As a Jamaican that watch your videos regularly I am happy that you decided to do cook fish head soup or ‘ Fish tea’ as many Jamaicans refer to it. I have personally never cooked it but most people add green bananas, yams,potatoes and turnip (diced small) to it, come folks just enjoy the broth alone. We also stuff our fish and roast it, we steam and fry it whole but hardly EVER fillet it. To many of us that is blasphemy. Thank you guys for another great video.

One fillet note if I may. A fillet knife is razor sharp, but as it hits the bones when you take off every scrap, as he correctly does--it "turns" that fine edge. It does not need "sharpening", it needs a steel. That's what pro chefs use, it is to straighten the edge out, that's why they hit it so much AS they work. Sharpening is a different function entirely.
It's really satisfying to watch you fillet a fish after you catch it. I respect catch and release but I mean more towards keeping what you kill , I barely watch fishing videos involving catch and release. I always watch you , bluegabe, deermeatfordinner , wooded beardsman and ace videos when ever I search up catch and cook . Hell you guys saved my life with your videos. I got clean and I used the knowledge in real life.
Soup looks delicious! I'll give you a tip for the noodles, cook separately in plain boiling water and then place in your bowls before you pour your fish soup over the top. That is the way us Asians do it. love tile fish soup

It's nice to learn from each other's cultures, if it wasn't for UA-camrs like you guys I wouldn't have known how to fillet fish as good as I do now & as such all I've been doing for the last few years is eating filleted fish.
They are sponges. They're usually orange and actually work great to reuse for bait. Intake the sponges onto the reef an red grouper love em. Also you'll find starfish and tinker mackeral and lizard fish in them
Absolutely love your vids and your cooking! Love that fact that you try not to waste your catch by making fish head soup. The collars would be delicious if you grill them with oil and salt. Dip the meat in some Japanese tempura sauce with grated daikon or Yuzu soya sauce. Delish! Thanks for producing these great videos!
I started watching for the fishing content but I’m actually sticking around for the cooking tips!! I’m landlocked in middle TN but actually this video just inspired me to go after some different species around here.
Fellow Tennessean here, i moved to NJ 3 years ago and catch all sorts of different kinds of saltwater species now including golden tilefish and blue line tilefish. Never going back to TN even tho i miss it there just can’t leave the ocean. Beats catching largemouth bass everyday lol
The scraps in places like Florida and Cali don’t go to waste since you are feeding the crabs and lobsters and catfish and other small fish so nothing is wasted unless you throw it in the trash

Americans used to eat whole fish years ago, my Grandparents did . As began to prosper as a nation we stopped eating the things we used to, cause in the old days money was tight and we had no choice but to get all we could out of what we had.

I like to leave the first fillet attached while I cut the other side. It makes fileting the second side much easier.
