      What seasonings do I add to the soup? Honestly...I mix a can of herbal chicken soup in. I think it is way more flavourful that way. I try to get a soup low in salt and definitely scrutinize the list of ingredients...any of the 27 other terms for MSG or ingredients that make up MSG...I do not buy those soups. It was on your quarantine cooking that you repeated the story of a friend of yours wanted to use Accent and you told her the only Accent she was going to use in your house was a southern one...or something like that because you didn't want MSG.

      My kids love home made chicken soup, and my favorite seasonings to use are Morton's Nature's Seasons that has celery seed and other spices, turmeric, fresh garlic, onion, carrot and celery, 1/4 sweet bell pepper , parsley, rosemary and thyme. And I always finish it with good Irish butter!😉

    I always cook my noodles for chicken noodle soup SEPARATELY and add noodles to the bowls of chicken soup because if you store it overnight, the next day the noodles will soak up the soup and you will have chicken noodles with a little bit of soup left. Paula, I know your chicken noodle soup is far better than ChikfilA because you put LOVE in your cooking!

    Paula, my name is Derrek Cooke from Newburgh, NY and I would like to share a recipe my Grandmother used to make called Dutch Chicken Pot Pie. The ingredients are one whole chicken (frying chicken) cut into pieces, four to five red potatoes, and a package of Pennsylvania Dutch egg noodles (they are square shaped; but if you can't find these you can use regular egg noodles). The directions are as follows: Put pieces of chicken into a large pot and cover the chicken with water. Bring almost to a boil and then turn heat down to a simmer. Simmer for one hour and thirty minutes. Take chicken pieces of out the pot with a slotted spoon and put the pieces into a bowl and let cool. Peel and cut potatoes and then put the potatoes into the broth. Bring to a boil and then turn down the heat. Before 30 minutes check potatoes and add the noodles. Take chicken meat off the bone and cut into bite size pieces. Add the pieces back into the pot. Season with salt and pepper and serve.

    I love chicken soup any time of the year, and I can eat it for 3 meals a day, that's how much I love it! One time, I found a little piece of leftover ginger in my vegetable bin, so I shredded it in the soup, and it added a little bit of zest to the flavor. Delicious!

    When choosing your noodles for this soup, buy the frozen Reams egg noodles. They are thick and are perfect for a homemade soup like this and not likely to swell like egg noodles do soaking up broth overnight. The next morning the broth is still there with Reames. Best noodle ever for soups!!!

      @@morgancalvi6675 I definitely was talking to you! That’s a great tip, I’m going to try it…do you leave your skin on the chicken or take it off? (I leave mine on, it tastes better that way, imo)

      @morgancalvi6675 2 роки тому +2

      @@mollymollie6048 I generally only no skin chicken because I am constantly feeling fat...lol. I can't remember where I got that tip...'Chopped', maybe? I do make sure I at least salt and pepper each side...so maybe it was 'Chopped' because they seem to push that.

    • @mollymollie6048
      @mollymollie6048 2 роки тому

      @@morgancalvi6675 I hear that, I fortunately don’t have a weight issue, and I love the flavor of chicken skin. The way I make mine is really fattening anyway, it always puts on a pound or two (or three) but, I make it once or twice a year in the winter, and so I don’t worry about it too much. I generally eat healthy, but I make it how my Midwestern German Momma taught me how, and it’s good. It was the only think she could eat after her chemo treatments when she got cancer, so I would make for her every month. So, even tho it’s fattening, and probably not heart healthy (I make my own noodles, too, the way she taught me, with Crisco) I don’t care, everything in moderation. My mother died from her cancer when she was 58 and I was 23, and every time I make it, there is the love from her in every bite. She taught me how to cook and how to love cooking, and I love to cook her recipes. I totally understand anyone’s choices in how they cook anything they make, no judgment here, everyone has a preference or medical/physical need, and that’s fine…and part of the joy of cooking, is that you can take basic recipe and make it your own. And YES!!!! Season the chicken!!! Season everything a little as you go along, or you will have really strong broth, and really bland ingredients!!!

  • @mollymollie6048
    @mollymollie6048 2 роки тому +2

    I like to make my own noodles…which my southern husband calls ‘dumplings,’ I’m from the Midwest, my mother called them noodles, I call them noodles. Basically, you use butter flavored Crisco and make it like you’d make a pie crust, with a little more salt and no sugar, roll it out about a quarter inch thick, I use a pizza cutter to turn them into noodle sized squares, lots of flour to coat…helps give a creaminess to the soup that’s great (and it reheats really well, and freezes really well) and then let those squares ‘dry’ for about ½ hour, in the meantime, doing all the other soup stuff. Break them up, put them into the soup pot, stir carefully so they don’t fall apart before they’re cooked, then let them go for about half an hour more, or until they’re tender, in with the rest of the soup. Works well in beef soup, too, delicious…not good for you, calorie wise, but, I swear, it cures any ills, lol, and warms your bones when it’s so cold out. It’s easy if you know how to make a from scratch pie crust. I also use chicken thighs usually for soup, and leave the skin on…you can skim off the fat, but I like the taste, just my opinion.

    There are a thousand different ways to make chicken noodle soup, and they're all good. I prefer to roast, rather than boil, the chicken, and go from there, and also use homemade stock or fortified chicken broth (or both!) but will admit to occasionally *cheating* with the ever-handy stock-in-a-box and a rotisserie chicken if I'm in a rush. It's still good.
    I always add bay leaf and fresh parsley. Thyme if I have it. We like it with bits of red bell pepper, too. I've never used mushrooms or cream but that sounds good! I cook the noodles or dumplings or rice up separately and add last minute so they don't suck up all the broth but add some of that starchy cooking water to the soup, too. Maybe it needs some more salt, maybe not, or even a tiny bit of sugar. I just fiddle and fuss with it all along. Pretty much always add more pepper.
