We've made this for years and our recipe is basically the same. We just call it Mexican spaghetti and switch out between beef or chicken, whatever is available. Even did it meatless and added black beans or pinto beans to it as well. It's definitely one of my son's all time favorite dishes. Serve with sour cream, green onions and some salsa on top with some corn chips and we are in comfort heaven!!
NOTHING wrong with casserole dishes of ANY kind.

Your recipe is similar to a chicken tortilla chip casserole I make in the slow cooker. I made this tonight, using 2 cut-up rotisserie chicken breasts, a pkg of chicken taco mix, 6 oz (half a 12 oz box) veggie spaghetti, 1 can cream of chicken mushroom soup, 1 can of ro-tel (drained- but I added 1/2 can of water as I was mixing), shredded fiesta blend and cheddar cheese, and I added about 1/2 cup of sour cream. It filled an 8x13 casserole dish. My husband and I both loved it. Thanks!

Hello. I made this recipe tonight and tweaked it up a bit. I added onion and peppers, fresh jalapeno and must say, it's really good! Thank you for the recipe!!
I made this yesterday. When I make something new I ask my hubby if I should make it again. I got a resounding YES. I would even make this without the chicken for a meatless meal. This was delicious. This is the perfect selection of ingredients
Tip for flavoring pasta while boiling, add chicken boullion or Knorr's chicken flavored powder you can find in the Mexican food/ingredients section of your grocery store, until the pasta water is more salty than you would put on your food, very salty. Gives it a chickeny flavor. 👍

PS, i've heard to always put the shiny side of the foil facing the food. Just something i picked up along the way.

This was my second time making this casserole. This time I used 3cups of chicken instead of two and I added a small can (4oz) of diced jalapenos. It wasn't hot but it added some zing.

I just put this in the oven but I added some sour cream, will that ruin it? I honestly don't know how we've managed all these years without your bomb recipes, I make a different recipe of yours everyday! I make a variation of this: 16 oz cooked spaghetti, 2-3 cops shredded chicken, 2 cans cream of mushroom soup, 2 cans rotel type tomatoes, 1/4 teaspoon garlic powder, 16 oz cheddar cheese. Mix and heat on stovetop or microwave.
I figure the extra can of spicy tomatoes negates the need for taco seasoning in my recipe. For a milder version you can cut back to one can of tomatoes.

Want a tip? Break the uncooked spaghetti in half before you boil it. You can grab it in sections and just snap it in half. Fits better in the pot and cooks more evenly. Easier to assemble in dishes. Easier to twirl on the fork, too.
