      @@italiabionda5543 I added to much sauce in the video. Sometimes when the camera is on it’s not so easy to cook. This is a recipe I will redo. I love making it because it’s 30 mi utes to put together and then it cooks. Buona domenica and grazie di cuore 💕💕💕💕💕💕💕

    yes yes, this is authentic and you need all those onions, was a speciality of my uncle louie, his house would smell for days with the lingering aroma, and I still make it on a cold winter weekend, thank you for sharing

      So happy to see your message. Nothing like a good Genovese on a cold winter Sunday. I let it cook for at least 4 hours and always pray for leftovers. Lol. So good the next day.

    Really enjoyed your video and the stories. Looks delicious. I made this a week ago and it was absolutely amazing. Flavours like I’ve never had before. I cut up the roast and it did shred. Next time I will keep it in maybe 4 large pieces. I also cut the carrots smaller. Anyway, thanks for the video.

      I thought it tasted a lot like French onion soup, only even better. I can't believe this dish isn't better known like Bolognese or Neapolitan ragu.

      Thank you so very much! Korea?!! Wow I’m exploding with joy! We live Korean food too. I set the barbecue on fire making Galbi LOL we had 3 fire trucks at the house. Kids were crying that I burned their favorite meat. They weren’t worried that we lost the bbq. LOL thank you for watching, it really means so much! Be safe 🥰

    This is the best one on this site, you gotta braise the meat in one piece! You have to keep it from drying out, and there needs to be chunks of beef that aren't fully shredded. Perfect, great job!

    Pasta water is good for the sauce

      That's a great point! The starch in the pasta water can help thicken and emulsify the sauce, making it cling to the pasta better.
      I'll definitely remember that next time. Thanks for sharing!

    Searing doesn't seal in the flavor....that's not ...true.....and the word you couldn't think of ..is Spatter...

    Authentic Genovese does not have tomatoes in it - just meat and wine and lots of onions

    Oh dear. This is the least authentic recipe for this ever. Why do Americans ruin everything authentic and tun it into something awful? This is the Chef Boyardee version of something that usually has 3 ingredients. What's with the carrots/celery/tomato and that huge hunk of meat? What is this? Sorry I had to stop watching. Barf.

      Hello Mars Bolt,
      I’m so sorry that you feel that way. I was born in Vico Equense, a coastal town between Pompeii and Sorrento that makes me Napoletana. I grew up in Italy and this is how my grandparents made it! This dish dates back to the 16th century and it is believed that it is not a dish from Genoa but actually from Naples! Happy holidays
