you can find it at a home improvement store usually, home depot or lowes. I used Klean-Strip Aircraft Paint Remover. I broke up the finish slightly to allow it to maybe work in under the coatin a bit better. and then i scrubbed with a copper brush to remove the rest after soaking. Won't scratch up the surface like sanding will.

My student's recon1 is all F'd up in no time with normal use and end up he just sand off the black and go bare steel, dang!! Kabar's coating is better, but not come sharp like CS, not "AS" sharp.
Airplane paint stripper. It's on another level. Comes in a tin can. It's kind of a loose jelly like consistency, you don't want to touch it or breathe it though.

I only own 1 black coated knife. On most knives, i think a good stonewash or bead blast looks a lot better. Sometimes coatings can even increase thickness enough to hinder cutting ability (on the extreme end). If we're talking carbon steel, a decent mil-spec coating is worth it, but as for almost 100% of other knives, I'll pass.
if we are just cutting fruits and veggies, oh ya, but if you are talking about abuse with stabbing metal such, I don't want to hold a cheap knife and risk my own hand bing stabbed by the broken bits tho.

Any knife will scratch when used on hard materials.

that such a great knife, sharp out of the box, as strong as a crowbar, and the grip feel strong.

I noticed they seem to be made in Japan now. Mine was made in USA, but it's over ten years since I bought it, I think.
Pit some cold blue on the scratches. Then, dab them with oil. Looks almost new.

I would strip the coating off of that tanto. Cold steel actually puts a nice stonewash on under it (i think I've mentioned this before in comments).

Do you know if there is a way of removing the black coating from the Cold Steel blades safely without damaging the steel underneath?

i wouldn't sand them, i'd slightly break up the finish and then use some kind of really nasty airplane stripper.
