Spanish Style Rice | Instant Pot Recipe

    (This recipe can be cut in half, but make the full recipe and freeze if up in dinner-sized portions for future use)
    2 cups white or brown rice (I used Basmati) rinsed and drained well
    ½ cup tomato sauce
    ½ diced tomatoes, drained (if you want a moister rice, add the juice)
    ½ medium onion, fine-to medium chopped
    2 cloves garlic, minced (or use the Penzy’s minced garlic)
    1 small can diced green chili peppers (not jalapeno)
    1 cup water (you could use veggie broth if you prefer)
    1 tablespoon olive oil
    1 cup canned black beans (rinsed and drained)
    1 cup corn (I used frozen)
    1 tablespoon my Mexican seasoning (recipe appears down below)
    Set IP on “Saute.” Heat the pot, and then add the olive oil. Add the chopped onions. Coat well with the oil. Saute for about 2 minutes or until the onions appear to be translucent. Add the garlic. Stir and be careful to not burn the garlic.
    Add the rinsed rice and stir well to combine with the ingredients already in the pot. Add the tomatoes, tomato sauce, water, and chilis.
    Add the Mexican seasoning mix. Again, be sure all ingredients are well combined.
    Put the lid on the Instant Pot. Turn off the “Saute” mode, and switch it to “Manual”. Set the timer for 4 minutes (If using brown rice, it will take 22 minutes Also, you’ll need to add 3 tablespoons additional water if cooking the brown rice. Once the cooking time is over, let the pot do a “natural release” to remove all pressure in the pot.
    Open the lid and give the rice a really tossing to fluff it and get all ingredients combined. Now add the black beans and corn. Toss again. Leave on warm until serving. If using right away, use defrosted or canned corn. THIS FREEZES REALLY WELL!

    MEXICAN SEASONING MIX:
    ½ teaspoon salt
    ¼ teaspoon black pepper
    1 ½ teaspoon chili powder
    ½ teaspoon granulated garlic
    ½ teaspoon onion powder
    1 ½ teaspoon cumin
    ½ teaspoon dried oregano
    Combine well. Seal in a jar and use it for tacos, enchiladas, etc.
    If you didn’t want to make this seasoning mix yourself, you can use packaged taco or Mexican rice seasoning.

    Wow that looks so yummy! You are on a roll Jill. Have you ever tried adding a cubed potato? I had that at a restaurant once and now I always add one to my Spanish rice. I will definitely give this Instant Pot recipe a try ❤
