Just made the Chickpea Apple Pie. Took awhile to cool enough to try it. "Any variety of apples" is not a good tip. Choose wisely. I used Granny Smith - I had to cook my pie 1 hour + a couple more minutes. I covered my pie for the first 1/2 hour cuz I suspected the Grannies would take longer to cook. And they did (even though I cooked them in the sauce over medium heat first). I used a Pyrex pie plate, just as she did. The crust mix yielded a lot of crust. I did have to add 4 Tbsp chickpea liquid to get it to clump. I used all of it to make the crust - next time I'll use 3/4 of it. The crust was too thick. Filling was yummy, but again, being they were Granny Smith, they could've used a little more sweetener. I agree with Ami, the topping yielded a lot, and I didn't need to use it all. Overall, it's a good pie. Oil Free. Fat Free. It will need a few tweaks depending on your apple selection, and how thick you want your crust. I will still make it with Granny Smith, but I think I might add 1/4 to 1/2 cup unsweetened applesauce to give the pie a little more moistness. It will make a nice breakfast tomorrow morning (after I eat some veggies).

I made this and it’s excellent! I did make it with 2Tbs of apple pie spice and cinnamon combo to each the crust, apples, and topping layers…yes, that’s 6 Tbs total! Seems like a lot, but after it bakes I thought it was much better. Also put 1 tsp vanilla powder to each layer… 1Tbs total. Finally, I needed to cook mine about 50 min. It gets even better the longer it sits! Love the addition of beans. Thanks!!

I've been binge watching your videos. I love your whole approach! So far I've made the chocolate pie and this apple pie. Both delicious. I used all granny smiths which is what I usually use for pie but without sugar I think 1/2 sweeter apples would be better. My caramel sauce was much thinner than yours, more like a liquid sauce than a dip but it cooked up fine with the apples. One request: can you put a full recipe in the description rather than just the ingredient list? TY!

Since I have family and friends who DO NOT RESPOND WELL TO CHICK PEAS --- I am curious -- CAN THIS APPLE PIE RECIPE WORK WITH WHITE CANNELLINI BEANS OR NAVY BEANS AS WELL? AND DO YOU USE THE LIQUID IN THE CAN OR RINSE YOUR BEANS FIRS??? Thanks for your response! I love watching you

Hi So I did use great northern white beans - it turned out great. We are not fans of too many dishes with chickpeas. I also used white cannellini beans in the processor with bananas - pumpkin pie spice, ginger, 1 tbsp of maple syrup - all blended then added some rolled oats, 2 tbsp of pumpkin seeds and chopped apple pieces to create a bean/ fruit breakfast or lunch meal cookie. they were baked at 350 for 20 min. OMG delicious. Love the way she uses beans. Sooooo healthy with high satiety level. I did drain the beans & did not not wash the beans
and yes I did add more of the liquid - 1 tbsp into mixture for moisture cookies
