If anyone was wondering, I believe the reason Keith’s Mac n cheese tasted so much worse the day they served it is because pineapple contains the enzyme bromelain. Bromelain breaks down proteins, which makes it great for marinating and tenderizing meats, but it also curdles milk/cheese, which, I’m assuming, is why it tasted so bad. It probably tasted like spoiled milk.
There’s something so wholesome about Keith getting so excited to serve his dish to Kevin because of how much he enjoys his cooking. He seems so genuinely happy to be doing this for him.
For the past few days I binge watch this series, I notice Keith is so kind and supportive to his friends when they encounter a problem with the dish they are making. Now I am rooting for him to win for the next season of without a recipe. :)

I've never had that issue when I've used pineapple or pineapple juice with meats and marinades and plenty of leftovers with pineapple in them. However, maybe I'm mistaken and I'm not understanding, this just seems like an unusual thing to have happened. Maybe some people have reactions to pineapple similar to cilantro where some love it and others think it tastes like soap.

I really liked Kevin Bludso as a judge. He was able to be kind and supportive at the same time as critical, gave great constructive feedback, seemed pretty open-minded, and generally seemed glad to be there. Good judges make for a better show.
Agreed! I don't know how much of this is real and how much is plot creation (watch the Behind the Scenes on the Second Try channel), but assuming it's real, I love how Zach has gone from not caring and trying to do the most absurd things possible, to actually making the recipe without a recipe. Yay Zach! And poor Keith! 😢 I don't know why mac and cheese was a 2-day challenge either, Keith.

@@musicmaniac32 my conspiracy theory is they put weird rules in to create bad dishes. In the fun Cinnamon roll episode they didn’t give them enough time to bake resulting in funny raw dishes. In the mac n cheese they split it into two days causing the cheese to get all gross in the fridge resulting in Keith’s tasting gross.
@@beebobber546 Oh, I definitely think you're right, but my complaint is that I don't think it's funny/interesting when the goal is to sabotage amateurs. I think it would be funnier to see what they'd create if they tried their hardest and weren't thwarted by the ridiculous rules - something akin to Worst Cooks on Food Network. Unless the Try Guys are secretly pro chefs, I don't think they'd end up with world class cuisine and we, the audience, would still find plenty to laugh about without being grossed out by judges eating raw dough or rancid pork belly.

He was really screwed by the decision to leave the meat overnight. Pineapple tenderizes meat really quickly, but if left for awhile it basically becomes digested meat. Had he served it the same day he made it, it would have probably been good. Had he known that he could’ve probably spent the second day, cooking the noodles and the last day cooking the pork with the pineapple. Zach made the same mistake with the dumplings but because he used tofu it probably wasn’t as egregious.
Why did Keith's dish look and taste great the day before but was horrible the next day? Its a cooking lesson for everyone: never combine meat and pineapple then let sit for any more than 2 hours. Even 1 may be much. Pineapple contains an enzyme that literally digests protein, so its great to tenderize with a quick marinade but overnight you end up with exactly what was described: pre-chewed bird feed.

I kind of love that we all find Keith's tantrums funny because he tends to laugh at his mistakes and goes for the comedy aspect of the extreme reaction. Where as Ned's tantrums always sound like a spoiled child not getting his way.

There's not a lot you can do without a high school diploma. A lot of people who get jobs get them to survive, not chase a passion. You need to get a day job so you have money to feed yourself and go to the doctors, and then you can also use that money to fund your true passions. If you're still in high school, I know youtube money might seem like a lot, but it's not enough to live on. Life is expensive, and it can really suck if you don't have things like insurance. Plus, if I'm being honest...I wouldn't watch your content. So much of it is gross out humor and arrogance based, almost all of the thumbnails look exactly the same, and there's a lot that can easily be reported and demonetized. the thing that morphed with keith's mac and cheese is that pinapple has enzymes in it, enzymes that can cook/dissolve meat, so that meat was rotten, because it was left in pinapple enzymes for 12 hours, so all im going to say is that rossannas body was right to try and get it out.

i'm with keith on this one, they really shouldn't have separated the stages for mac & cheese on this one, ik it's bc they have to share the kitchen & its for filming reasons but, you really can't refrigerate cheese sauce w/o mixing it in w/ the noodles first. Zach & eugene were smart in just making their pasta ahead of time & it's probably why zach's turned out better. EDIT: woah, I didn't expect this comment to get so many likes lol. Ty for validating my opinions xD. But yeah, I agree with y'all, it feels like the assistants/bg staff sabotaged their chances for success with how everything is timed in these competitions. Honestly, I only watched this one because I thought they would all pass with flying colors. Otherwise, this series is just incredibly painful for me to watch all around. There really is no need for them to break up filming this to different days, unless this is sourdough or something, just let them film and make their dishes in one entire day and have them serve the food when it's at its best!

Came here to say the same thing. Cheese sauce should be combined with the pasta immediately while warm. Terrible thing to be stove reheated - the cheese will almost always separate.
and they filmed the cinnamon buns episode at the same time. So, if they had a dedicated a whole day to one episode they would have had more time as well.

Georgia in the house 👋 Mac & cheese really isn't great with fresh pasta. You need hard dried noodles to hold up to the sauce and baking. Homemade fresh pasta that isn't completely dried tends to be very soft and luscious. You really need that firm aldente bite for mac & cheese. I'm from a family of Italians. Know your pasta!

As a Mexican myself who enjoys all types of cheese and of course knows about queso fresco, it's quite funny to see Ned having a clumpy cheese sauce, not only because now I despise him, but because it's clear that this guy ignores that certain types of Mexican cheese don't melt easily. Certain types of queso fresco will melt quickly and some others will probably take a long time. If you, dear reader, want to try some mac and cheese with a Mexican cheese, make sure to look out for the magic words "queso asadero" and avoid Ned's mistake. Also, avoid queso panela, it sucks, lacks any flavor and personality, is almost like plastic and white, you know, like Ned.
@@elizabethqueen8260 Not dumb at all! Queso asadero is it's on kind of cheese so you would be able to find it labeled like that specifically. It's arguably the best cheese to use if you want it to melt in your food, like for quesadillas or like the mac and cheese in this video 😊
Can we appreciate how far the try guys have come with their cooking skills? Zach is making the judges proud everytime now, Eugene is being more creative than we could ever have imagined, Ned is experimenting with different flavours and cousines, and Keith is getting better at executing his plans (although this episode wasn't a perfect example of that lmao). I'm so proud of them
There were so many things that went wrong in this video that was the fault of the producers. I want the guys to succeed or fail based on their own decisions and not because of the extremely unrealistic time constraints, weird multi day separation of steps, and no set prepping (pre boiling some water)

to be honest, i fully expected keith's dish to fail as soon as he mentioned pineapple and dairy. Which is unfortunate cause otherwise i thought he cooked really well. But fresh pineapple has a enzyme that when combined with dairy basically turns it to sour milk. it should be fine if you combine and serve immediately but if you let the two sit together, it's never going to turn out well. edit: this enzyme breaks down protein. in diary it breaks down protein and you end up with sour milk flavour. but it also breaks down the protein in meat. which is why it's great in mariandes to tenderize meat, however, if you leave it too long (i.e. overnight) the pineapple will keep breaking it apart until you get mush. which is what also happend to keith. this is only a problem if you use fresh pineapple. cooked pineapple (tinned i've heard also works) doesn't have this effect
Exactly. And the meat continues to break down in the pineapple. So it probably turned into a dog food consistency if it sat overnight in the pineapple marinade. Poor Keith 😔
As someone who used pineapple in a pork marinade once, and came back the next day to pre-digested pork, it broke my heart to see Keith go through the same thing! Damn it PINEAPPLE!

2 things 1. Absolutely love the judges in this episode: Dormtainment and Try Guys have a great friendship and chemistry! Kevin Bludso was affable, kind but also constructive in his criticisms, loved his presence! Rosana continues to be the absolute best, sweetest, judge with the toughest spirit who continues to come back time and time again! We love her! 2. The consistent, unrealistic constraints are really upsetting me! It’s coming off as more destructive force rather than a fun aspect of the competition. Why split this up over two days? Why force them to make their own pasta (when the legitimate restaurant owner doesn’t even do that)? Why put Ned’s two sauces together? Why not let them boil the pasta (especially when there seems to be something off with the stove/oven in this kitchen considering the addition problem of cinnamon roll episode where it wasn’t baking). Just. Getting frustrated with these continual issues that are cropping up.
It’s more fun when they have more ways to mess it up. This isn’t just some Mac n cheese you make at home. It’s professional Mac n cheese without a recipe.
For real, love this series to death but I don't want the competition aspect to make it unfair to them, it's not funny if it's not even their fault, yet they still suffer for it. Like really, you took his cheese and didn't let him make more? That's called TAMPERING?
For me, it's quite the opposite. In my opinion, it's not meant to be taken so seriously, so the calamities make the competition more fun. Especially because the guys know how to play up the strife and make the distress seem so intense. It makes it more enjoyable for me because I know it's all in good fun, and at the end of the day everyone's seemingly enjoying themselves

I was thinking the same thing. Reheating cheese sauce is a nightmare. Zach and Eugene benefited from the cooling time, but could have still made their dishes in one day. It really hurt Keith in particular. No one got to use the oven for that nice crispy top because of the overnight wait.
Other guest judges that came on were all like 'if I were to make this without a recipe I would not do this or do that' Mr. Bludso was like whatever you do as long as it adds to the Mac & Cheese then 'Do yo thang'. I love his entire disposition about this episode.
I love that going into this Eugene was pretty sure he was going to lose but really just did this so he could make ball jokes and force people to eat balls, what an icon. Long may evil Eugene reign!!!

I really liked Kevin Bludso as a judge. He was able to be kind and supportive at the same time as critical, gave great constructive feedback, seemed pretty open-minded, and generally seemed glad to be there. Good judges make for a better show.

@@musicmaniac32 my conspiracy theory is they put weird rules in to create bad dishes. In the fun Cinnamon roll episode they didn’t give them enough time to bake resulting in funny raw dishes. In the mac n cheese they split it into two days causing the cheese to get all gross in the fridge resulting in Keith’s tasting gross.

I think it would be funnier to see what they'd create if they tried their hardest and weren't thwarted by the ridiculous rules - something akin to Worst Cooks on Food Network. i’m so sad for keith just because he wanted so badly to make something good for kevin 😭
He was really screwed by the decision to leave the meat overnight. Pineapple tenderizes meat really quickly, but if left for awhile it basically becomes digested meat. Had he served it the same day he made it, it would have probably been good. Had he known that he could’ve probably spent the second day, cooking the noodles and the last day cooking the pork with the pineapple. Zach made the same mistake with the dumplings but because he used tofu it probably wasn’t as egregious.

Why did Keith's dish look and taste great the day before but was horrible the next day? Its a cooking lesson for everyone: never combine meat and pineapple then let sit for any more than 2 hours. Even 1 may be much. Pineapple contains an enzyme that literally digests protein, so its great to tenderize with a quick marinade but overnight you end up with exactly what was described: pre-chewed bird feed.

There's not a lot you can do without a high school diploma. A lot of people who get jobs get them to survive, not chase a passion. You need to get a day job so you have money to feed yourself and go to the doctors, and then you can also use that money to fund your true passions.
If you're still in high school, I know youtube money might seem like a lot, but it's not enough to live on. Life is expensive, and it can really suck if you don't have things like insurance. Plus, if I'm being honest...I wouldn't watch your content. So much of it is gross out humor and arrogance based, almost all of the thumbnails look exactly the same, and there's a lot that can easily be reported and demonetized. This trolling method you're using isn't going to last for the decades you're going to be alive (assuming you live beyond your 30s, which I hope you do).
the thing that morphed with keith's mac and cheese is that pinapple has enzymes in it, enzymes that can cook/dissolve meat, so that meat was rotten, because it was left in pinapple enzymes for 12 hours, so all im going to say is that rossannas body was right to try and get it out.

Came here to say the same thing. Cheese sauce should be combined with the pasta immediately while warm. Terrible thing to be stove reheated - the cheese will almost always separate.

Mac & cheese really isn't great with fresh pasta. You need hard dried noodles to hold up to the sauce and baking. Homemade fresh pasta that isn't completely dried tends to be very soft and luscious. You really need that firm aldente bite for mac & cheese.

@@krysaboyce5353 knowing nothing about Mac and cheese; I don’t think that they were necessarily “set up for failure” sure they could’ve failed but the main bad things were their fault not the time frame’s or the producer’s. Also it’s just funnier that they failed!
As a Mexican myself who enjoys all types of cheese and of course knows about queso fresco, it's quite funny to see Ned having a clumpy cheese sauce, not only because now I despise him, but because it's clear that this guy ignores that certain types of Mexican cheese don't melt easily.
Certain types of queso fresco will melt quickly and some others will probably take a long time. If you, dear reader, want to try some mac and cheese with a Mexican cheese, make sure to look out for the magic words "queso asadero" and avoid Ned's mistake.
Also, avoid queso panela, it sucks, lacks any flavor and personality, is almost like plastic and white, you know, like Ned.

@@elizabethqueen8260 Not dumb at all! Queso asadero is it's on kind of cheese so you would be able to find it labeled like that specifically. It's arguably the best cheese to use if you want it to melt in your food, like for quesadillas or like the mac and cheese in this video 😊
Can we appreciate how far the try guys have come with their cooking skills? Zach is making the judges proud everytime now, Eugene is being more creative than we could ever have imagined, Ned is experimenting with different flavours and cousines, and Keith is getting better at executing his plans (although this episode wasn't a perfect example of that lmao). I'm so proud of them

There were so many things that went wrong in this video that was the fault of the producers. I want the guys to succeed or fail based on their own decisions and not because of the extremely unrealistic time constraints, weird multi day separation of steps, and no set prepping (pre boiling some water)
yeah like zach and eugene were smart to make their pasta the day before but if the producers knew keith and ned didn't they should have made sure the water would boil in time
We could also talk about how Ned's cheeses were combined in one container

to be honest, i fully expected keith's dish to fail as soon as he mentioned pineapple and dairy. Which is unfortunate cause otherwise i thought he cooked really well. But fresh pineapple has a enzyme that when combined with dairy basically turns it to sour milk. it should be fine if you combine and serve immediately but if you let the two sit together, it's never going to turn out well.
edit: this enzyme breaks down protein. in diary it breaks down protein and you end up with sour milk flavour. but it also breaks down the protein in meat. which is why it's great in mariandes to tenderize meat, however, if you leave it too long (i.e. overnight) the pineapple will keep breaking it apart until you get mush. which is what also happend to keith.
this is only a problem if you use fresh pineapple. cooked pineapple (tinned i've heard also works) doesn't have this effect
Technically, I think if you cook pineapple first, the enzyme is cooked out, so you could technically use pineapple with dairy.

Exactly. And the meat continues to break down in the pineapple. So it probably turned into a dog food consistency if it sat overnight in the pineapple marinade. Poor Keith 😔

As someone who used pineapple in a pork marinade once, and came back the next day to pre-digested pork, it broke my heart to see Keith go through the same thing! Damn it PINEAPPLE!

1. Absolutely love the judges in this episode: Dormtainment and Try Guys have a great friendship and chemistry! Kevin Bludso was affable, kind but also constructive in his criticisms, loved his presence! Rosana continues to be the absolute best, sweetest, judge with the toughest spirit who continues to come back time and time again! We love her!
2. The consistent, unrealistic constraints are really upsetting me! It’s coming off as more destructive force rather than a fun aspect of the competition. Why split this up over two days? Why force them to make their own pasta (when the legitimate restaurant owner doesn’t even do that)? Why put Ned’s two sauces together? Why not let them boil the pasta (especially when there seems to be something off with the stove/oven in this kitchen considering the addition problem of cinnamon roll episode where it wasn’t baking).
Just. Getting frustrated with these continual issues that are cropping up.

For real, love this series to death but I don't want the competition aspect to make it unfair to them, it's not funny if it's not even their fault, yet they still suffer for it. Like really, you took his cheese and didn't let him make more? That's called TAMPERING?
For me, it's quite the opposite. In my opinion, it's not meant to be taken so seriously, so the calamities make the competition more fun. Especially because the guys know how to play up the strife and make the distress seem so intense. It makes it more enjoyable for me because I know it's all in good fun, and at the end of the day everyone's seemingly enjoying themselves

I was thinking the same thing. Reheating cheese sauce is a nightmare. Zach and Eugene benefited from the cooling time, but could have still made their dishes in one day. It really hurt Keith in particular. No one got to use the oven for that nice crispy top because of the overnight wait.
Zach’s being so good was not a surprise to me. He’s the only person who just let the macaroni itself shine lol.
