go to for a hot side as this chilly Canadian weather sets in

Vegan recipe I have used and is quite good:
Spinach Artichoke Dip
½ c raw cashews, soaked then pureed with as little water as possible (about ¼ c)
8 ounces frozen chopped spinach
1 13.5 oz. can artichoke hearts, drained and squeezed of excess liquid, then chopped
½ c vegan mayo
red pepper flakes
2 garlic cloves, minced
1/6 c finely minced onions
¼ t salt
¼ t freshly ground black pepper
¼ t garlic powder
¼ t dried basil
¼ c nutritional yeast
1 T tapioca starch/flour
2 ounces vegan cream cheese
juice of ½ a lemon
Mix all together in a bowl.
Transfer to a small oven proof dish and put a baking sheet under it.
Bake uncovered at 400oF for 20 min.
Serve with tortilla chips, pita chips, or crackers.

I make a vegan version using silken tofu along with traditional seasonings and serve it in puff pastry sheet shells (baked in muffin tray) plated as a side dish.
In fact just had this on our Thanksgiving table :)
