INGREDIENTS:
1.5 cups Basmati rice
2 tbsp oil
1 tbsp finely chopped garlic
1 onion
Different coloured capsicums
1/2 cup green peas
1/2-1 cup tomato puree
Salt
Black pepper
1/2 tsp cumin powder
1/2 tsp red chilly powder
1 tsp red chilly flakes
1 tsp oregano
1-2 tbsp tomato sauce
2.5 cups water
Corns
1/2 cup boiled kidney beans/rajma
Spring onions
Chillies/jalepeno

Cooked this tonight and absolutely loved it! Clean plates all round and now on our list of favourite dishes. This has layers of of tantalising flavours to keep the taste buds entertained long after you finish eating! I have the whole process in my mind how to cook but whenever I decide to cook Mexican rice I just can't stop myself from having a look to this video. I don't know why people are making such a big deal about her calling the recipe "Mexican Rice". It's a yummy recipe, so thank you for posting it, Kanak.
Because it isn't Mexican rice. It's not Russian rice or Thailand rice. People will make this " rice recipe " and think it is Mexican rice. Paella is from Spain, if someone made some random rice dish and called it Paella the Spanish should be rightly insulted.

I'm mexican and approve this recipe. Mexico has many types of rice, so whoever says it's not mexican, they're not real mexican nor were they raised in mexico to know enough about the many flavors of each state in mexico.
Made this, but smoked chillis and paprika. Came out amazing! Definitely making this again!!!

I think you did a great job. I am Mexicano and I would it this in a heartbeat. I don’t see why (Latino)all the hate some of you can even can even cook rice the right way. By the way I’ve been to many restaurants here in Florida and everyone have a different way of making Mexican dishes.

@@KanaksKitchenEnglish I made it a little bit too spicy haha. My fault. That being said, it's a really convenient one pot recipe, very cheap for me to put together, it's easy to batch cook, and versatile. I'll definitely be adding it into my regular rotation

Sounds like ur from India, not Mexican.
@@rebeccafrost5542, I'm guessing it's a Europian in India's interpretation of Mexican rice. There are lots of bastardized cookbooks out there from the 1800s, some are good and some awful. It also has a lot to do with the availability of the ingredients in the regions where 1800s cookbooks were written.
This is not Mexican rice. You’re gonna get a chancla chucked at your head if you give this to any Mexican mama.

You’re right, let’s just call it Australian or maybe Korean food. Next time I open a generic shaker of “curry powder” I’ll shake it onto mac n’ cheese and call it “delicious Indian food.”

I just saw some recipes for Mexican Rice cooked by actual Mexicans and Spaniards and they were pretty much the same as this one, including Basmati rice and cumin seeds. So, I don't know what is the point of some of the comments. I quite like this recipe and will try it.
