CRAVINGS: Episode 7 | Homemade Chocolate Krembos! | Georgia's Cakes

  • In this episode I'm showing you how to make traditional chocolate Krembos. You may not have heard of them, but definitely know what they are! A biscuity base topped with marshmallowy meringue dipped in a thin chocolate coating. This recipe is probably the most technical from this series, but so worth it! They are much tastier when you make them yourself!

    Italian meringue recipe:
    60g egg white
    120g caster or granulated sugar
    25ml water
    Heat sugar and water to 118°C and pour into whisking egg whites
    Chocolate coating recipe:
    150g dark chocolate, melted
    1 tbsp coconut oil

    You know you can create an easy marshmallow by doing exactly what you did, but when the sugar is hot but not boiling yet, you can add some gelatin to it. Then proceed as normal. Granted you have a limited time to pipe it but actually as you know the meringue does hold its heat pretty well, and you only need to be above 35 C in general to be able to pipe. In a pinch, you can put it in the microwave for a few seconds to warm it up more.
    Otherwise, great recipe. Chocolate coat the bottoms, and you have a Tunnock's Marshmallow Peak ;)

      Can't really say I have one. I just tried it as I described it and it works. I use for a lighter Oreshki filling.
      My next experiment is to add cocoa powder to the meringue and after adding the sugar add some finely chopped hazelnuts and stir them through. Then pipe them into the shells as per normal.
