  • Hope you guys enjoy this clean and cook video. In this video we fillet a red porgy, scamp grouper and toro snapper. I made the grouper and porgy on the camp chef pellet grill and place it on a n open face ciabatta sandwich. I roasted some garlic and red pepper to go along with our ciabatta, and made a ricotta spread to go along with it. The crudo style fish was garnished with soy, vinegar, sesame oil and palm sugar, along with cucumber, red chilli and red onion.

    It'd be cool if you did like a 48-72 hr survival challenge on a island or camp on a beach where it's legal. You have to eat only what you catch or trap, can bring water, tent, sleeping bag, fire starter kit, knife and a few poles bait n lures. Think it'd be fun & something different to see your skills & capabilities! Even a 24 hr one would be fun.

    It is hard to explain to people just how amazing Scamp is to people that haven't been lucky enough to eat it. There is no fish I would rather eat...absolutely none...and I do freaking love some fish!

    Victor probably the best looking fish dish and tasting as well. Good job. I agree with Brian about having 2 different videos. I know it's not always possible due to trying to make a certain length video but really enjoyed this time.

    The red one really is good for ceviche,red porgy and the scamp grouper,heads.Good for soup(tamarind fresh leaves and young tamarind fruit,yummy.Just cant go over seing the heads of the fish you catch to make soup.(Asian here,Pinoy).Thank you for your great adventure and sharing some good lessons about how to and cook,more power.

    What he’s saying is, a flexible knife will slice down the rib cage of the fish without chopping any of the rib cage bones and leaving them for you to chew on in your meal. The “forgiving knife” will jump over those bones instead of cutting through them. This guy has the right idea.

    Amazing culinary skills man! I know you don't usually measure you ingredients, bit could you guestimate how much of each ingredient, as you going through the preparation?     In Australia we call those red porgy’s, red snapper and we catch them in 3-60ft of water. They are like the most targeted fish

    Aloha, that sure looks like what we call menpachi. We use glow jigs off the rocks at night. Scale them and fry them whole.

Do not need to be part of the filming crew unless you need me to be but just the fishing alone would he worthwhile. I am rusty now. Especially since I have number two on the way. Three mo ths preggo.     When soaking the chilies in vinegar and palm sugar, I guess regular sugar would work too, right ? Sometimes I like to take a little of the heat of the pepper away too. I have acid reflux disease(heartburn), but I love the taste of hot peppers, or a little “kick”. I use powders most of the time, like in my Marinara Sauce, because I can get the perfect heat instead of relying on real fresh peppers, then winding up that it’s too hot. Nice recipe though, looks awesome.

    I don't comment on a lot of videos but thought I needed to comment on this one. I absolutely love your videos and every Sunday, binge watch them. I love the family vibe and just seeing you and Brooke blossom in content and creativity. However one thing never ceases to amaze, amuse but mostly bewilder me. In all your videos, you seem to insist on NOT using knives to accompany the fork. And bless Brooke's mom, she seems to be constantly struggling to fork up the food of even keep the food on her fork. I need to ask, is this a cultural thing where you just don't use knives to help with forking the food, is it some sort of fish etiquette where you don't use knives? I mean what is it that I'm missing? What's up with the knife situation where you guys just struggle to fork the food due to the lack of a knife? It seems to be a thing so really want to understand.

    ive caught quite a few toro in my life. that one looks like it has a growth deformity. like stunted almost which is really trippy. maybe its the way he froze, but that fish certainly looks shorter than the ones ive caught, yet just as fat.

    As a hopefully up and coming UA-camr trying to build my channel with the little time I have I've been using dextor knives for years almost exclusively but I always have such a hard time keeping an edge on my dextors what do you do also any shout out to microskiffadventures at any point would be amazing I don't have much posted yet barely an intro but it's been a tough year and I haven't been able to gain the ground I want but things are getting better and I plan and hope to be posting much more
