Another recipe less expensive to make at home than to have at a restaurant. I chose to use beef short rib because that's the cut we like but you can easily make this even less expensive by using stew meat. Hope you'll give it a try!

Hmm it all looks so sedap. Just ordered the paste. Question: what do you use to grind wet spices. Like to make a sambal with soaked dried chili, shallots, garlic into a paste. I find the blenders I have are too wide to get spices into a nice paste. Thank you.

Nice one Flo, just got myself a tefal. 1st try out dish is definitely a rendang dish. Btw the paste you were using did it have coconut butter or better known as kerisik. Its an important ingredient in making the rendang, it helps to thicken the gravy and brings out the flavor.

G'day Flo, I'm truly impressed by your Beef Rendang. You arrived at the EXACT consistency of a classical Malay Rendang which MUST have a little sauce to soak into the rice. Totally dry rendangs are more of an Indonesian style and they are good too, but I prefer the Malay version. I'm a retired chef that specialised in the odd combination of Mediterranean and Malay cooking because they both have highly distinct and strong flavours; and I was trained by Italian and Malay chefs.
Over 40 years or so we've been growing our own garlic and other kitchen herbs. Let me tell you that you are the first US cook who I have ever seen who has taken the, necessary, step of removing the green shoots from garlic cloves which definitely do make for a bitterness in the garlic... same for Italian cooking too.
Of course, no Malaysian rendang is complete without hot roti bread and some rice. Roti bread can be made from scratch, it’s easy, but there are now pre-made roti packs even available at the ‘end of the Earth’ down here in Hobart, Tasmania! So, you folks could easily get roti from one of your Asian grocers.
Just on the strength of your recommendation I’ve ordered some of that rendang mix from Amazon, of all places to try it out.
I appreciate that you may have time constraints but please do consider cooking it in a traditional thick bottomed ‘casserole dish’ with a tight-fitting lid.
It has been my experience that old and even new models of pressure cookers somehow ‘deaden’ delicate flavours or at least dissipate them. If you don’t want to use a classical cooking vessel like one of those French casserole dishes, then consider a slow cooker; they are great to prep for; place all the ingredients in and ‘walk away’ to forget it until you come back to a perfectly cooked rendang that you can either re-hydrate, if needed, or eat right away after your roti is heated. A truly great rendang be it beef, chicken or even fish does have that extra ‘magic’ if cooked more slowly and, my ‘special tip’ is using liquid beef, chicken or vegetable stock instead of water.
My apologies for discovering your channel so late. I do hope you see this comment and I hope, by now your hungry ‘cameraman’ has a little more cinematic experience ;)
Thank you, Flo, your on-screen presence and your knowledge was, and is, a breath of fresh air in my ‘lockdown days’. I have subscribed and ‘rang the bell’ so I look forward to seeing your other videos. Thank you so much. Cheers, BH

    Hi Flo,
I made this today. It took me 10 mins to sautee onions etc, 30 mins high pressure followed by quick release, another 30 mins to reduce liquid into a nice semi-dry gravy. I used pork shoulder instead of beef (because it was cheaper). Oh My God - it was AMAZING. The taste changed completely before and after reducing the extra liquid. All the meat became semi-crispy as it cooked in its own fat (almost like slow frying?). I served it with tomato rice.
Thank you very much for this amazing recipe.

Thank you Flo for sharing your IP recipes I love Malaysian, Thai, Vietnamese and Indonesian food. I usually freeze the Lemon grass after I clean and chop to a couple inches long when I bought them, then I freeze them, that I always have some. I planted Kafir lime tree so I can use the leaves ,their fragrant is amazing not only for cooking.

Nothing wrong with using (good) pastes! Surely that's what most of us home cooks use most of the time with, as you say, a few additions like fresh garlic, chillies and ginger, etc. Thanks for acknowledging their existence. Almost all online recipes make this stuff look too hard because of the massive and hard to fill ingredient lists!

Made it to day and it was awesome and really easy to boot. Buying the spice pack off Amazon was a great tip. I wanted to make it last week so I went to 4 asian markets and still didn't find it (so just order it off Amazon). I used plate short ribs ("the good stuff") but, as per anything low and slow, I'm sure a chuck short ribs (a given option in the video), or many other cheaper meats would work fine.

Thanks! If you mean for the Asian dishes, I usually serve with an Asian leafy vegetable like gai lan (Chinese broccoli) or yue choy. To cook, I simply add salt and oil to boiling water and blanch for a minute or two. Serve with side of oyster sauce or drizzle with a little bit of soy sauce. Beef Rendang is so flavourful, I prefer mild flavoured veggies to go with it. If you can’t find Chinese veggies, cooking lettuce the same way works well too.

@@FloLumGai Lan has become one of my favorite vegetables. It’s hard to find in small quantities, but if I prepare and blanch it, it stays fresh in the fridge longer. I’m only cooking for one, and I hate having to throw it away simply because I can’t consume the entire bag.

As soon as I was done watching this video, I found some beef stew and beef shank, not exactly the cut of beef for this curry, but it’s beef🤪. Also, I don’t have this paste, will have to look up the recipe for it. We don’t use lemongrass in our recipes and yesterday, my sister brought it home, given by her coworker, wondered what I could do with it? I happened to see this recipe and you mentioned LG, go figure.. it’s meant to be🤭 Hope I won’t be disappointed. I could use turmeric instead of galagal, coconut milk and hopefully, I have the rest/substitute ingredients 😱 By the way, besides Amazon, can I find the paste here in LA? Thanks

Flo, how does cooking with “light” coconut milk (less fat and less cal) impact the overall flavor and curry result?

Looks so yummy! Can’t wait to try it! Is there a certain brand and type of rice you prefer? I love cooking from various cuisines and I look forward to adding this to my favorites list!

Thank you so much for this recipe Flo!! I was wondering whether you got the rendang paste on Amazon as well or did you find it somewhere else in a supermarket in Vancouver? Amazon is selling it for around 15 dollars which seems a bit steep.

If you are in the Vancouver area, you can get it at T&T.

I may have missed it but what is your preferred brand of white rice? Seems all restaurants keep changing theirs and taste, textures are not the same as in past. What happened?

Before reducing, could you add some potatoes to absorb some curry ?

Hi Flo! I made this Beef Rendang today and it turned out great. We have never had it before, but but we like to try different dishes. My best friend is from Vietnam and her son just married a Cambodian young lady. I gave them an IP and your cookbook for a wedding gift. I sent my friend a link to this video to forward to her son. Thanks for another yummy dish. Have you ever made it with chicken?

Thanks, Terry! I have not tried it with chicken because traditionally it is made with beef. I'd sooner make a chicken curry with the curry paste for chicken.

Not sure what I did different, but mine came out with a more orange colour (could have mistaken it for butter chicken), also it didn't reduce as much after 30 minutes of simmering (but I was hungry so that's all it was getting 😅). Tasted really good though and I love the pressure cooker, the beef was so tender and broke apart with a fork.

@@TamaSifaga Yes sauté is the setting I used, but you don't sauté a liquid.

Looks yummy! Just as an FYI, I followed the link for the Rendang paste and it brings up Amazon U.S. which tells me that the item does not ship to Canada. I guess you could get it if you had a MyUS account or something similar.

Do you have a T&T nearby? Definitely available there. I think I’ve also seen it at Walmart.

@@FloLum No, however, the one Asian Market that I shop at is pretty well stocked so, I'll have a look there. There is also another huge Asian Market downtown, but it's in a mall and not convenient to get to - the parking is horrendous and if you took a bus, you'd have to walk quite a distance to get to it so, I avoid it like the plague. However, I can try there if all else fails.
